TRIPLE BERRY MUFFINS

Triple Berry Muffins are moist, sweet, and bursting with tart berry flavor. Use fresh or frozen berries for these classically delicious breakfast treats.

1/2 cup unsalted butter, melted and slightly cooled
1 cup granulated sugar
2 large eggs
1 1/2 cups whole milk
2 tsp vanilla extract
zest of 1 medium lemon
2 Tbsp lemon juice
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 cups all purpose flour
2 cups mixed berries (fresh or frozen), heaped

Steps:

  • Preheat oven to 375F and line a 12-cup muffin tin with muffin tin liners.
  • In a large mixing bowl, whisk together the melted butter, sugar, eggs, milk, vanilla extract, lemon zest and lemon juice.
  • In a separate bowl, whisk together the baking powder, baking soda, salt, and flour.
  • Add the flour mixture to the wet ingredients and mix to combine, until there are no pockets of dry flour left.
  • Gently fold in the berries, just until evenly distributed.
  • Divide the batter between the prepared muffin cups. This recipe makes enough for 12 large muffins, so you should be able to fill your muffin cups all the way to the top.
  • Bake for about 25-30 minutes, until risen and just starting to turn golden on top.

To Die For Blueberry Muffins image

These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!

1 ½ cups all-purpose flour
¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
⅓ cup vegetable oil
1 egg
⅓ cup milk, or more as needed
1 cup fresh blueberries
½ cup white sugar
⅓ cup all-purpose flour
¼ cup butter, cubed
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
  • Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and add enough milk to reach the 1-cup mark. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  • To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  • Bake for 20 to 25 minutes in the preheated oven, or until done.

My family loves these muffins, regardless of whether they are made with fresh fruit (apples,blueberries, etc)or frozen (strawberries, raspberries, ect.) The only thing that needs to be changed is the type of fruit.

2 c all-purpose flour
2 tsp baking powder
1/4 tsp salt (optional)
1/2 c butter or margarine (softened)
1 c sugar
1/2 c milk
1 tsp vanilla
2 eggs
TOPPING
1 Tbsp sugar
1/4 tsp cinnamon

Steps:

  • 1. In a large bowl, combine the flour, baking powder and salt. Set aside. In a mixing bowl, cream the butter & sugar. Add the eggs, milk and vanilla. Mix well. Stir into the dry ingredients just until moistened. Fold in the fruit. Fill greased (or paper lined) muffin tins 2/3 full. Sprinkle topping over muffins. Bake at 375° for 20-25 minutes, or until the muffins test done. Cool on a baking rack for 10 minutes before removing from the pan (this is important, because if you don't, they'll either collapse or fall apart). Makes 1 dozen muffins.
