MEDITERRANEAN BAKED FLOUNDER

4 large flounder fillets
5 plum tomatoes
1/2 Spanish onion, Chopped
2 garlic cloves
20 kalamata olives, pitted and chopped
2 tablespoons capers
1 lemon
1/4 cup white wine
2 tablespoons extra virgin olive oil
1/2 teaspoon italian seasoning
1 bunch fresh basil
3 tablespoons fresh grated parmesan cheese
1 dash kosher salt
1 dash of fresh ground black pepper

Steps:

  • Preheat oven to 425 degrees F.
  • Blanch tomatoes. To do this bring a pot or deep sauce pan of water to a boil. Places tomatoes in the boiling water for about 30 seconds. Remove and immediately put them in a bowl of ice water. Let them chill, you will start to see the skins pull away from the meat. After a minute or two take tomatoes out of water and gently remove skin by rolling your thumbs over the tomatoes. Skins should come off easily.
  • Chop Tomatoes into desired size and set aside.
  • Put 1 tablespoon of oil in a large saucepan. Place minced garlic and copped onion in the pan. Cook over med. heat until onions become translucent (about 5 min). Add in tomatoes, wine, olives, capers, and 5 or 6 fresh basil leaves (copped). Let stew covered for 5 minutes. Then uncover and add Parmesan cheese, salt, pepper and Italian seasoning. Reduce heat and cook uncovered let cook until mixture becomes a thick sauce (about 15 minutes).
  • In a glass baking dish place 1 tablespoon of olive oil. Gently lay cleaned fish into dish. Cut lemon in half and squeeze fresh lemon on top of fish. Put a dash of salt and pepper onto each fillet. Put in over and bake for 12 minutes or until fish is easily flaked with a fork.
  • Remove fish from oven. Plate and place tomato sauce over fish. Garish with a fresh basil leave, and a slice of lemon. Add a bit of fresh grated parmesan on top if desired.

2 lbs flounder fillets
1 garlic clove, minced
2 medium tomatoes, thinly sliced
2 tablespoons parsley
1/2 small cucumber, thinly sliced
1 tablespoon white wine
1/4 cup onion, chopped
2 tablespoons lemon juice
1/4 cup green pepper, chopped
1/2 teaspoon marjoram
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • Place fish fillets in a non-stick or greased baking dish.
  • Arrange tomato and cucumber slices on top.
  • In a saucepan, cook onion, green pepper, and minced garlic in butter until onion is tender, but not brown.
  • Remove from heat.
  • Stir in parsley, wine, lemon juice, and marjoram.
  • Spoon over fish.
  • Bake in 375°F oven for about 25 minutes, or until fish flakes easily when tested with a fork.
  • Serve with wild rice.

1 lb flounder fillets
cooking spray
1/2 tablespoon regular butter
1/2 tablespoon olive oil

Steps:

  • Place flour in a shallow bowl. Rub salt and pepper into both sides of fish; dredge in flour to coat both sides.

24 ounces fillets flounder
1/4 teaspoon kosher salt
fresh ground pepper
2 bell peppers, red and yellow, 6 ounces each
olive oil flavored cooking spray
8 ounces sweet onions, chopped
3 large garlic cloves
2 tomatoes, 12 ounces total, seeded and chopped
1 tablespoon minced fresh tarragon or 1 teaspoon crushed dried tarragon
1 tablespoon balsamic vinegar

Steps:

  • Preheat oven to 350 degrees.
  • Place the fillets in an oven proof baking dish.
  • Sprinkle with salt and pepper.
  • Set aside.
  • Char the bell peppers using either a gas range burner or the broiler.
  • Quickly place in a paper bag to steam.
  • Remove when cool enough to handle.
  • Remove the skin and seeds and chop.
  • Coat a nonstick skillet with cooking spray.
  • Sauté the onion and garlic until onions are wilted.
  • Add the peppers and tomatoes and cook stirring over high heat for 3 minutes.
  • Stir in the tarragon and vinegar.
  • Spoon the vegetables over the fish fillets and bake for 15 to 18 minutes until the fish is just opaque.
  • Serve immediately.

1/4 cup flour
1/4 teaspoon salt
1/8 teaspoon pepper
2 small or 1 large flounder fillet
4 tablespoons clarified butter, or oil
2 tablespoons unsalted regular butter
1 teaspoon chopped garlic (or as desired)
1/4 cup dry white wine
1/2 cup fish stock (optional)
1/2 teaspoon oregano
1/8 teaspoon ground cumin
1/4 teaspoon red pepper flakes
2 tablespoons chopped fresh coriander (cilantro, Chinese parsley)
1 cup chopped canned plum tomatoes, with juice
Salt and pepper as desired
2 to 4 tablespoons additional cold, unsalted regular butter, cut up
1 1/2 cups chopped cooked pasta, or cooked orzo

Steps:

  • Preheat oven to low. Mix the flour, salt and pepper together and dip the fillets in the mixture to coat both sides. Shake off excess. Heat a large skillet very hot, add the clarified butter and when it is very hot fry the fillets quickly, turning them once, until they are golden brown on both sides (about 2 minutes or less, altogether). Remove fillets to dinner plates and keep warm in the oven.
  • Pour off any remaining clarified butter or oil from the skillet, add 2 tablespoons unsalted regular butter and (still over high heat) add the garlic and saute 10-15 seconds. Add the wine and fish stock, oregano, cumin and red pepper and boil hard until the liquid is reduced to almost nothing. Add the coriander and tomatoes and boil until slightly reduced. Season to taste with salt and pepper, remove the skillet from the heat and whisk in the additional butter bit by bit, incorporating each piece almost completely before adding the next. Warm the sauce again if necessary, but do not let it boil.
  • Spoon a small amount of the sauce over the fillets in the oven, return the skillet to the heat, add the chopped pasta and toss with the rest of the sauce until heated through. Spoon the pasta onto the dinner plates and serve with a tossed salad.
