- Line a strainer or colander with 4 layers of cheesecloth or 1 coffee filter; place over a bowl. Place yogurt in prepared strainer; cover yogurt with sides of cheesecloth. Refrigerate 2-4 hours., Remove yogurt from cheesecloth to a bowl; discard strained liquid. Add sugar and vanilla to yogurt, stirring until sugar is dissolved., In a small microwave-safe bowl, combine cold water and lemon juice; sprinkle with gelatin and let stand 1 minute. Microwave on high for 30 seconds. Stir and let mixture stand 1 minute or until gelatin is completely dissolved; cool slightly. Stir gelatin mixture into yogurt. Cover and refrigerate until cold, about 40 minutes. , Pour yogurt mixture into cylinder of ice cream freezer; freeze according to the manufacturer's directions., Transfer frozen yogurt to a freezer container. Freeze 2-4 hours or until firm enough to scoop.

- Stir together the yogurt and lemon juice until smooth in a freezer-safe metal bowl. Combine the honey and mint in a small bowl. Pour the honey on top of the yogurt, then give the yogurt a few quick stirs so that the honey forms "ribbons" in the yogurt but is not blended in completely. Cover bowl and freeze for 1 to 2 hours.

STRAWBERRY CHEESECAKE FROZEN GREEK YOGURT

- In a large bowl, combine the cream cheese, vanilla, and lemon juice until well mixed. Then mix in the yogurt, sweetened condensed milk and jam. Combine until everything is completely incorporated. Put into your ice cream maker. Once it has been sufficiently frozen according to your specific machine, transfer to a large air-tight storage container. The yogurt should be soft. At this point gently fold in the cup of strawberries and pie crust bits. Place in freezer *This recipe was too large for my 2 quart ice cream maker to completely freeze, so after placing the finished product in the freezer I took it out every half an hour and folded it in on itself until done.
CHOCOLATE FROZEN GREEK YOGURT
This frozen treat has a delicious chocolate flavor with a hint of tangy zip from the Greek yogurt! It's a nice change from ice cream and your family will love it!

- 1. In a mixing bowl, combine all the ingredients except shaved chocolate; whisk until well-blended. Pour chocolate mixture into the bowl of an ice cream maker and process until nice consistency according to the manufacturer's instructions, about 15 minutes. Five minutes before the end of churning, add shaved chocolate.
- 2. Spoon chocolate yogurt mixture into containers and transfer to the freezer for 3 to 4 hours before serving. Garnish with raspberries, mint leaf and a small square of dark chocolate. Makes 1 pint

- Mix yogurt, mashed strawberries, 2 tablespoons peanut butter, maple syrup, and vanilla extract together in a bowl.
- Line a baking sheet with parchment paper and spread yogurt mixture in a thin layer onto the parchment paper. Top mixture with sliced strawberries.
- Stir 2 teaspoons peanut butter and coconut oil together in a microwave-safe bowl; heat in microwave until melted, about 30 seconds. Stir well and drizzle over yogurt mixture.

- Warm sugar, corn syrup, water, and salt in a small saucepan over low heat, stirring, until sugar has dissolved. Transfer to a large bowl and cool to room temperature, stirring occasionally.
- Whisk in yogurt, buttermilk, and lemon juice and chill until very cold, 3 to 6 hours.
- Freeze yogurt in ice cream maker. Transfer to an airtight container and put in freezer to firm up.
