Eight 1- to 1 1/2-ounce halibut cheeks or medallions, 1/4-inch thick (can substitute grouper)
1 cup all-purpose flour, seasoned with a pinch of salt and white pepper
1 cup all-purpose flour, seasoned with a pinch of salt and white pepper
1 cup egg wash (2 eggs and 1/2 cup milk, mixed well)
1 cup plain Asian breadcrumbs
1/2 cup shredded coconut
1/2 cup walnut pieces (can substitute pecans)
1/2 gallon vegetable oil
1 lemon

Steps:

  • To prepare the fish, first coat the fish with flour, tap off excess and then dip into the egg wash. Mix the breadcrumbs, coconut and walnuts together in a third pan. Finish the fish in the coconut breading mixture. Ensure that the breading is evenly covering the fish, and then repeat with the remaining fish.
  • Heat the oil in a large, heavy-duty pot or deep-fryer to 350 degrees F. Once the fish has been breaded, drop the breaded fish into the oil and cook until golden brown, about 90 seconds. Flip the fish once during the cooking process. Once cooked, remove and allow to rest on paper towels to absorb excess oil.
  • During resting, sprinkle with salt and pepper, and then squeeze the lemon over the cooked fish. Serve.

One 14-ounce can coconut milk
1 cup coconut flakes
1 tablespoon sambal chili sauce
1 tablespoon corn syrup
1 tablespoon minced fresh parsley
1 tablespoon tomato paste
1 teaspoon kosher sea salt
Juice of 6 limes
2 tablespoons butter, softened
2 pounds fresh halibut, divided into four 6 to 8-ounce portions
Salt and freshly ground black pepper
1 teaspoon ground coriander
Jasmine rice, cooked, for serving

Steps:

  • For the sauce: In a bowl, blend the coconut milk, coconut flakes, chili sauce, corn syrup, parsley, tomato paste, salt and lime juice and allow to marinate for 30 minutes. Then pour through a sieve or strainer into a saucepan. Heat over low heat until warmed. Whisk in the butter off the heat before serving.
  • For the fish: Preheat the grill to 350 degrees F or a grill pan over high heat. Then sprinkle the fish with salt, pepper and the coriander. Cook the fish on both sides until medium-well in temperature, 5 to 6 minutes per side. Once cooked, remove from the heat and rest for 2 to 3 minutes.
  • Serve the fish over jasmine rice. Finish with the sauce.

1 tablespoon grapeseed oil
1 shallot, minced
1 clove garlic, lightly crushed with the side of a knife blade and minced
1/2 teaspoon finely minced fresh rosemary leaves
1 teaspoon minced fresh thyme leaves
1 (16-ounce) can crushed tomatoes
Salt and freshly ground black pepper
6 (4-ounce) halibut fillets
1/2 cup heavy cream
1 cup grape tomatoes, quartered
1 tablespoon minced fresh flat-leaf parsley

Steps:

  • Heat grapeseed oil over medium heat in a saucepot. Saute the shallot and garlic until the shallots turn translucent, being careful not to burn the garlic. Stir in rosemary and thyme, add crushed tomatoes, season with salt and pepper, cover and let simmer for 15 minutes, then partially remove lid (leave it covered just enough to keep the spattering down) and reduce heat to medium-low, let thicken and reduce for another 15 minutes.
  • While the sauce is thickening, season the fish with salt and pepper. Arrange fish on a steaming rack and steam over a pan of boiling water until it flakes easily, about 6 to 7 minutes.
  • While the fish is steaming, remove the sauce from the heat and whisk in the cream. Strain the sauce into a bowl.
  • Spoon sauce into the center of serving plate, top with a fish fillet and fresh grape tomatoes. Sprinkle with parsley leaves.
