Steps:
- Preheat oven to 350 degrees.
- Cook macaroni in lightly salted boiling water about 5-7 minute or until macaroni is aldente.
- While macaroni is cooking, beat egg with salt, mustard in pepper in a medium bowl. Stir in cottage cheese, sour cream, milk and 1/2 of cheddar cheese. Save remaining cheese to sprinkle on top. Refrigerate.
- Drain macaroni well and rinse with hot water. Place into 2 quart casserole and keep warm.
- Stir egg mixture into cooked macaroni. Break tuna into chunks, carefully stir tuna into macaroni mixture. Sprinkle cheese on top. Cover with foil.
- Bake in preheated oven 45 minute Remove cover and bake 10 minute longer or until lightly browned. Serve hot in casserole or spoon onto 6 plates.
- This recipe is good doubled and can be frozen and re-heated in the microwave!

I know it sounds crazy, but trust me, this tuna casserole is one of the yummiest things ever. Comfort food madness! Before this, Grandma had never written out this recipe. She doesn't measure anything when cooking this, but it must be tasted throughout.

- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
- Mix cooked noodles with tuna, sour cream, 1/4 cup milk, onion soup mix, Worcestershire sauce, garlic powder, seasoned salt, salt, and pepper. Taste and adjust seasonings as desired.
- Lay 1/2 of the butter across the bottom of a 2-quart, microwave-safe casserole dish. Crush potato chips, then sprinkle 1/4 of the crushed chips over the bottom and press to flatten.
- Spread the tuna-noodle mixture in a single layer over the crushed chips. Layer with 1/2 of the mozzarella, 2/3 of the remaining chips, followed by the remaining butter, chips, milk, and mozzarella.
- Microwave on high until casserole is hot and cheese is melted, about 10 minutes.

One night when I went to visit my dad, my grandma had made this tuna casserole for dinner. I had never had tuna casserole before and after tasting it, I fell in love. My sister and I asked for the recipe so we can make it ourselves at home. When we made it, it came out just as good as hers.

- Preheat oven to 400°F.
- Biol eggs first (approx. 10 min) - let cool. Peel egg shells and slice.
- Drain the tuna juice and break up with a fork in a bowl.
- Mix cream of chicken soup, tuna, celery, onions, mayo, salt and pepper.
- Add eggs and fold.
- Place mixture in casserole dish.
- Sprinkle the top with crushed potato chips.
- Place in oven and bake for 20 minutes. If you are unsure if it is done, the chips should have a light brown crisp to them. Not all the chips will be brown, but a few should be.

- Heat oven to 350°F.
- Cook and drain pasta as directed on package.
- Meanwhile, in 1 1/2-quart saucepan, melt butter over low heat. Stir in flour and salt. Cook over medium heat, stirring constantly, until smooth and bubbly; remove from heat. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in cheese until melted.
- Stir in pasta, broccoli and tuna; mix well. Spoon into ungreased 2-quart casserole. Cover and bake about 25 minutes or until hot and bubbly.
- Meanwhile, in small bowl, mix topping ingredients. Sprinkle topping over casserole. Bake uncovered about 5 minutes longer or until topping is toasted.

GRANDMA SMITH'S TUNA CASSEROLE
This is an easy to make creamy pasta dish, that I usually have all the ingredients for on hand. It is comfort food at it's best! My Grandma Smith raised 10 children on this recipe and my 3 year old loves it, very kid-friendly. I usually use whole wheat pasta for extra fiber and nutrition.

As with many recipes of my grandmother's era, the directions given for this one are sketchy and consist of "Cook" a list of ingredients, "Meanwhile: mix together" another list of ingredients, then "Pour into the cooked...

- 1. Put 3 c water in a 2 quart pan and bring to boil. Add dash of garlic powder and 1 cup "spaghetti" (my mom always used elbow macaroni). Stir and cook on medium high to al dente, about 7 minutes (check package directions). Drain, return to pan, cover and set aside.
- 2. While pasta cooks, in a small bowl, mix 1/2 cup cold milk with 2 tablespoons cornstarch. Set aside.
- 3. In a medium bowl combine 2 beaten eggs, tuna (instructions do not say to drain it, but I think Mom did), cream of mushroom soup, salt (Mom usually omitted this), tablespoon of chopped onion (or more), 1/4 teaspoon celery leaf powder (or more), 1/2 teaspoon French's mustard (you can guess where Grandma probably got this recipe), milk & cornstarch mixture (stir just before adding). Stir well.
- 4. Grandma's original instructions: "Pour into the cooked spaghetti & stir. Cook over low heat to thicken. Stir a little." 0;-) (You will probably need to cook the mixture over low heat at least 5 minutes to make sure the eggs and cornstarch are done. Remember however, all stoves are different, so watch the mixture closely; you'll be able to tell when it's ready because the consistency will suddenly be thick/viscous. It's done then. Remove from heat and serve immediately. (Do not over cook as this will break down the cornstarch.)
