These muffins have everything, complex carbs, protein, fiber, and very little fat! If you have to wake up and run/jog/cycle/go to work in a hurry these muffins will help you go the distance.

Number Of Ingredients 15

1 cup whole wheat flour
1 cup old fashioned oats
1/2 cup all-purpose flour
3/4 cup brown sugar, packed
2 tablespoons oat bran (or wheat bran)
1 tablespoon oat bran (or wheat bran)
2 teaspoons baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup plain fat-free yogurt
2 ripe bananas, mashed (or 3/4 c applesauce)
1 large egg
1 cup dried plum, chopped
3/4 cup pecans, chopped
1/2 cup dried pineapple, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Line 18 muffin tins and spray lightly with cooking spray.
  • Separate 1 Tbsp of Oat Bran for use in next step.
  • Combine dry ingredients in a large mixing bowl.
  • Whisk dry ingredients together being careful to eliminate any lumps of brown sugar.
  • Push dry ingredients to the sides of the bowl to create a well in the center.
  • Mix wet ingredients together & pour into well.
  • Mix dry & wet ingredients just until moist.
  • Fold in the Mix-Ins of fruit and nut(s).
  • Spoon muffin batter evenly into the tins.
  • Sprinkle each muffin with remaining 2 Tbsp of Oat Bran
  • Bake muffins for 18-20 minutes
  • Remove from tins to cooling rack immediately.
  • ***You may substitute any dried chopped fruit or nut for the mix-ins.

No oil, no butter... This muffin makes me feel not guilty about having more than just one. They are great to grab and go for a quick breakfast. The oats and Greek yogurt will keep you feeling full. Enjoy fresh from the oven or cool completely, store in an airtight container for 2 days, or pack away and freeze.

2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 ¼ cups Greek yogurt
2 eggs
½ cup unsweetened applesauce
⅓ cup brown sugar
2 tablespoons water
1 ½ tablespoons vanilla extract
1 ¼ cups fresh blueberries
1 teaspoon all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a muffin tin with cooking spray or line with paper liners.
  • Whisk 2 cups flour, oats, baking soda, baking powder, and salt together in a medium bowl.
  • Whisk Greek yogurt, eggs, applesauce, brown sugar, water, and vanilla extract together in a large bowl.
  • Toss blueberries with 1 teaspoon flour to prevent them from sinking to the bottom of the muffins.
  • Fold flour mixture into the Greek yogurt mixture. Fold in blueberries. Spoon batter into the prepared muffin tin, filling each cup 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes.

1 pound bulk Italian sausage
7 large eggs, divided use
2 cups all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup 2% milk
1/2 cup canola oil
1 cup shredded cheddar cheese, divided

Steps:

  • Preheat oven to 400°. In a large nonstick skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles. Remove with a slotted spoon; drain on paper towels. Wipe skillet clean., In a small bowl, whisk 5 eggs. Pour into same skillet; cook and stir over medium heat until thickened and no liquid egg remains. Remove from heat., In a large bowl, whisk flour, sugar, baking powder and salt. In another bowl, whisk remaining eggs, milk and oil until blended. Add to flour mixture; stir just until moistened. Fold in 2/3 cup cheese, sausage and scrambled eggs., Fill greased or paper-lined muffin cups three-fourths full. Sprinkle tops with remaining cheese. Bake 12-15 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks. Serve warm. Freeze option: Freeze cooled muffins in an airtight container. To use, microwave each muffin on high for 45-60 seconds or until heated through.

4 oz cream cheese
1/4 c sugar
1/4 c orange marmalade
1 egg
1/4 c frozen oj concentrate
1/4 c water
1/4 c nuts
oj marmalade for coating
1 3/4 c bisquick spoon in your cup

Steps:

  • 1. in a small bowl mix the cream cheese and sugar until well mixed. i put my cream cheese in the microwave for 10 sec and then added the sugar. it mixed together very smoothly. add the oj, water, melted 1/4 cup of marmalade. when mixed in well, add the egg, biscuit and pecans. i use texas size muffin tins. bake at 400 for 15 min. when done, dip in the melted marmalade.
  • 2. i always spoon in the bisquick because it can pack down.

¾ cup white sugar
1 egg
1 cup milk
¼ cup vegetable oil

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Stir together the flour, baking powder, salt and sugar in a large bowl. Make a well in the center. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.
  • Variations: Blueberry Muffins: Add 1 cup fresh blueberries. Raisin Muffins: Add 1 cup finely chopped raisins. Date Muffins: Add 1 cup finely chopped dates. Cheese Muffins: Fold in 1 cup grated sharp yellow cheese. Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits.
  • Bake for 25 minutes, or until golden.
