We went very classic with this garlic bread recipe-lots of butter and lots of garlic loaded onto warm, soft and pillowy French bread. You could make a light meal by rounding it out with a crisp green salad. Or serve it our favorite way-alongside your favorite red-sauce pasta.

1 1/2 sticks (12 tablespoons) unsalted butter
4 cloves garlic, finely chopped
1 large soft Italian or French loaf
1/4 cup grated Parmesan
Kosher salt
2 tablespoons flat-leaf parsley leaves, finely chopped

Steps:

  • Arrange a rack in the center of oven and preheat to 450 degrees F.
  • Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
  • Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
  • Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

3 garlic cloves, crushed and peeled
12 inches loaf Italian bread
1 teaspoon oregano, dried

  • Combine olive oil and garlic and steep about 30 minutes.
  • Preheat oven to 400 degreed F.
  • Split loaf of bread lengthwise, then in half to form 4 sections.
  • Set bread, cut side up, on baking sheet and spread with garlic infused oil. Rub cloves directly on bread and leave pieces on the bread.
  • Sprinkle with dried oregano.
  • Bake for 4 - 5 minutes until bread is golden and crispy. Remove large pieces of garlic.

12 tablespoons (1 1/2 sticks) unsalted butter
1 head garlic, cloves separated and peeled
1 cup freshly grated Italian Parmesan cheese
2 tablespoons minced fresh parsley
2 teaspoons grated lemon zest
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 (20 to 24-inch-long) crusty French baguette
Fleur de sel or sea salt

Steps:

  • Preheat the oven to 450 degrees F. (Make sure your oven is clean or it will smoke!)
  • Melt the butter in a small saucepan over low heat. Add the garlic, stir to coat with the butter, and cook, covered, for 20 minutes, stirring occasionally, until the garlic is very tender. Transfer to a small bowl and set aside until cool enough to handle. Mash the garlic in the butter with a fork. Stir in the Parmesan, parsley, lemon zest, red pepper flakes, 1 1/2 teaspoons kosher salt, and 1/2 teaspoon black pepper.
  • Slice the baguette in half lengthwise and place both halves, cut sides up, on a cutting board. Score each half diagonally (don't cut all the way through) in large serving-size pieces. Spoon all of the garlic mixture generously on the cut sides of the bread. Cut each half of the baguette in half crosswise along a score and place the 4 pieces on a sheet pan lined with parchment paper.
  • Bake for 5 to 7 minutes, until the topping is bubbly and starting to brown and the bread is crisp. Transfer to a board, cut in serving pieces along the scores, sprinkle with fleur de sel, and serve warm.

GARLIC BREAD, THREE WAYS

In Italy, it is called bruschetta, fett'unta, and by various names in different regions, but the basic concept is that bread, fresh or old, is grilled or toasted and then brushed with olive oil and rubbed with fresh garlic. Toppings are optional, and surely seasonal. In the United States, this Italian custom took on different versions and became garlic bread. Garlic bread was an open loaf of Italian bread brushed with butter or oil and lots of chopped garlic, sprinkled with dry oregano, and grilled or baked. I recall liking the grilled and warm bread from my Italian American restaurant visits, but the garlic was always too much for me. I must say that now, in most restaurants, the grilling and toasting of bread has come full-circle, and bruschetta as well as garlic bread graces the table. Here are three versions of the garlic bread made with the Italian American tradition in mind. Just keep a handle on the garlic.

Steps:

  • Combine the olive oil and garlic in a small bowl, and steep about 30 minutes, to let the flavors mingle.
  • Preheat the oven to 400 degrees F. Split the bread in half lengthwise, then cut in half crosswise, to make four pieces. Set the pieces, cut side up, on a baking sheet, and brush the bread with the flavored oil, rubbing with the garlic cloves and leaving them on top. Sprinkle with the dried oregano.
  • Bake until the bread is golden and crispy, about 4 to 5 minutes. Remove any large garlic pieces, and lightly season the bread with salt before serving.
  • (Pane Strofinato con Formaggio): Substitute 1/4 cup grated Grana Padano or Parmigiano-Reggiano for the oregano.
  • (Pane Strofinato con Pomodoro): Cut some ripe tomatoes crosswise in half. While the baked bread is still hot, rub cut surfaces of the bread with the tomato halves, until the bread has absorbed the tomato juices and the tomato pulp has rubbed onto the bread. Season lightly with salt, drizzle some extra-virgin olive oil on top, and serve immediately.

1 tablespoon dried parsley
1 (1 pound) loaf Italian bread, cut into 1/2 inch slices
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small saucepan over medium heat, melt butter and mix with garlic powder and dried parsley.
  • Place Italian bread on a medium baking sheet. Using a basting brush, brush generously with the butter mixture.
  • Bake in the preheated oven approximately 10 minutes, until lightly toasted. Remove from heat. Sprinkle with mozzarella cheese and any remaining butter mixture. Return to oven approximately 5 minutes, or until cheese is melted and bread is lightly browned.
