4 cups canola oil
2 eggs
1/4 cup milk
3/4 cup panko bread crumbs
3/4 cup Italian bread crumbs
8 ounces mozzarella string cheese, individually wrapped
16 thin slices salami, 2 1/2-inches in diameter
8 egg roll/spring roll wrappers

Steps:

  • In a medium saucepan, add oil and heat to 325 degrees F.
  • In a medium shallow bowl, whisk eggs and milk thoroughly. In another medium bowl mix panko and Italian bread crumbs.
  • Dredge 1 entire side of egg roll wrapper into egg wash. Place 2 slices of salami in the center of wrapper, towards the edge closest to you. Place 1 stick of cheese on top of salami. Roll wrapper edge closest to you over the filling. Tuck ends and continue to roll until it forms an egg roll shape.
  • Dredge rolled wrapper in egg wash again, and then thoroughly coat in bread crumb mixture. (Wrappers can be frozen for future use at this point.)
  • Add 1 to 2 rolled wrappers to oil at a time, cooking 2 to 3 minutes, until golden brown. Be careful not to over cook, or cook on too high of a temperature as wraps may explode. Remove fried cheese to a paper-towel lined plate and serve immediately

12 slices firm white sandwich bread
1/4 cup drained bottled capers, chopped
6 oz fresh mozzarella, cut into 1/4-inch-thick slices, at room temperature
1/4 cup all-purpose flour
2 large eggs
2 tablespoons milk
1 tablespoon unsalted butter
2 tablespoons olive oil

Steps:

  • Divide capers among 12 bread slices and spread evenly. Divide mozzarella among 6 slices and sprinkle with pepper to taste. Make into 6 sandwiches, then cut off and discard crusts to form 3-inch squares.
  • Coat sandwiches with flour, knocking off excess. Beat together eggs, milk, and a pinch each of salt and pepper in another small shallow bowl.
  • Heat 1/2 tablespoon butter with 1 tablespoon oil in a 10-inch heavy skillet over moderate heat until foam subsides. Meanwhile, coat 3 sandwiches, 1 at a time, with egg mixture. Fry, turning over once, until golden brown, about 5 minutes, then drain on paper towels. Coat and fry remaining 3 sandwiches in same manner.
  • Cut sandwiches into quarters and serve immediately.

FRIED CHEESE SANDWICH

2 thick slices of high quality cheddar cheese. (Tillamook is his preferred)
1 slice high quality bread (his favorite is Italian)
1 tablespoon butter

Steps:

  • Heat a frying pan on Medium heat. Melt butter in pan. Turn pan to low heat (setting 2 works best for us, however you decided on what is best for your stove) Place slice of bread into pan and swirl it around until it is thoroughly coated in butter. Place two slices of cheddar cheese on top as shown in photo. Cook until bread is a nice golden color. Flip sandwich over so that cheese is now touching the pan with the bread on top. Allow cheese to melt. When the edges of the cheese turn a dark golden color it is ready. This may take 3 or 4 minutes. Remove from pan and place on plate bread side down. Cheese should be crispy on the outside and gooey on the inside.

1/2 cup butter
6 slices rye bread
1 (8 ounce) sharp cheddar cheese

Steps:

  • Cut about 6-8 thin slices of cheese from the block.
  • Turn your heat on high under the pan you are using.
  • Take your stick of butter and rub it across the pan in the area that you will put your bread inches.
  • Take your stick of butter and rub it across the bottom of a slice of the bread and place that side facing down in the pan.
  • Put your slices of cheese onto the bread so that they cover the slice of bread evenly. Cover the pan to keep the heat in and to help make the cheese melt.
  • When the cheese is melted place another slice of bread on top and rub the butter over the top of that bread and flip the sandwich. (Make sure sandwich is golden brown).
  • When the other side of the sandwich is golden brown take the sandwich off and place it on a paper towel. Eat right away or wait until it is cooled off. Cut into fours for mini sandwiches as appetizers and dip into warm tomato soup.
  • Repeat the process with the other 4 slices of bread.

2 slices cheese
1 tablespoon oil
1 tomatoes
1 teaspoon pickle
1 slice bacon

Steps:

  • Lightly butter the slices of bread. Make them into sandwiches with 1-2 slices of cheese in each sandwich, adding any of the optional extras you like.
  • Heat the oil and knob of butter in a frying pan, over a moderate heat. Put the sandwiches into the hot fat, and fry for a few minutes on each side, until the bread is golden and crispy, and the cheese is beginning to melt.
  • Remove from the pan, drain on a piece of kitchen paper if they seem a bit greasy. Eat at once while hot.
