Grandma knew how to make a hearty meal out of leftover bits of bread and cheese. This recipe is meant for riffing, so use any type of cheese, leafy greens, meat or bread you happen to have on hand.

Number Of Ingredients 12

Butter or nonstick cooking spray, for greasing pan
6 large eggs
1 1/2 cups milk
1/2 cup half-and-half
Pinch of ground nutmeg
Pinch of cayenne pepper
Kosher salt
1/2 teaspoon freshly ground black pepper
3 handfuls dark, leafy greens such as spinach, arugula or baby kale, chopped (about 1 cup packed)
1 cup diced salty deli meat, such as Canadian bacon, ham, or cooked bacon
8 ounces (about 2 1/2 packed cups) leftover bread torn into 1-inch pieces, such as English muffins, bagels or sourdough bread
3/4 cup shredded mild melting cheese such as Gruyere, provolone or Gouda

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 1 1/2 quart baking dish with butter or cooking spray.
  • Whisk the eggs, milk, half-and-half, nutmeg, cayenne, 1 teaspoon salt and 1/2 teaspoon pepper together in a large bowl. Fold the greens, meat, bread and 1/2 cup of the shredded cheese into the mixture. Pour into the prepared baking dish and top with the remaining cheese.
  • Cover with foil and bake for 35 minutes. Uncover and bake until the strata is puffed, golden brown at the edges and set in the center, about 15 minutes more. Let cool 10 minutes before serving.

8 large eggs
2½ c milk
1 bell pepper, diced
¼ c green or sweet onion, diced
2 c cheddar cheese, shredded
1 lb sausage, browned and crumbled
6 slice sandwich bread, cubed
Salt to taste
Pepper to taste
¼-½ tsp red pepper flakes
1 dash(es) nutmeg

Steps:

  • 1. Grease a 9x13 baking dish and mix the bread cubes, peppers, onion and sausage in the baking dish.
  • 2. In a medium mixing bowl mix the eggs, milk and spices.
  • 3. Pour egg mixture over the bread and sausage mixture.
  • 4. Top with cheese.
  • 5. Can be made the night ahead, just cover tightly and refrigerate. Pull out from fridge about 30 minutes before baking.
  • 6. Bake at 350 for 35-45 minutes or until the top if golden brown and the center reaches an internal temperature of 160°F.

Another breakfast dish you can make the night before if you wish. I like the stewed tomatoes and oregano in this dish.

Number Of Ingredients 8

1 bunch green onion, chopped
3 pieces Canadian bacon, diced (or bacon or ham)
1 (14 ounce) can stewed tomatoes (with onions, peppers, & celery)
5 large eggs
2 tablespoons milk
2/3 cup Bisquick
1 teaspoon dried oregano
1 cup colby-monterey jack cheese

Steps:

  • Prepare 9" quiche dish or pie plate by spraying with non-stick cooking spray.
  • Layer the onions, ham, and tomatoes into pie pan.
  • Mix together the eggs, milk, oregano, and Bisquick.
  • Pour on top of layered mixture.
  • Top with cheese.
  • May be refrigerated overnight at this point.
  • Bake at 350F degrees for 45 minutes.
  • Preheat oven to 350°.

Every year my Mom would make this breakfast casserole on Christmas morning. It is a tradition that I continued with my kids, and actually is a family favorite to have anytime including for supper! Its great because it can be made the night before so all you have to do is pop it in the oven!

1 lb bulk breakfast sausage
6 slice white bread, cubed
6 eggs
1 c milk
1 c cheddar cheese, shredded
1 can(s) campbell's golden mushroom soup
1/2 can(s) milk

Steps:

  • 1. Butter 9x13 glass pan, and spread bread cubes in the pan (original recipe says to cut the crusts off but my family likes the crust so I don't).
  • 2. Whisk together the eggs and 1 cup milk, pour over bread crusts. And sprinkle with shredded cheese.
  • 3. Brown sausage, and sprinkle on top of cheese.
  • 4. Mix together the soup and 1/2 can of milk, spread on top of the sausage.
  • 5. Bake at 350 degrees for about an hour, or until eggs are set.
