GARLIC KNOTS

Garlic Knots image

Categories     appetizer

Time 3h5m

Yield about 2 dozen

Number Of Ingredients 14

Basic Pizza Dough, recipe follows
1/2 cup unsalted butter
3 tablespoons minced garlic
1 tablespoon olive oil
1 teaspoon coarse sea salt
1/4 cup grated Pecorino Romano cheese
2 tablespoons chopped fresh parsley
1 cup warm water (105 to 115 degrees F)
1 (1/4-ounce) envelope active dry yeast
1 teaspoon honey
2 tablespoons extra-virgin olive oil
3 cups unbleached all-purpose flour
1 teaspoon salt
Yellow cornmeal, for sprinkling the baking sheet

Steps:

  • Prepare Basic Pizza Dough as recipe instructs below and set aside to rise.
  • Combine butter and garlic in a small saucepan over low heat. Cook until the garlic is fragrant and tender, 3 to 4 minutes. Cover, remove from the heat and set aside. Keep warm.
  • Preheat oven to 375 degrees F and lightly grease 2 large baking sheets. Set aside.
  • Remove risen dough from the bowl and place on a lightly floured surface. Using a lightly floured rolling pin, roll dough out into a large rectangle, about 16 by 12 inches. Brush the dough lightly with the olive oil. Cut the dough in half lengthwise and then cut crosswise into strips about 1 1/4 inches wide. Tie each strip loosely into a knot, stretching gently if necessary, and place on prepared baking sheets about 2-inches apart. Sprinkle the tops of the knots with salt. Cover with plastic wrap or a clean kitchen towel and let rise in a warm, draft-free place for about 30 minutes.
  • Bake until golden brown and risen, about 20 minutes. Transfer to a large mixing bowl and toss gently with the warm garlic butter, Pecorino Romano cheese, and parsley. Add salt to taste if necessary. Serve immediately.
  • In a large bowl, combine the water, yeast, honey, and 1 tablespoon oil, stirring to combine. Let sit until the mixture is foamy, about 5 minutes.
  • Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until the dough is smooth but still slightly sticky. You may not need all of the flour. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
  • Oil a large mixing bowl with remaining olive oil. Place the dough in the bowl, turning to coat with the oil. Cover with plastic wrap and set in a warm place, free from drafts until doubled in size, about 1 1/2 hours.

BUTTERY GARLIC HERB KNOTS

Buttery Garlic Herb Knots image

Provided by Kelsey Nixon

Time 2h30m

Yield 18 knots

Number Of Ingredients 15

1/2 recipe Simple Pizza Dough, recipe follows
16 tablespoons (2 sticks) unsalted butter, room temperature
2 tablespoons fresh thyme leaves, minced
2 tablespoons fresh rosemary leaves, minced
3/4 cup grated Parmesan, divided
10 cloves garlic, grated
Bench flour
2 teaspoons kosher salt
1 3/4 cups warm water (105 to 110 degrees F)
1 envelope active dry yeast (2 1/4 teaspoons)
2 teaspoons sugar
3 tablespoons olive oil
4 cups bread flour, plus more for dusting
2 teaspoons salt
Nonstick spray

Steps:

  • Prepare the recipe for Simple Pizza Dough. While the dough is rising, prepare the remaining ingredients for the garlic knots and preheat the oven to 375 degrees F.
  • Mix the butter with the thyme, rosemary, 2 tablespoons Parmesan and garlic.
  • Turn the risen dough out onto a floured surface. Stretch the dough into a rectangle. Spread half of the butter mixture on half of the dough. Then fold the dough in half, covering the butter with the dough.
  • Using a pizza wheel, divide the dough into 18 strips. First cut through the middle, then you can cut each half into 9 pieces. Stretch each strip and tie into a knot and tuck the ends underneath the center of the knot. Place the knots onto a baking sheet.
  • Sprinkle the knots with some of the Parmesan and bake until golden brown, 15 to 20 minutes.
  • Meanwhile, in a small saucepan over low heat, melt the remaining herb butter.
  • Once the knots come out of the oven, baste them with the melted butter and sprinkle them with the remaining Parmesan. Serve warm and enjoy!
  • In a liquid measuring cup, combine the warm water, yeast and sugar. Allow the yeast to dissolve and bloom, about 5 minutes. Once bloomed, add the olive oil.
  • Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment, combine the flour and salt. Stream in the water/yeast mixture and as the dough begins to come together, switch to a dough hook attachment. Allow the dough to knead, adding a bit more flour if needed, so that the dough releases from the sides of the bowl, 1 to 3 minutes. You should be able to touch the dough and not have the dough stick to your fingers. Once the dough has kneaded and has pulled away from the sides of the bowl, remove the dough from bowl to a floured work surface and, with floured hands, continue to knead it by hand for 1 to 2 minutes. Then form the dough into a round ball and place it into a large bowl sprayed with nonstick spray. Cover the bowl with plastic wrap or a clean dish towel and let the dough rise in a warm area of your kitchen until it doubles in size, 1 1/2 to 2 hours. After the dough has risen it is ready to be cooked however you'd like!
  • Cook's Notes: This dough is wet dough, keep bench flour at the ready and make sure to flour your hands when working with the dough. Trust your gut as a chef, if the dough is to wet, add more flour, if it is too stiff, add a little water.
  • Sugar is used to feed the yeast which will help the dough to grow. Bread flour will give you a chewier texture because the flour has more gluten. You don't need to use a thermometer to get the water temperature, it should just feel warm to the touch.

