FUDGY LAYERED IRISH MOCHA BROWNIES

My husband and I are big fans of Irish cream, so I wanted to incorporate it into a brownie. I started with my mom's brownie recipe, then added frosting and ganache. This decadent recipe is the result, and we really enjoy them! -Sue Gronholz, Beaver Dam, Wisconsin

2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup butter
6 tablespoons baking cocoa
2 tablespoons canola oil
1/2 teaspoon instant coffee granules
1 cup sugar
2 large eggs, room temperature, beaten
1 teaspoon vanilla extract
FROSTING:
2 cups confectioners' sugar
1/4 cup butter, softened
3 tablespoons Irish cream liqueur
GANACHE TOPPING:
1 cup semisweet chocolate chips
3 tablespoons Irish cream liqueur
2 tablespoons heavy whipping cream
1/2 teaspoon instant coffee granules

Steps:

  • Preheat oven to 350°. Sift together flour, baking powder and salt; set aside. In a small saucepan over low heat, melt butter. Remove from heat; stir in cocoa, oil and instant coffee granules. Cool slightly; stir in sugar and beaten eggs. Gradually add flour mixture and vanilla; mix well. Spread batter into a greased 8-in. square pan; bake until center is set (do not overbake), about 25 minutes. Cool in pan on wire rack., For frosting, whisk together confectioners' sugar and butter (mixture will be lumpy). Gradually whisk in Irish cream liqueur; beat until smooth. Spread over slightly warm brownies. Refrigerate until frosting is set, about 1 hour., Meanwhile, prepare ganache: Combine all ingredients and microwave on high for 1 minute; stir. Microwave 30 seconds longer; stir until smooth. Cool slightly until ganache reaches a spreading consistency. Spread over frosting. Refrigerate until set, 45-60 minutes.

These super rich amazing brownies are adapted from a recipe from O'Conaills - an irish chocolatier. I received the chocolate from a friend, I don't think you can purchase it in the states. So use a good quality chocolate. I put the original irish ingredients in parentheses after the converted version.

2 1/2 cups granulated sugar (500 g Caster sugar)
3 large eggs (5 medium eggs)
14 tablespoons unsweetened cocoa powder (100 g O'Conaill's cocoa)
7/8 cup all-purpose flour (125 g)
1 cup butter, 2 sticks (250 g)
1/2 cup chocolate chips (50 g, I round up!)

Steps:

  • Preheat oven to 350 degrees F. (180 ) and grease 9 by 13 inch baking pan.
  • Sift together the flour and cocoa, set aside.
  • Melt the butter until liquid.
  • In large bowl, whisk together the sugar and eggs to a pale cream color.
  • Stir in the sifted dry ingredients until mixed.
  • Add the melted butter and gently stir inches.
  • Add the chocolate chips and fold inches.
  • Turn into the baking pan, smooth surface and bake 32 minutes. (original recipe says 35-45 minutes, I always underbake a bit to get that moist fudgy texture).
  • Let cool and cut into squares.
  • Enjoy!

4 (1 ounce) squares unsweetened chocolate
1 cup margarine, softened
2 cups white sugar
3 eggs
2 ½ teaspoons vanilla extract
1 cup all-purpose flour
½ cup butter, softened
4 cups confectioners' sugar
2 tablespoons milk, or as needed
1 ½ teaspoons peppermint extract
6 drops green food coloring
1 ⅓ cups semisweet chocolate chips
6 tablespoons butter
1 tablespoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Melt the unsweetened chocolate in a cup or small bowl in the microwave. Stir at 15 second intervals until chocolate is smooth. Allow to cool slightly. Transfer to a large bowl, and stir in the margarine and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Stir in the flour just until blended. Pour the batter into the prepared dish and spread evenly.
  • Bake in the preheated oven until the surface appears dry and the sides are beginning to pull away from the edges of the pan, 20 to 25 minutes. The brownies may look more like cake and may jiggle slightly in the center- this is normal. Remove from the oven and cool in the pan set over a wire rack.
  • To make the middle layer, beat 1/2 cup of butter with confectioners' sugar in a large bowl using an electric mixer. Add milk as needed to get a spreadable consistency. Stir in the peppermint extract and green food coloring. Spread this over the cooled pan of brownies. Refrigerate for 30 minutes
  • In a microwave-safe bowl, microwave chocolate chips with the butter until melted. Stir every 20 seconds until chocolate is smooth. Stir in vanilla and then pour over the chilled brownies and quickly spread to cover the surface. Cool again until firm, about 10 minutes, then cut into squares and serve.

