PEAR & GINGER LOAF CAKE

This makes a lovely teatime treat or pudding, served with cream and also works well with apple and cinnamon or damson and vanilla

200g unsalted butter , plus extra for greasing
100g caster sugar
100g soft brown sugar
2 large eggs , beaten
1 tsp vanilla extract
200g self-raising flour
1 tsp baking powder
2 balls stem ginger in syrup, drained and chopped
2 pears , peeled, cored and roughly chopped
3 tbsp syrup from the ginger jar
3 tbsp granulated sugar

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line the base and sides of a 900g/2lb loaf tin with baking parchment, ensuring the parchment comes 2cm above the top of the tin. Beat the butter and sugars together until pale, then gradually stir in the eggs and vanilla extract. Fold the flour, baking powder and a pinch of salt into the mix, then quickly stir through the stem ginger and pears. Pour the mixture into the loaf tin, smooth the surface, then bake for 1 hr - 1 hr 10 mins or until a skewer inserted in the centre comes out clean. Allow to cool in the tin.
  • To make the glaze, mix the syrup with 1 tsp water and the sugar. Poke the surface of the loaf all over with a skewer, then pour on the syrup. Serve warm with cream, or allow to cool completely.

A delectable and easy Tea Loaf with aromatic and fruity flavours! The beauty of these British and Irish style Tea Loaves or Brack, is that they are nearly always fat-free, making them a tasty snack to have with an afternoon cuppa, and without the guilt! I have added ginger for a subtle kick, and I have discovered that if you soak your fruit in Darjeeling tea, it lends a wonderful flavour to the fruit, you can use any tea of your choice however. Remember to start this Tea Loaf off the night before you wish to bake it, as the fruit steeps in the tea overnight, making them plump and moist. This Tea Loaf freezes well (in slices) and it will stay fresh for a week in an airtight tin. NB: A note on ingredient conversions to US cups; The conversion rate to US cups is very dependant on what type of sugar and flour you use - there is a different rate for white flour and wholemeal flour, as there is for caster (superfine) sugar and granulated sugar. We use weights for measurements, and US cups rely on volume!

2 ounces currants
2 ounces raisins
2 ounces semi dried cranberries
2 ounces stem ginger in syrup, drained and chopped finely or 2 ounces glace ginger, chopped finely
1 largeorange, zest or 1 tablespoon dried orange peel
3 ounces brown sugar
1/4 pint hot darjeeling tea or 1/4 pint hot brewed tea, of your choice
1 egg, size 3, medium
1 teaspoon ground ginger
8 ounces self raising flour

Steps:

  • NIGHT BEFORE BAKING:.
  • Place all of the dried fruit, including the orange zest and ginger, with the sugar into a large mixing bowl, and pour over the hot tea, give it a good stir - cover with a clean tea towel and leave to steep overnight.
  • BAKING THE TEA LOAF:.
  • Pre-heat oven to 160C/325F/Gas Mark 3 and grease and line a 2 lb (1 kg) loaf tin.
  • Add the beaten egg to the fruit mixture and mix well, then add the ground ginger.
  • Gradually add the flour and stir the mixture well, ensuring there are no lumps of flour remaining.
  • Pour the mixture into the prepared loaf tin and bake for 1 and 1/2 to 1 and 3/4 hours, or until the loaf is firm and a skewer comes out clean when testing.
  • If the loaf appears to be browning too quickly, place on the bottom shelf and cover with a sheet of baking paper.
  • Allow the loaf to cool slightly, and gently remove to a wire cooling rack.
  • Store in an airtight tin for up to 1 week, or freeze slices of the tea loaf with greaseproof paper in between each slice.
  • This is wonderful when buttered or toasted!
  • NB: You must use HOT tea!

