GINGER LIME TILAPIA

My husband won't eat fish unless its Tilapia, so I've had to find ways to make it interesting. This is my favorite variation I've done so far. I generally serve this with fresh snow peas or green beans splashed with teriyaki sauce.

12 ounces tilapia fillets
1 teaspoon olive oil
1 teaspoon lime zest
2 teaspoons fresh ginger, grated
1 teaspoon paprika
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon garlic powder
3 tablespoons lime juice
salt
pepper

Steps:

  • Mix together the lime zest, ginger, paprika, garlic powder, red pepper flakes, salt and pepper.
  • Sprinkle mixture on both sides of each tilapia filet.
  • Heat olive oil in a pan. Add the fish filets to the pan and cook on medium-high for 4 minutes on each side.
  • Sprinkle finished filets with lime juice.

4 -8 ounces tilapia fillets
1 teaspoon silly crazy salt (I don't know what Silly Salt is) or 1 teaspoon garlic salt (I don't know what Silly Salt is)
fresh ground black pepper
1/4 cup unsalted butter, cut into small pieces
1 lime, zest of, finely grated
1 lime, juice of

Steps:

  • Preheat oven to 375 degrees. Line a rimmed baking sheet with aluminum foil; set aside.
  • Rinse fish and pat dry; place on the prepared baking sheet. Season each fillet with 1/4 teaspoon Silly Salt and pepper to taste. Divide the butter pieces lime zest, and juice evenly among the tops of the fillets. Bake for 8 to 12 minutes or until the fish flakes easily when tested with a fork.

1/3 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground cumin, divided
4 tilapia fillets (6 ounces each)
1 tablespoon olive oil
1/2 cup reduced-sodium chicken broth
2 tablespoons minced fresh cilantro
1 teaspoon grated lime zest
2 tablespoons lime juice

Steps:

  • In a shallow bowl, mix flour, salt, pepper and 1/4 teaspoon cumin. Dip fillets in flour mixture to coat both sides; shake off excess., In a large nonstick skillet, heat oil over medium heat. Add fillets; cook, uncovered, 3-4 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., To the same pan, add broth, cilantro, lime zest, lime juice and remaining cumin; bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly thickened. Serve with tilapia.
