These old-fashioned, cake-like cookies are sweet and buttery. They pair equally well with a glass of cold milk or a cup of hot coffee.

1/2 cup butter, softened
1 cup packed brown sugar
1 egg
1/2 cup sour cream
1-3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
BROWN SUGAR FROSTING:
1/4 cup butter
1/2 cup packed brown sugar
2 tablespoons milk
1 cup confectioners' sugar

Steps:

  • In a small bowl, cream butter and brown sugar. Beat in egg and sour cream; mix well. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. , Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 9-11 minutes or until golden brown. Remove to wire racks to cool., For frosting, in a small saucepan, melt butter over low heat; add brown sugar. Cook and stir for 2 minutes. Gradually add the milk. Bring to a boil, stirring constantly. Remove from the heat. Stir in confectioners' sugar. Cool for 20-30 minutes. Frost cooled cookies.

PECAN PRALINE COOKIES:
1 cup butter, softened
1/2 cup brown sugar, firmly packed
1/2 cup white sugar
1 egg
1 teaspoon vanilla
2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup pecans, finely chopped
Pecan halves, for garnish
BROWN SUGAR FROSTING:
1 cup brown sugar, firmly packed
1/2 cup half & half
1 tablespoon butter
1 1/2 cups sifted powdered sugar (plus a little more if needed)

Steps:

  • COOKIES: In a large mixing bowl, beat butter at medium speed with an electric mixer. Gradually add sugars, mixing well. Add egg and vanilla; beat well. In a medium bowl, whisk together the flour, soda and salt. Gradually add the dry mixture to the creamed mixture, stirring after each addition. Stir in the chopped pecans. Chill dough for 30 minutes. When chilled, remove from the refrigerator. Shape dough into 1-inch balls. Place the balls of dough on un-greased cookie sheets. Bake at 350°F for 10 - 12 minutes. Cool on wire racks. When cool, spread Brown Sugar Frosting over the tops of the cookies. Top each with a pecan half before the icing sets. BROWN SUGAR FROSTING: Combine brown sugar and half & half in a saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Boil 4 minutes. Remove from heat. Stir in butter. Add 1½ cups powdered sugar. Beat at medium speed with an electric mixer until smooth. Add a little more powdered sugar, if needed, to achieve a desired spreading consistency.

1 1/2 cups flour
1/4 cup cornstarch
1/4 teaspoon salt
Pinch of ground clove
2 sticks (8 ounces) unsalted butter, at room temperature
3/4 cup packed light brown sugar
1/2 cup finely ground pecans
Confectioners' sugar (optional)

Steps:

  • Sift together the flour, cornstarch, salt and clove.
  • Using a mixer fitted with a paddle, beat the butter and sugar on medium speed until smooth, about 3 minutes. Stop the mixer to scrape down the sides. Add the dry ingredients and mix on low speed just until incorporated. Add the pecans and mix just until combined.
  • Place the dough on a sheet of plastic wrap. Cover with another sheet of plastic and shape into a square. Refrigerate for 30 minutes. Roll the dough between the plastic to 1/4-inch thick, and into a 9 1/2 x 11-inch rectangle. Refrigerate for at least 1 1/2 hours, or up to 2 days.
  • Position two oven racks so they divide the oven into thirds. Preheat the oven to 350 degrees. Line two baking sheets with parchment paper. Discard the plastic sheets from the dough. Trim the edges to form a 9 x 10.5/2-inch rectangle, then cut the dough into 1 1/2-inch squares. Place the squares on the baking sheets, then, with a fork, pierce each cookie twice all the way through. Bake for 18 to 20 minutes, rotating the sheets from top to bottom and front to back after 9 minutes. If desired, dust the cookies with confectioners' sugar while still hot. Transfer to a rack to cool.

1 egg
1 pouch Betty Crocker™ sugar cookie mix
6 tablespoons (1/4 cup plus 2 tablespoons) packed light brown sugar
2/3 cup chopped pecans, toasted*
3 tablespoons butter or margarine, melted
1 cup powdered sugar
3/4 teaspoon regular or clear vanilla
1 to 3 tablespoons milk

Steps:

  • Heat oven to 350°F. In large bowl, beat 1/4 cup butter and egg with electric mixer on medium speed until blended. Add cookie mix; beat on low speed until dough is evenly moist and crumbly.
  • On cookie sheet covered with 17-inch piece waxed paper, place dough; press to flatten slightly. Top dough with second piece waxed paper. Roll out dough into 12x11-inch rectangle. Refrigerate 10 minutes; remove top sheet waxed paper. Spread dough with 3 tablespoons butter. Sprinkle with brown sugar; top with pecans.
  • Starting with long side, carefully roll up tightly; refrigerate 30 minutes. Cut log into 1/2-inch slices. Onto ungreased cookie sheets, place slices 2 inches apart, reshaping if necessary.
  • Bake 8 to 10 minutes or until light brown on bottom. Cool 2 minutes; remove from cookie sheets to cooling racks. Cool completely. In medium bowl, stir together 3 tablespoons butter, the powdered sugar and vanilla. Stir in milk, 1 tablespoon at a time, until smooth and consistency of thick syrup. Drizzle over cookies; let stand until set. To store, place waxed paper between cookie layers. Store in airtight container.

1 cup brown sugar
½ cup butter
1 egg
1 teaspoon vanilla extract
2 cups flour
2 teaspoons baking powder
1 pinch salt
1 cup chopped pecans

Steps:

  • Beat the brown sugar and butter with an electric mixer in a large bowl until smooth. Beat in the egg and vanilla extract until completely incorporated. Mix the flour, baking powder, and salt together in a separate bowl, then stir the flour mixture into the butter mixture until just incorporated. Fold in the pecans mixing just enough to evenly combine.
  • Roll the dough into a log, and wrap in wax paper. Chill the dough in the refrigerator for at least one hour.