1 large banana, well mashed
1/2 cup finely chopped dates
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
2 tablespoons maple syrup
1 1/2 cups whole wheat pastry flour
1/2 cup unbleached all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
5 tablespoons unsalted butter
1/2 cup brown sugar
2 large eggs, beaten

Steps:

  • Preheat the oven to 375 degrees. Lightly coat an 81/2 x 4 1/2 x 2 1/2 loaf pan with canola oil spray. Set aside.
  • In one bowl, combine the banana, dates, cinnamon, ginger, allspice, and maple syrup. In another bowl, combine the two flours, baking powder and salt. Set both bowls aside.
  • In a large bowl, use a wooden spoon to cream the butter and sugar until fluffy.
  • Mix in the eggs. The mixture may look curdled. Stir in the dry ingredients. Blend in the banana mixture, creating a sticky, thick batter. Spoon the batter into the prepared pan, smoothing it evenly.
  • Bake 35 minutes, or until the top is well-browned and a toothpick inserted into the center comes out clean.
  • Let the cake rest 2 minutes in the pan, then turn out and cool it completely on a rack. If possible, wrap it in foil and set it aside for 24 hours before serving, to allow the flavors to mellow.
  • If desired, slices of cake can be warmed just before serving by wrapping them in wax paper and heating in a microwave at low power for a few seconds.
  • Makes 10 one-inch slices.

1/2 cup sugar
1/3 cup of chopped crystallized ginger

  • Place dates, water, apple sauce and sugar in bowl in the microwave on high for 4 minutes. Add ginger and cool.

200g butter , cut into cubes, plus extra for greasing
140g stoned date , chopped
410ml can evaporated milk
100g soft dark brown sugar
225g plain flour
3 tbsp malted milk powder (we used Horlicks)
2 tsp ground ginger
50g stem ginger , roughly chopped (reserve the syrup)
2 tsp bicarbonate of soda
2 large eggs
50g stem ginger , chopped
5 tbsp ginger syrup (from the stem ginger jar)
5 tbsp icing sugar

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 900g/2lb loaf tin with baking parchment. Put the dates, evaporated milk and sugar in a small saucepan, bring to the boil and cook for 5 mins until the dates are soft and the sugar has dissolved. Leave to cool.
  • Put the flour, malted milk powder, ground ginger, stem ginger, bicarb and butter into a food processor, and blitz until the mixture resembles breadcrumbs. Pour in the cooled date mixture and the eggs, and pulse briefly until the mixture is combined. Tip into your prepared tin and bake for 1 hr 15 mins until a skewer inserted comes out clean. Leave to cool for 10 mins in the tin, then transfer to a wire rack. Combine all the ingredients for the drizzle and spoon over the cake. Leave to set before serving. This cake is delicious if eaten on the day it is made, but will improve after a day or 2 in the cake tin.

1 teaspoon salt
1 ½ teaspoons canola oil
1 teaspoon lemon juice
3 cups bread flour
½ teaspoon ground cinnamon
1 teaspoon ground ginger

1 teaspoon active dry yeast
¼ cup chopped crystallized ginger
1 tablespoon white sugar

Steps:

  • Place ingredients except for the crystallized ginger in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • At end of cycle, remove dough onto a floured board. Knead dough briefly, shape into a ball, cover and let rest for 15 minutes.
  • Flatten the dough and gently knead in the crystallized ginger. Form into a loaf shape, place in a lightly greased 9x5 inch loaf pan. Cover and let rise until nearly doubled in size, about 45 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • Just before baking, slash top with a razor or sharp knife. Sprinkle with 1 tablespoon sugar if desired.
  • Bake in preheated oven for 30 minutes, or until bottom of loaf sounds hollow when tapped. Remove bread to a wire rack to cool before serving.

250g chunk of pumpkin or squash flesh (the scoopings from your Halloween pumpkin are perfect)
50g black treacle
140g golden syrup
140g light soft brown sugar
100ml semi-skimmed milk
100g cold butter , diced, plus extra for greasing
225g self-raising flour
1 tsp bicarbonate of soda
1 tbsp ground ginger
2 tsp mixed spice
2 medium eggs , beaten
8-10 chunks crystallised ginger , thinly sliced

Steps:

  • Put the pumpkin or squash in a microwave- proof bowl with a dribble of water. Cover with cling film, pierce with a couple of holes and cook in a microwave on High for 5-10 mins, or until the pumpkin is soft and mashable. Drain off the water and mash until smooth. Put the treacle, syrup, sugar and milk in a pan and heat gently until the sugar has dissolved.
  • Heat oven to 180C/160C fan/gas 4. Grease and line a 900g loaf tin with a strip of baking parchment. Sift the flour, bicarb, spices and a pinch of salt into a bowl together. Tip in the diced butter and rub with your fingertips until no big lumps remain.
  • Whisk the mash and the egg into the lukewarm syrupy mixture, then stir everything into the dry ingredients. Pour the batter into the prepared tin, scatter with most of the crystallised ginger and bake for 45 mins until a skewer poked into the centre comes out with just moist crumbs attached. Scatter over the remaining sliced ginger to stick, then cool in the tin. This cake tastes delicious once thoroughly cooled and sliced, but even better if wrapped in parchment and foil, and left for a couple of days to mature. Perfect with a cuppa, smeared with some butter.

