These sauteed collard greens are a healthy alternative to traditional greens recipes. Everyone in my family likes their greens a little different--some add Tabasco sauce, for example.

2 tablespoons extra-virgin olive oil
1 red bell pepper, sliced into 1/2-inch strips
1 green onion, sliced into 1/4-inch pieces
1 (15 ounce) can garbanzo beans, drained and rinsed
1 tablespoon minced garlic
1 bunch collard greens, chopped
2 tablespoons red wine vinegar
1 teaspoon sea salt

Steps:

  • Heat olive oil in a nonstick skillet over medium heat. Add bell pepper and green onion; cook until onion is soft and whites are translucent, about 5 minutes. Add garbanzo beans and garlic; cook and stir for 5 minutes. Add collard greens; cook until greens wilt and turn bright green, 2 to 4 minutes.
  • Transfer to a large serving bowl. Splash vinegar over greens and sprinkle with sea salt. Serve immediately.

1 pound orecchiette or other short pasta
1/2 cup olive oil
2 garlic cloves, crushed
12 ounces Swiss chard or mustard greens, stemmed
12 ounces baby spinach leaves
1 (15-ounce) can garbanzo beans, rinsed and drained
2 cups small cherry or grape tomatoes
8 ounces ricotta salata cheese, crumbled
2 teaspoons lemon zest
Kosher salt and freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes. Drain and reserve about 1 cup of the pasta water.
  • In a large skillet over medium-high heat, heat the oil. Add the garlic and cook until fragrant and lightly browned, about 2 minutes. Using a slotted spoon, remove the garlic and discard. Add the Swiss chard and cook until wilted. In batches, add the spinach and cook until wilted. Add the beans and tomatoes and cook for 5 minutes. Turn off the heat. Add the pasta, 1/2 of the cheese, and lemon zest. Toss well and thin out the sauce with a little pasta water, if needed.
  • Transfer to a large serving bowl and season with salt and pepper. Sprinkle with the remaining cheese and serve.

2 slice(s) bacon, center cut
1 cup(s) carrot, chopped
1/2 cup(s) onion, chopped
2 clove(s) garlic, minced
1 teaspoon(s) paprika
1/4 teaspoon(s) kosher salt
1/2 teaspoon(s) ground cumin
1/2 teaspoon(s) crushed red pepper flakes
2 1/2 cup(s) chicken broth, low sodium
1 cup(s) water
2 can(s) garbanzo beans (chickpeas), 15 oz, rinsed and drained
4 cup(s) kale, fresh, chopped
1/2 cup(s) greek yogurt, plain
4 - lemon wedges (optional)

Steps:

  • Cook bacon in a Dutch oven over medium heat until crisp. Remove bacon from pan using a slotted spoon, and crumble.
  • Add 1 cup carrot and chopped onion to drippings in pan, and cook for 4 minutes, stirring occasionally. Add garlic, and cook for 1 minute, stirring constantly. Add paprika, 1/4 teaspoon salt, cumin, and red pepper; cook for 30 seconds, stirring constantly. Stir in chicken broth, 1 cup water, and beans; bring to a boil. Reduce heat, and simmer for 20 minutes, stirring occasionally.
  • Add 4 cups kale to bean mixture. Cover and simmer for 10 minutes or until kale is tender, stirring occasionally. Ladle about 1 1/4 cups bean mixture into each of 4 bowls, and top each serving with 2 tablespoons yogurt. Sprinkle with bacon, and serve with lemon wedges, if desired.
