2 lbs. Bada Bing Bada Boom Dipping & Coating Gourmet Compound Chocolate DARK, MILK or WHITE
Assortment of fruit. Ideas: Strawberries, pineapple, apples, melons, grapes, oranges.
Head of iceberg lettuce
A container for your arrangement. For large arrangements use a vase, basket, bowl, etc. For smaller arrangements try a unique coffee cup.
Drizzle & Design Chocolate (optional)

8″ Bamboo Skewers
Stainless Steel Dipping Fork
Double Boiler or Double Boiler Insert
Heavy Weight Dipping Sheets
IDEAS:
Use a heart shaped cookie cutter on slices of pineapple.
Place multiple pieces of fruit like grapes on a single skewer.
Make an entire bouquet of chocolate covered strawberries dipped in dark, milk & white chocolate!
Add chocolate dipped jumbo marshmallows.

Steps:

  • How To Make A Chocolate Dipped Fruit Bouquet:
  • Tip: Fruit should be as cold as possible for setting-up a hard coating. For chocolate dipped strawberries, rinse strawberries in cold water and pat dry. WARNING: Do not soak the berries in ice water to retain freshness and moisture. We know that keeps the berries fresh, red & cold - but you won't be able to dry the strawberry enough and it will cause the chocolate to seize.
  • Cut up an assortment of fruits to use in your bouquet.
  • Pat dry any pieces you plan to dip in chocolate.
  • Melt chocolate according to instructions that came with your Chocoley chocolate.Ideally, use a Double Boiler or Insert. Do not let the water touch the bottom of the double boiler. Only let the water simmer. Do not allow it to boil or you may burn the chocolate. If you must use a microwave, melt on medium heat for short periods being very careful not to overheat the chocolate.
  • Use a stainless steel dipping fork to dip desired amount of fruit in melted chocolate. Tap fork in edge of pan or bowl to let excess chocolate drip off.
  • Place dipped fruit on a Heavy Weight Dipping Sheet or waxed paper lined tray.
  • Let the chocolate set-up (harden) by placing it on a level shelf in the refrigerator until it is obvious that chocolate is set-up. This can take between 10-15 minutes.
  • Place a head of lettuce inside the container you will make your arrangement in. If the lettuce is too big, cut until it is the right size.
  • Skewer each piece of fruit and/or chocolate dipped fruit on a bamboo skewer and then push the other end of the skewer into the head of lettuce.
  • Continue placing skewers of fruit into the lettuce head at different angles until you have a full arrangement.

I created this decorative fruit centerpiece for our holiday appetizer buffet.It was very easy, and I made it the night before. With more time, you can make it even nicer ! I served it with White Chocolate Fruit Dip # 137738

1 cantaloupe, peeled
1 melon, peeled
15 strawberries, hulled
10 pineapple chunks, fresh and drained
40 purple seedless grapes
40 green seedless grapes
1 cup dipping chocolate
bamboo skewer

Steps:

  • You will also need a plant pot, round florists styrofoam ball to fit into the pot and garland. The recipe format would not allow me to put these in the ingredients needed.
  • Cut the styrofoam so it fits into the plant pot, the top of the styro should be just even with the top of the plant pot.
  • Wrap the garland around the pot, then cover the styro foam top with it.
  • On med. low heat, melt the dipping chocolate in the microwave, stirring every min, being very careful that water or moisture does not get into the chocolate.
  • When smooth, dip the top 1/3 of the strawberries into the melted chocolate, then place on skewers.
  • Poke all the strawberry skewers into the styro, as this will store them upright until the chocolate is set.
  • With a serrated knife, or a ridged hors d'ouvres tool, slice the melons into 1" wide by 3" long pieces.
  • Insert the melon pieces onto the skewers, lengthwise,set aside.
  • Place the pineapple chunks onto the skewers, set aside.
  • Place the grapes onto the skewers long-wise; purple, then green, then purple, ending with another green.
  • Remove the choc. dipped strawberry skewers from the plant pot, set aside.
  • Start poking the fruited skewers into the styro filled pot.
  • Fill the center first, then work towards the outside.
  • I served this with White Chocolate Fruit Dip #137738.
  • Note: I made this the night before our party,and of course it wouldn't fit in the fridge.
  • I wrapped it loosely with saran wrap, placed it in a box not much larger than the plant pot, then set it in my car in a cool garage, it was still nice and fresh teh next day !
  • BE CAREFUL when you move it, as it is top heavy !

When Snow White and her forest friends tidied up the Seven Dwarfs' cottage, little did they know that one of the residents would be allergic to the golden rod centerpiece they placed on the dinner table. Here's an arrangement that no dwarf would snee
Vegetable peeler
Kiwi
Seedless watermelon
Fresh pineapple
Flower-shaped cookie cutter
Melon baller
Grapes and/or raspberries
Thin wooden kitchen skewers

Steps:

  • Use the vegetable peeler to remove the skin from the kiwi fruit, but leave the rind on the watermelon and the pineapple.
  • Slice off one rounded end of the watermelon so that you have a chunk about 3 inches thick and set it, cut side up, in a bowl.
  • Slice the rest of the melon, the fresh pineapple, and the kiwi into rings about 3/8- to 1/2-inch thick.
  • Use the cookie cutter to cut out flowers from the center of each melon and pineapple slice. Then, use the melon baller to carve out a small hole in the center of each flower.
  • If the flowers are juicy, blot them with paper towels. Then, set them on a flat surface and insert a grape or a raspberry into each center hole. Or, you can use a piece of kiwi fruit scooped from one of the slices with the melon baller.
  • With each flower, thread a wooden kitchen skewer up through one of the lower petals, then through the center fruit, and finally through the opposite petal.
  • "Plant" the flowers in the bowl by pushing the bottom of each skewer into the chunk of watermelon.
  • Finally, thread the kiwi slices onto skewers and add them to the bouquet.