  • While the mixture is still hot, add the baking soda, egg and raisins.
  • In a small bowl.
  • re sift the flour with the cinnamon, ginger and cloves.
  • Stir into the molasses mixture.
  • Add the candied ginger and mix well without incorporating too many bubbles.
  • Pour the batter into the prepared pan.

2 ¼ teaspoons ground ginger
2 teaspoons ground cinnamon

1 (8 ounce) package cream cheese, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5-inch loaf pans.

100ml vegetable oil, plus extra for the tin
275g self-raising flour
150g dark muscovado sugar
1 tsp baking powder
1 tbsp ground ginger
50g treacle
50g stem ginger from a jar, finely grated, plus 1 tsp of the ginger syrup
150g icing sugar
½ lemon, juiced
4 crystallised stem ginger pieces, sliced

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Oil a 900g loaf tin (ours was 19 x 9 x 6cm) and line with a long strip of baking parchment. Mix the flour, muscovado sugar, baking powder and ground ginger together in a large bowl. Tip in the oil, treacle, grated stem ginger and 170ml cold water, then beat together until smooth using a wooden spoon.
  • Pour the cake mixture into the prepared tin and bake in the centre of the oven for 45-50 mins until a skewer inserted into the middle comes out clean. Leave to cool in the tin for 5 mins, then transfer to a wire rack to cool fully.
  • Sieve the icing sugar into a bowl, add the ginger syrup and mix in just enough lemon juice to make a thick, pourable icing that can coat the back of a spoon. Put the cake on a plate or stand, remove the parchment and drizzle over the icing. Immediately scatter over the stem ginger. Cut the cake into thick slices to serve.

250g pack butter
175g pecan halves
250g light muscovado sugar
175g dried cranberries
175g dried apricots , chopped
grated zest and juice 1 large orange
5 tbsp brandy
4 eggs
300g plain flour
2 tsp each baking powder and ground ginger
1 tsp ground cinnamon
50g crystallised ginger , chopped
3 tbsp apricot jam
icing sugar , for dusting
250g block marzipan
extra pecans , dried apricots, vanilla pod, cinnamon sticks, sliced ginger, glacé cherries and cranberries, to decorate

Steps:

  • Heat oven to 150C/fan 130C/gas 2. Butter and double line the base and sides of a 20cm square deep cake tin with baking parchment. Grind 100g of the pecans in a food processor.
  • Chop up the butter and put in a large heavy-based pan with the sugar, cranberries, apricots, orange zest and juice and brandy. Bring slowly to the boil, stirring until the butter is melted, then simmer for 10 mins until the fruits are plump and glossy. Remove from the heat and cool for 30 mins.
  • Beat the eggs lightly. Sift together the flour, baking powder, ground ginger and cinnamon. Stir the eggs, ground pecans, remaining pecan halves, flour mixture and crystallised ginger into the pan, stirring until well mixed.
  • Spoon into the prepared tin and smooth the top. Bake for 1 hr, then reduce the temperature to 140C/fan 120C/gas 1 and cook for a further 1½-2 hrs, until the cake feels firm and a skewer inserted into the centre comes out clean. Cool in the tin for 10 mins, turn out, then remove the paper and leave to cool completely on a wire rack.
  • Warm the jam with 1 tbsp water, then press through a sieve into a bowl. Put the cake on a board and brush the top with a thin layer of jam, reserving some for later. Lightly dust a surface with icing sugar, then roll out the marzipan to slightly larger than the top of the cake. Lift onto the cake, press on lightly, then trim to meet the edges. Cut in half.
  • Brush the remaining jam over the marzipan, then decorate the tops with dried fruits, nuts and other ingredients of your choice. Wrap each cake first in baking parchment, then in foil. Store in the tin for up to 3 weeks. Can be frozen for up to 2 months.