GARLIC KNOTS

Garlic Knots image

Garlic knots are a beloved classic pizzeria snack that can easily be recreated at home. Start with premade dough from the supermarket or buy it straight from your neighborhood pizza joint. For best results, the dough needs to rest - or "rise" - twice. The first resting period achieves a dough that is pliable and easy to roll out and shape. Once formed into knots, the dough rests a second time, allowing it to relax after being stretched and shaped, resulting in a more tender and fluffier garlic knot. But it's the garlic butter that's the star here. Cook the garlic slow and low, since frying it too fast will make it bitter, then toss it with the knots. For a cheesy twist, sprinkle some grated Parmesan over the glossy rolls.

Categories     finger foods, appetizer

Time 3h30m

Yield 12 servings

Number Of Ingredients 9

1 pound prepared pizza dough, thawed if frozen
All-purpose flour, for dusting
4 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil
2 tablespoons minced garlic
1 tablespoon finely chopped parsley
Kosher salt
Parmesan, for finishing (optional)
Warmed marinara sauce, for dipping

Steps:

  • Divide dough into 2 equal pieces and arrange on a parchment-lined baking sheet a few inches apart. Cover loosely with plastic wrap and let stand at room temperature until softened and pliable, about 1 hour.
  • Working with one piece at a time, use a lightly floured rolling pin to roll dough into a 6-inch square on a lightly floured surface. Cut into six 1-inch strips. Roll one strip to form a rope about 8 inches long, then tie into a single knot. Transfer to the parchment-lined baking sheet. Repeat with remaining strips and second piece of dough, arranging the knots a few inches apart on the baking sheet. Cover loosely with plastic wrap and let stand until puffed and doubled in size, about 2 hours.
  • Heat oven to 400 degrees. Bake knots until golden on bottom, about 15 minutes.
  • Meanwhile, in a small saucepan, cook butter and oil over low heat until butter melts. Add garlic and cook, stirring occasionally, until softened and very fragrant, about 5 minutes. Scrape butter mixture into a large bowl, then stir in parsley and season with salt.
  • In batches, toss the warm knots in the garlic butter until well coated. Sprinkle with Parmesan, if desired, and serve with marinara sauce.

Yield 12

Number Of Ingredients 6

1 (11 ounce) container refrigerated soft breadsticks, separated
3 tablespoons butter
3 cloves garlic, minced
1 tablespoon olive oil
kosher salt to taste
3 tablespoons grated Parmesan cheese, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Tie each breadstick in a knot; do not pull the ends through, just barely tie them up so they are sort of in a ball shape. Place on an ungreased baking sheet.
  • Bake in the preheated oven until golden brown, 11 to 13 minutes.
  • Meanwhile, combine butter, garlic, and olive oil in a small pan over medium-low heat. Cook until butter has melted, then stir to combine flavors.
  • Remove knots from the oven and transfer to a medium or large bowl. Pour garlic mixture over top and toss to combine.
  • Plate the knots and pour any remaining liquid and garlic over top. Sprinkle with Parmesan cheese and salt.

Time 40m

Number Of Ingredients 6

2 pkg 10 count canned biscuits
1/4 c melted butter
parmesan cheese
dried oregano
3 clove fresh grated garlic
coarse salt and cracked black pepper

Steps:

  • 1. Spray a bundt pan with non stick spray. Melt 1/4 cup of butter in microwave.
  • 2. Prepare your spices before you take the biscuits out of the fridge. All ingredients are to taste. It cannot be any easier!! Mix the salt, pepper, parmesan and oregano in a bowl and set aside. In a large bowl cut or tear your biscuit. I cut mine in 1/4 pieces. Drizzle the pieces with the melted butter and add your dry ingredients then grate the 3 cloves of garlic over the top of that. Gently toss together making sure all pieces are coated well.
  • 3. Drop one piece at a time into the prepared bundt pan. Bake at 350 for 15-20 minutes until the top is nice and brown. Remove from oven and turn out onto a serving plate.

PIZZA HUT(™) GARLIC KNOTS RECIPE - (1.7/5)

Pizza Hut(™) Garlic Knots Recipe - (1.7/5) image

Provided by á-64866

Number Of Ingredients 7

24 oz. pizza dough (homemade or store-bought)
1 1/2 Tbsp olive oil
5 Tbsp unsalted butter
2 Tbsp Parmesan cheese, grated
2 tsp garlic, minced
1 1/2 tsp Italian seasoning
1 tsp kosher salt

Steps:

  • Spray muffin tin with nonstick spray; set aside. Divide the pizza dough into 12 equal pieces 2 oz. each. Cut each piece of dough into 5 pieces. Using a circular motion, roll each piece of dough between countertop and palm of your hand until dough ball becomes tight. Place 5 balls of dough into each muffin cup. Brush tops of dough with olive oil. Cover pan and place in a warm location for 1 hour, or until dough has risen 1" over top of pan. Tip: For a warm location, I put the pan in my oven with just the oven light on. Once dough has risen, bake at 350°F for 28-30 minutes, or until tops of garlic bread are lightly browned. While garlic bread is baking, melt the butter and stir in the Parmesan cheese, minced garlic, Italian seasoning and kosher salt. Remove garlic bread from oven and brush with the garlic butter mixture. Serve hot.
