Steps:
- Preheat an oven to 100 degrees F ( 40 degrees C).
- Heat mashed strawberries and 1/2 cup white sugar in a saucepan over medium heat.
- Mix cornstarch and water together in a bowl, then stir into the strawberries.
- Cook and stir until thickened, about 5 minutes. Reduce heat to low and simmer while preparing remaining ingredients, stirring occasionally.
- Whisk together the milk and eggs in a bowl; set aside.
- Mash cream cheese, vanilla extract, and 3/4 cup white sugar in a bowl until smooth.
- Spread the cream cheese mixture over a triangle-shaped piece of bread, and top with another piece. Repeat with remaining bread and cream cheese mixture to make 8 triangle-shaped sandwiches.

- Dip the sandwiches into the egg mixture, 2 or 3 at a time, and place in the skillet.
- Cook until golden brown on both sides, about 3 minutes per side.

- Make an incision in the center of the Pullman loaf, as if you were slicing the loaf in half but taking care not to cut through the ends or the back side of the loaf. Stick your hand inside the incision and press lightly on the bread to make a pocket for stuffing.

- Make the filling: In a large bowl, use a spatula to combine the cream cheese, powdered sugar, and the vanilla extract. Mix together until fluffy and smooth.
- Lay out a piece of plastic wrap and arrange 4 rows of 2 whole slices of brioche bread. Cut 2 pieces of brioche bread in half and add to the end of each row.
- Beat 1 egg in a small bowl. Brush egg wash on the left side of each piece of bread, except for the farthest left pieces in each row. Overlap the right edges over the egg wash and press to adhere. - Yogurt Cheese.
- Wrap Yogurt in cheesecloth and inverting over an open container. Place in refrigerator overnight and excess water in the yogurt will drip to the bottom of the container. The remaining yogurt cheese will be richer and creamier. (You could probably just use yogurt as well).
- Cheesecake.
- Preheat Oven to 325 degrees. Lightly coat a 10in. spring form pan with canola oil.
- In a medium bowl, combine graham cracker crumbs and applesauce. Mix well.
- Press into the bottom of spring form pan and set aside.
- Bring 1 cup water to a boil in a small saucpan. Add vanilla bean and simmer until softened, about 1 minute.
- Remove from water and when cool enough to handle, slit bean lengthwise. Scrape out vanilla bean paste with a knife and reserve.
- In a blender container, puree cottage cheese until smooth.
- In a mixing bowl, combine pureed cottage cheese, cream cheese, and yogurt cheese and blend with electric mixer on high until smooth, about 2 minute.
- Add eggs, one at a time and blend well.
- Add flour, sugar, vanilla bean paste and vanilla extract.
- Blend well and pour into crust.
- Bake for 40 minute
- Turn off oven and allow cheesecake to cool in oven an additional 30 minute.
- Remove from oven and let rest for 20 minute before refrigerating.
- In a medium saucepan, combine cherries and sugar and bring to a boil. Reduce heat and simmer until sugar is dissolved and cherries begin to break down, about 10 minute You may need to add a little water to keep from scorching.
- When cheesecake is cold, remove spring form sides and slice into 16 portions. Serve 1 tablespoons of cherries over cheesecake.

- Use cooking spray to grease the bottom and sides of a 9x13 pan; set aside.
- Cut the bread into 1 1/2 inch cubes until you have about 12 cups. Add about 2/3 of the bread cubes into the bottom of the dish.
- In a small bowl, combine the cream cheese and 1/3 c sugar and stir until smooth.
- Spoon the cream cheese mixture over the first layer of bread cubes. No need to spread it out - keeping it in dollops will be perfect!
- Sprinkle the berries on next followed by the remainder of the bread cubes. Set aside.
- In a large bowl, whisk the eggs. Then whisk in the milk, 1/2 c sugar and vanilla.
- Pour the egg mixture into the pan. Press the bread cubes down to help each cube soak up some of the liquid. Cover the casserole with a lid or plastic wrap and refrigerate overnight.
- In the morning (or when you're ready to bake it), preheat the oven to 350°F.
- Bake the casserole (uncovered) for 45-50 minutes or until the internal temperature reaches 160 and the top is golden brown.
