BAKED FRESH HAM WITH APPLE-CRANBERRY SAUCE



Baked Fresh Ham with Apple-Cranberry Sauce image

Number Of Ingredients 13

5 to 6-pound fresh ham
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
6 apples, split in 1/2
2 cups cranberries, (if not fresh, frozen is fine)
1 cinnamon stick
1 bay leaf
1 tablespoon pickling spice
1 tablespoon black mustard seeds
2 tablespoons sugar
1 (1-inch) piece ginger
1 1/2 cups apple juice
1/2 cup apple cider vinegar

Steps:

  • Preheat oven to 300 degrees F.
  • Score fat and put ham, fat side up, in a roasting pan. Rub with extra-virgin olive oil and season with plenty of salt and pepper all over. Cover loosely with foil and roast for 2 hours. Remove foil and roast for final hour uncovered.
  • In a large saucepan add all the sauce ingredients and simmer for 25 minutes until apples are almost falling apart and the sauce is fragrant. Remove cinnamon stick, bay leaf, and ginger then puree in a blender until completely smooth. Serve with baked fresh ham.

I love "homemade" recipes. I found this recipe on cdkitchen website and thought it sounded delicious. Today I made it and it's great !! I made some for my next door neighbors. It is made from Fresh Cranberries and orange juice, the flavor is great and I expect it to be great with dressing tomorrow. My sister loves it too....

1 pkg 12 ounce size fresh cranberries
1 large red delicious apple, peeled and grated into small pieces.
1 1/4 c sugar
3/4 c orange juice
`1/4 c karo syrup, light or dark

Steps:

  • 1. Wash cranberries with cool water and drain well. Discard any soft or discolored berries.
  • 2. Combine cranberries, diced apple, sugar, orange juice, and corn syrup in a 2-1/2 to 3 - qt sauce pan. Bring to a boil over medium high heat, stirring frequently. Reduce heat and simmer, stirring occasionally, 5 to 8 minutes or until slightly thickened. I love to watch the Cranberries pop !! Cool and pour into pint jars to cool. Keep refrigerated.
