1 1/2 pounds ground beef
3 slices white bread, torn into small pieces
1 small onion, finely chopped
1 egg
1/4 cup milk
1/4 teaspoon dry mustard
1 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine all ingredients except ketchup; mix well. Press mixture evenly into a 9- x 5-inch loaf pan. Spread ketchup over top.
  • Bake 60 to 65 minutes, or until no pink remains and juices run clear. Remove from oven; drain and allow to sit 5 minutes. Slice and serve.

1 cup dried bread crumbs
1/2 cup diced yellow onion
1/2 cup milk
1 large egg (beaten)
2 tbsp. ketchup
1 tbsp. Worcestershire sauce
1 tsp. dried parsley leaves
3/4 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. ground black pepper
For the Topping:
1/4 cup ketchup
2 tbsp. packed light brown sugar
1 tbsp. red wine vinegar

Steps:

  • Preheat oven to 350° Fahrenheit.
  • In a large bowl, add the beef, bread crumbs, onion, milk, egg, 2 tablespoons ketchup, worcestershire sauce, parsley, salt, garlic powder, and pepper. Use your hands to mush and mix these ingredients together until well combined.*
  • Add the meat mixture to a loaf pan. Pat the meat down into an even layer.
  • In a small bowl, add 1/4 cup ketchup, the brown sugar, and vinegar. Stir to combine. Pour the sauce on top of the meatloaf and spread it into an even layer.
  • Bake uncovered for 55 minutes.
  • Let the meatloaf rest for 8-10 minutes before serving (or it may fall apart).**

1 lb lean (at least 80%) ground beef
1 clove garlic or 1/8 teaspoon garlic powder
1 small onion
2 slices bread with crust
1/4 cup milk
2 teaspoons Worcestershire sauce
1 teaspoon chopped fresh or 1/4 teaspoon dried sage leaves
1/4 teaspoon salt
1/4 teaspoon ground mustard
1/8 teaspoon pepper
1 large egg
1/3 cup ketchup, chili sauce or barbecue sauce

Steps:

  • Heat the oven to 350°F. In a large bowl, break up the beef into small pieces, using a fork or spoon.
  • Peel and finely chop the garlic. Peel the onion, and chop enough of the onion into small pieces to measure 3 tablespoons. Wrap remaining piece of onion, and refrigerate for another use. Add the garlic and onion to the beef.
  • Tear the bread into small pieces and add to beef mixture.
  • Add the milk, Worcestershire sauce, sage, salt, mustard, pepper and egg to the beef mixture. Mix with a fork, large spoon or your hands until the ingredients are well mixed.
  • Place the beef mixture in an ungreased baking pan. Shape the mixture into an 8x4-inch loaf in the pan, then spread the ketchup over the top.
  • Bake uncovered 50 to 60 minutes until meat and juices are no longer pink or until a meat thermometer inserted in the center of the loaf reads 160°F and center of loaf is no longer pink*. Let the loaf stand 5 minutes so it will be easier to remove from the pan. Remove loaf from pan and cut into slices.

6 ounces garlic-flavored croutons
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon dried thyme
1/2 onion, roughly chopped
1 carrot, peeled and broken
3 whole cloves garlic
1/2 red bell pepper
18 ounces ground chuck
18 ounces ground sirloin
1 1/2 teaspoon kosher salt
1 egg
1/2 cup catsup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey

Steps:

  • Heat oven to 325 degrees F.
  • In a food processor bowl, combine croutons, black pepper, cayenne pepper, chili powder, and thyme. Pulse until the mixture is of a fine texture. Place this mixture into a large bowl. Combine the onion, carrot, garlic, and red pepper in the food processor bowl. Pulse until the mixture is finely chopped, but not pureed. Combine the vegetable mixture, ground sirloin, and ground chuck with the bread crumb mixture. Season the meat mixture with the kosher salt. Add the egg and combine thoroughly, but avoid squeezing the meat.
  • Pack this mixture into a 10-inch loaf pan to mold the shape of the meatloaf. Onto a parchment paper-lined baking sheet, turn the meatloaf out of the pan onto the center of the tray. Insert a temperature probe at a 45 degree angle into the top of the meatloaf. Avoid touching the bottom of the tray with the probe. Set the probe for 155 degrees.
  • Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

I've been making this recipe since the 1970's. It's the first meatloaf I ever made. Occasionally, I like to try other meatloaf recipes but I always go back to this one.

1 egg
1/2 cup milk
2 slices bread
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon Worcestershire sauce
1 teaspoon yellow mustard
1 lb extra lean ground beef
1/4 cup onion, minced
1 tablespoon dried parsley flakes
4 tablespoons ketchup

Steps:

  • Preheat oven to 375°F.
  • In a large bowl, beat egg and milk with a fork until well-combined.
  • (If your ground beef has been previously frozen and defrosted, use slightly less milk.).
  • Tear bread into small pieces, and add to the bowl with salt, pepper, worcestershire sauce, and mustard, mix well.
  • Add ground beef, onion and parsley; mix with hands until all liquid in absorbed and ingredients are well distributed. Mixture will be quite loose.
  • Place meat mixture in a shallow casserole about 9 or 10 inches square and shape into a small, rectangular loaf.
  • Spread ketchup over top of meat, and bake for 45 minutes.
  • Remove from oven and let rest 5 minutes before slicing and serving.

1 carrot, coarsely chopped
1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon cayenne pepper
1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup
2 tablespoons Dijon mustard
hot pepper sauce to taste

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the carrot, celery, onion, red bell pepper, mushrooms, and garlic in a food processor, and pulse until very finely chopped, almost to a puree. Place the minced vegetables into a large mixing bowl, and mix in ground chuck, Worcestershire sauce, and egg. Add Italian herbs, salt, black pepper, and cayenne pepper. Mix gently with a wooden spoon to incorporate vegetables and egg into the meat. Pour in bread crumbs. With your hand, gently mix in the crumbs with your fingertips just until combined, about 1 minute.
  • Form the meatloaf into a ball. Pour olive oil into a baking dish and place the ball of meat into the dish. Shape the ball into a loaf, about 4 inches high by 6 inches across.
  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.
  • Return meatloaf to oven, and bake until the loaf is no longer pink inside and the glaze has baked onto the loaf, 30 to 40 more minutes. An instant-read thermometer inserted into the thickest part of the loaf should read at least 160 degrees F (70 degrees C). Cooking time will depend on shape and thickness of the meatloaf.