Steps:

  • Grease a 2lb loaf tin (900g) with greaseproof/parchment paper. Preheat the oven to about 170C or 160C fan.
  • Place your black treacle, golden syrup, dark brown soft sugar and dairy free spread into a saucepan with 70ml of water. Gently heat and stir until completely melted. (Don't allow it to boil!)
  • Sift your flour and spices into a mixing bowl and then add your warm syrup/treacle mixture to it. Beat together using a wooden spoon until lovely and smooth.
  • Add half your beaten egg and mix thoroughly, then repeat with the other half.
  • In a small dish, add 2 tbsp of water to the bicarbonate of soda, mix until well combined and then add to your main bowl too. Mix once more. Your final mixture should now look nice and smooth, with a runny consistency.
  • Pour your mixture into the loaf tin and bake for 60 minutes.
  • Once baked allow to cool. The cake should be almost firm to touch, but will firm up more as it cools.

  • Preheat over to 350 F. Grease and flour 8 1/2 x 4 1/2 inch loaf pan. Sift first 6 ingredients into medium bowl. Mix in 3 tablespoons crystalized ginger. 100g unsalted butter , plus extra for the tin
100g dark muscovado sugar
50g black treacle
50g golden syrup (or use more black treacle if you like your ginger cake really dark)
zest 1 orange
zest and juice 1 lemon
1 large carrot , grated (you will need 140g/5oz flesh)
5 balls stem ginger from a jar, finely chopped
175g self-raising flour
¼ tsp bicarbonate of soda
2 tsp ground ginger
¼ tsp freshly ground black pepper
2 eggs
140g icing sugar

Steps:

  • Heat oven to 180C/160C fan/gas 4. Butter then line a 900g loaf tin with a strip of baking parchment. Put the butter, sugar, treacle, syrup and half the zests into a large saucepan. Heat gently until everything has melted together.
  • Add the carrot, ¾ of the chopped ginger, all the flour, bicarb, ¼ tsp salt, the ground ginger, pepper and eggs to the pan and stir well until you have a smooth batter. Pour into the tin and bake for 45 mins, or until dark brown and risen and a skewer inserted into the middle comes out clean. Cool for 20 mins in the tin, then turn out onto a wire rack.
  • Sift the icing sugar into a bowl, add the remaining zests, then stir in enough lemon juice (about 4 tsp should do it) to make a smooth, thick icing. Cover the surface of the icing with cling film until ready to decorate the cake.
  • When the cake is completely cool, spread the icing over the top and let it dribble down the sides. Scatter with the reserved chopped ginger. Allow to set, then cut into slices and serve.

1 orange
1 slice whole-wheat bread or 1/2 cup whole-wheat bread crumbs
1 large egg white
1 tbsp. fresh ginger
2 clove garlic
Kosher salt and pepper
1 medium carrot
1/2 c. fresh cilantro
4 scallions
1 1/4 lb. lean ground turkey (preferably white meat)
2 tbsp. hoisin sauce
2 tbsp. Ketchup
6 c. mixed greens
1 tbsp. olive oil

Steps:

  • Heat oven to 375°F. Line a rimmed baking sheet with foil. Using a vegetable peeler, remove 2 strips of zest from the orange and very thinly slice on a diagonal; transfer the zest to a large bowl and set the orange aside.Pulse in a food processor to form fine crumbs. Add the egg white, ginger, garlic, 1 Tbsp water and 1/2 tsp each salt and pepper to the bowl with the zest and whisk to combine; stir in the bread crumbs. Add the carrot, chopped cilantro and half the scallions, and mix to combine.Add the turkey and mix just until incorporated. Transfer the mixture to the prepared baking sheet, shape into a 9 x 3 1/2-in. loaf and bake for 25 minutes. In a small bowl, combine the hoisin and ketchup. Brush the mixture over the entire loaf and continue cooking until the internal temperature registers 160°F, 10 to 15 minutes more. Let rest for 5 minutes before slicing.While the meat loaf is resting, cut away the peel and white pith of the orange and thinly slice into rounds. In a large bowl, gently toss the orange slices, greens, oil, cilantro leaves, remaining scallions and 1/4 tsp each salt and pepper. Serve with the meat loaf.
