Lynda's Stuffed Shells image

I love this recipe and serve it with garlic toast and a veggie or a mixed green salad. As soon as your shells are cooked put them in cold water to stop cooking and easier stuffing.

Number Of Ingredients 11

1 box(es) jumbo shells..cooked and rinsed in cold water
1/2 - onion..chopped small
1 clove(s) garlic..minced
2 tablespoon(s) butter
2 cup(s) ricotta cheese
1 package(s) (10oz) frozen spinach..thaw and squeeze dry
2 large eggs..slightly beaten
1/2 teaspoon(s) salt
3/4 cup(s) mozzerella cheese..shredded(need extra for top)
1/4 cup(s) parmesan cheese(need extra for top)
1 jar(s) spaghetti sauce

Steps:

  • Saute' onion and garlic in butter. combine with cheeses,spinach,eggs,& salt.
  • Stuff each shell with mixture. Pour a small amount of spaghetti sauce on the bottom of a 9"x13" baking dish
  • place shells in pan. Cover with remaining spaghetti sauce. Top with more mozzarella and parmesan cheese.
  • Cover with foil and bake 350 for 45 minutes.