2 (19.8 ounce) packages fudge brownie mix (such as Duncan Hines®)
1 cup Irish cream liqueur (such as Baileys®)
⅔ cup vegetable oil
2 eggs
1 cup unsalted butter, softened
5 tablespoons Irish cream liqueur (such as Baileys®)
4 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Butter the bottom of a 10 1/2x15 1/2-inch jelly roll pan.
  • Place fudge brownie mix into a large bowl; beat in 1 cup of Irish cream liqueur, vegetable oil, and eggs until the mixture forms a smooth batter.
  • Spread the batter into the prepared jelly roll pan.

4 ounces semisweet baking chocolate, coarsely chopped (each square is one ounce)
1/2 cup butter
1/2 cup sugar
2 eggs
1/4 cup irish cream (liqueur)
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cream cheese, softened
2 tablespoons butter or 2 tablespoons margarine, softened
2 tablespoons irish cream (liqueur)
1 1/2 cups powdered sugar

Steps:

  • BROWNIES:.
  • Preheat oven to 350°F.
  • Prepare an 8-inch square baking pan by greasing it.
  • Melt chocolate and butter in medium, heavy saucepan over low heat (I use a double boiler). Remove from heat. Stir in sugar. Whisk in eggs, one at a time, mixing well after each addition. Whisk in liqueur.
  • Combine flour, baking powder and salt in small bowl; stir into chocolate mixture until just blended.
  • Spread batter evenly in prepared pan.
  • Bake 22 to 25 minutes or until toothpick inserted in center comes out clean. Remove pan to wire rack; cool completely.
  • FROSTING:
  • Add cream cheese and butter to small bowl and beat with electric mixer at medium speed until smooth. Beat in liqueur. Gradually beat in powdered sugar until smooth.
  • Spread over cooled brownies.
  • Chill at least 1 hour or until frosting is set. Cut into 2-inch squares.

BROWNIES:
1 c all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
4 squares semi-sweet baking chocolate (1 ounce each)
1/2 c butter
1/2 c sugar
1/4 c Irish cream liqueur
2 eggs, beaten
IRISH CREAM FROSTING:
1/4 c cream cheese
2 Tbsp butter, softened
2 Tbsp Irish cream liqueur
3-4 drops green food coloring
1 1/2 c powdered sugar
DRIZZLE:
1 square semi-sweet baking chocolate (1 ounce)

Steps:

  • 1. Preheat oven to 350 degrees. Butter an 8-inch square pan.
  • 2. In a small bowl stir together flour, baking powder, and salt. Set aside.
  • 3. Melt chocolate and butter in a microwave-safe medium bowl. Watch carefully. Stir to blend.
  • 4. Stir in sugar and liqueur. With a whisk beat in eggs, one at a time. Stir in flour mixture. Spread batter in buttered pan.
  • 5. Bake for 20-25 minutes. Remove from oven and place pan on a wire rack to cool.
  • 6. Make frosting: In a mixer bowl, beat cream cheese and butter until well mixed and smooth.
  • 7. Add liquor and food coloring. Mix well. Gradually mix in powdered sugar.
  • 8. Prepare drizzle: Melt semi-sweet chocolate.
  • 9. Frost cooled brownies with green frosting and then drizzle with melted chocolate.
  • 10. Score where you want to cut bars (so that chocolate won't just break up when you cut the cooled bars).
  • 11. Refrigerate for at least 1 hour to allow frosting to firm up. Makes 16 brownies.
