1 cup chopped seeded plum tomatoes
1/4 cup thinly sliced green onions
2 tablespoons chopped sweet yellow pepper
2 tablespoons chopped jalapeno pepper
1-1/2 teaspoons minced fresh cilantro
1/4 teaspoon salt
1/8 teaspoon pepper
Tortilla chips

Steps:

  • In a bowl, combine the tomatoes, green onions, yellow pepper, jalapeno pepper, cilantro, salt and pepper. Cover and refrigerate for at least 30 minutes. Serve with chips.

1/2 tsp salt

4 large ripe steak tomatoes, chopped
1 jalapeno pepper with seeds, stem removed
1 shallot
1/2 green pepper
1 green onion
1/2 cup of fresh cilantro
2 garlic cloves
2 teaspoons cumin
2 tablespoons fresh lemon juice
Salt and pepper, to taste

Steps:

  • Add all the ingredients in a food processor and pulse until everything is combined, diced finely. Be careful to not pulse too much or it will become more like a gazpacho!
  • Taste and adjust the salt/pepper to your taste. It will keep in fridge for about 5 days.

3 medium red or yellow tomatoes
2 small zucchini
2 Japanese eggplants
2 small yellow squashes
1/4 cup onion, minced
1 tablespoon turmeric minced or 1 tablespoon ground, dried turmeric
1 teaspoon ground cumin
1 tablespoon canola oil
3 tablespoons freshly squeezed orange juice
Salt, to taste

Steps:

  • Preheat the barbecue or broiler. Halve tomatoes, zucchinis, eggplants, and squashes lengthwise. Grill or broil vegetables until softened and lightly browned on both sides. Let cool.
  • Chop vegetables into small pieces, then toss them together in a large bowl. Mix in onion, turmeric, cumin, canola oil, orange juice, and salt to taste. Cover and chill in the refrigerator for about 30 minutes. Serve on top of sliced, toasted whole-wheat bread.

½ sweet onion, chopped
½ green bell pepper, coarsely chopped
¼ cup fresh cilantro
5 slices pickled jalapeno peppers, or to taste
6 fresh tomatoes, quartered
2 teaspoons olive oil
2 teaspoons red wine vinegar
½ lime, juiced
⅛ teaspoon salt

Steps:

  • Place onion, bell pepper, cilantro, and jalapeno peppers into a food processor. Pulse until finely chopped. Add tomatoes, and pulse just a few times until the tomatoes are coarsely chopped. Transfer to a bowl with a tight-fitting lid.
  • In a separate bowl, whisk together olive oil, red wine vinegar, lime juice, and salt.
  • Pour dressing over tomatoes, and stir well. Cover, and refrigerate for at least 1 hour.
