TEXAS CHILI - AWARD WINNING CHILI RECIPE

This award-winning chili recipe is one you must try! It makes a LOT, so feel free to cut the recipe in half if you're not feeding a crowd.

7-8 pounds beef chuck, cut into bite-sized pieces
1/2 cup ghee, clarified butter OR canola or vegetable oil
8 medium onions, chopped
10 garlic cloves, minced
4 cans tomato paste
8 T dried oregano
4 T chili powder
2 T ancho chili powder
4 t cayenne pepper
2 T paprika
2 T hot sauce
2 t cumin
kosher salt & freshly ground black pepper

Steps:

  • Season beef with salt and pepper. Heat 1 T ghee in a very large pot over high heat. Brown beef in batches, taking care not to overcrowd your pan (each piece of beef should have space around it; too much in the pan will steam your beef, not sear it; searing and browning is what adds so much flavor). Add additional 1 T ghee as needed with each new batch.
  • Add onions and garlic, cook, stirring frequently, until very soft and just starting to brown.
  • Stir in tomato paste. Cook, stirring frequently and scraping bottom of pot with a wooden spoon, until tomato paste is caramelized, about 12 minutes. Add remaining ingredients and cook, stirring frequently, for 1 minute.
  • Add beef back to pot along with 5 cups water; bring to a boil. Reduce heat to low. Simmer, stirring occasionally, until meat is tender, about 2-3 hours.

I won a chili cook-off with this recipe in Tennessee in 1996. My family and friends all love this chili. It is requested for all family get-togethers. Great dish for a chilly day.

1 tablespoon olive oil
1 onion, chopped
1 green bell pepper, chopped
1 small jalapeno pepper, finely chopped
1 pound hot Italian sausage
1 pound ground beef
1 tablespoon chili powder
½ teaspoon cayenne pepper
½ teaspoon salt
2 (15 ounce) cans pinto beans, undrained
1 (28 ounce) can diced tomatoes
1 cup water

Steps:

  • Heat olive oil in a large stock pot over medium heat; cook and stir onion, bell pepper, and jalapeno pepper until onion is translucent, about 10 minutes. Add sausage and ground beef; continue to cook and stir until meat is browned and crumbly, about 7 minutes. Drain and discard grease.
  • Season meat mixture with chili powder, cayenne pepper, and salt. Add pinto beans, tomatoes, and water and bring to a simmer over medium heat. Reduce heat to medium-low and continue to simmer for 1 hour.

3 lbs chuck roast, all fat removed and cut into bite size pieces
1 large onion, diced
3 garlic cloves, minced
1 tablespoon paprika
1 teaspoon cayenne pepper
2 beef bouillon cubes
1 chicken bouillon cube
1 (8 ounce) can tomato sauce
1 teaspoon oregano
1 teaspoon black pepper
6 tablespoons chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
salt

Steps:

  • In large pot, sear meat in a small amount of oil.
  • Add onion& garlic, cook until tender (do not burn).
  • Add tomato sauce, paprika, cayenne pepper, bouillon cubes and enough water to cover.
  • Simmer 1 1/2 hours.
  • Add cumin, garlic powder, oregano, pepper and chili powder.
  • Add salt to taste.
  • Cook another 30 minutes or until meat is tender.

2 3/4 pounds tri-tip sirloin, cut into 1/4-inch cubes
1 tablespoon chili powder
3/4 cup finely chopped onion
5 medium cloves garlic, pressed into a paste
1 (14 1/2-ounce) can chicken broth
2 canned whole green chiles, seeded and finely chopped
1 cup beef broth
1/2 cup prepared Mexican-style tomato sauce
1/2 cup prepared tomato sauce
1 teaspoon hot sauce
1/2 cup California-style chili powder
2 1/4 tablespoons New Mexico-style chili powder
1 1/4 tablespoons ground cumin
1 teaspoon salt
1/2 teaspoon arbol chili powder
1/2 teaspoon New Mexico-style chili powder
1/4 teaspoon monosodium glutamate
Pinch brown sugar
Pinch jalapeno powder

Steps:

  • Start the first group of ingredients: Heat the oil in a large skillet over medium-high heat. Working in 2 batches, add the beef and chili powder and cook, stirring occasionally, until well browned. Drain the beef.
  • Transfer the beef to a large soup pot with the onion, garlic, and broth. Bring to a boil, lower the heat, and simmer, stirring occasionally, for 1 hour.
  • Add the second group of ingredients, return to a simmer, and cook, stirring occasionally, and for 1 hour.
  • Add the third group of ingredients, return to a simmer, and cook, stirring occasionally, for 45 minutes.
  • Add the fourth group of ingredients and simmer 15 minutes more. Divide among bowls and serve.
