2 ounces (4 tablespoons) gin
3/4 ounce (1 1/2 tablespoons) lemon juice
1/2 ounce (1 tablespoon) simple syrup or maple syrup
1 egg white*
Garnish with lemon twist (optional)
Soda water

Steps:

  • Place the gin, lemon juice, syrup and egg white in a cocktail shaker. Shake vigorously for 15 seconds.
  • Fill the shaker with ice and shake for 30 seconds until cold.
  • Strain the drink into a glass and top with the soda water; the egg white foam forms on top. If desired, garnish with a lemon twist. Serve immediately.

2 cups sugar
1 cup water
1 (5-inch) piece ginger, sliced
1/4 cup gin
2 tablespoons lime juice
Soda water

Steps:

  • In a small saucepan, over medium heat, add the sugar, water and ginger. Stir until the sugar dissolves. Reduce the heat and simmer, stirring continuously, until thickened. Remove from the heat and set aside to cool.
  • Pour the gin into a glass filled with ice. Add 1/4 cup of simple syrup and the lime juice. Top with soda water and serve.

2 ounces gin
1 1/2 ounces Meyer or regular lemon juice
1 ounce pastis, preferably Henri Bardouin
1/2 ounce simple syrup (homemade or store-bought)
Club soda, for topping
Dash celery bitters

Steps:

  • Add the aquafaba, gin, lemon juice, pastis and simple syrup to a cocktail shaker filled with ice and shake very hard for 30 seconds. Strain over a chilled rocks glass filled with ice and top with a little club soda and the bitters.

1 1/2 cups chilled Spanish sparkling wine (cava) or prosecco
2 tablespoons vodka
1 tablespoon fresh lemon juice
1 pint lemon sorbet
1/2 cup lemon ice cream, such as Haagen-Dazs Five
Fresh strawberries or raspberries

Steps:

  • Freeze 6 wine glasses for at least 15 minutes.
  • Pour the sparkling wine, vodka and lemon juice into a blender. Add the sorbet and ice cream. Blend until thick and smooth, 15 to 30 seconds. Pour into the chilled glasses.
  • Spear some berries on a small skewer or toothpick to garnish the glasses. Serve immediately.
  • Alternatively, freeze the mixture for several hours until firm and scoop into the glasses and garnish with berries.

1 cup sugar
1 cup water
4 cups (32 ounces) top shelf gin
1 cup freshly squeezed lemon juice
1 cup freshly squeezed lime juice
4 teaspoons orange blossom water
1 cup light cream (use only a splash for each serving)
4 ounces club soda
Ice cubes for shaking
1/4 slices of lime and/or orange, for garnishing

Steps:

  • 1. Combine sugar and 1 cup water in a small saucepan. Bring to a boil until sugar dissolves. Remove this simple syrup from heat and cool completely. Stir gin, lemon juice, lime juice, simple syrup, and orange blossom water together in a large pitcher. Refrigerate until chilled.
  • 2. Pour 4 ounces of gin mixture, 1 cup of ice, and a splash of light cream into a cocktail shaker. Shake vigorously until frothy, about 30 seconds. Strain into a highball glass. Top with club soda and garnish with citrus slices.
