2 tazas de C&H® o Domino® Granulated Sugar (azúcar granulada), cantidad dividida
1 lata (12 oz) de leche evaporada
1 paquete (8 oz) de queso crema PHILADELPHIA Cream Cheese, cortado en cubitos y ablandado
5 huevo s
1 cucharadita de vainilla

Steps:

  • Calienta el horno a 350°F.
  • Calienta 1 taza del azúcar en una olla pequeña y pesada a fuego medio y cocínala, revolviéndola constantemente con una cuchara de madera, de 6 a 8 min. o hasta que se derrita y tenga un color dorado oscuro. Vierte el caramelo inmediatamente en 1 molde redondo de 9 pulgs.; inclina y gira el molde para cubrir el fondo con caramelo de forma pareja.
  • Licúa la leche y el queso en la licuadora hasta obtener una consistencia homogénea. Agrega los huevos, la vainilla y el azúcar restante; licúa hasta obtener una consistencia homogénea. (No lo mezcles demasiado). Vierte el batido sobre el caramelo en el molde; tápalo con papel aluminio. Colócalo en una fuente para hornear grande; agrega suficiente agua caliente a la fuente, de modo que el molde esté sumergido hasta la mitad.
  • Hornea el flan de 50 min. a 1 hora o hasta que al insertar un cuchillo cerca del centro, éste salga limpio. Déjalo enfriar un poco. Saca cuidadosamente el molde del agua. Déjalo que se enfríe completamente sobre una rejilla de metal. Ponlo en la nevera varias horas o hasta que se enfríe. Vuelca el flan sobre un plato justo antes de servir.

Softened butter, to coat pan
1/4 cup cajeta or caramel sauce
10 tablespoons butter, room temperature
1 cup sugar
1 egg, room temperature
1 3/4 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/3 cup cocoa powder
1 1/4 cups buttermilk
One 12-ounce can evaporated milk
One 14-ounce can sweetened condensed milk
4 ounces cream cheese, room temperature
3 eggs
1 tablespoon vanilla extract
1/4 cup cajeta or caramel sauce
1/4 cup chopped pecans

Steps:

  • Put an oven rack in the middle of the oven and preheat to 350 degrees F.
  • Coat a Bundt pan with a little butter, then coat the bottom with 1/4 cup cajeta and put it in a large roasting pan. (The roasting pan will serve as a water bath during baking.)
  • For the cake: Add the butter and sugar to a bowl and using an electric hand mixer or stand mixer, beat until light and fluffy, then beat in the egg. Sift together the flour, baking powder, baking soda and cocoa in a medium bowl. Beat 1/3 of the flour mixture, and 1/2 of the buttermilk into the egg mixture. Repeat, ending with the flour mixture. Blend until well incorporated.
  • For the flan: In a blender, combine the evaporated milk, condensed milk, cream cheese, eggs and vanilla. Blend on high for 30 seconds.
  • Scoop the cake batter into the prepared Bundt pan and spreading evenly. Slowly pour the flan mixture over the cake batter. Cover with foil and add about 1-inch of hot water to the roasting pan.
  • Carefully slide the pan into the oven, and bake 1 hour, until the surface of the cake is firm to the touch, or an inserted toothpick comes out clean. When cake is done, remove from the water bath and cool completely to room temperature, about 1 hour.
  • Invert a large, rimmed serving platter over the Bundt pan, grasp tightly together, jiggle a little and flip over. Remove the pan and scrape any remaining cajeta from the pan onto the cake, garnish with chopped pecans and serve!

1 cup white sugar
8 large eggs
12 ounces cream cheese at room temperature
1 (10 ounce) can sweetened condensed milk
1 (15 ounce) can cream of coconut (such as Coco Lopez®)
1 (14 ounce) can coconut milk
1 (12 ounce) can evaporated milk
1 tablespoon coconut-flavored rum (such as Bacardi® Coconut™)
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a heavy skillet over medium-low heat, cook and stir sugar with a wooden spoon until melted and golden, about 10 minutes. Caramel is very hot. Very carefully pour the caramel into a 9-inch round, 3-inch deep baking dish. Swirl dish to cover bottom and sides. The caramel will harden as it cools.
  • Combine the eggs, cream cheese, and sweetened condensed milk in a blender. Cover, and blend on High until well combined; transfer to a large bowl. Pour the cream of coconut, coconut milk, evaporated milk, coconut-flavored rum, and vanilla extract into the blender; cover and blend on High until well combined. Pour into the bowl with the cream cheese mixture. Whisk until incorporated. Pour the flan mixture into the caramel-coated baking dish.
  • Line a roasting pan with a damp kitchen towel. Place the filled baking dish on the towel, and place roasting pan in the preheated oven. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish. Bake until the flan is set and a knife inserted in the center comes out clean, about 1 hour. Transfer to a wire rack; cool. Refrigerate flan until ready to serve.
  • To serve, run a knife around the edges of the pan and flip the flan out onto a serving platter. Spoon any caramel remaining in the baking dish over the flan.

1-1/2 paquete (4 oz cada uno) de chocolate semidulce BAKER'S Semi-Sweet Chocolate (6 oz), cantidad dividida

1 paquete (8 oz) de queso crema PHILADELPHIA Cream Cheese, en cubitos, ablandado

Steps:

  • Calienta el horno a 350°F.
  • Derrite 4 oz del chocolate. Entretanto, pon 1 taza de azúcar en una cacerola y, revolviendo constantemente, cocínala a fuego medio hasta obtener un color dorado oscuro. Viértela en un molde redondo de 9 pulgs.
  • Licúa la leche y el queso crema hasta obtener una consistencia homogénea. Agrega los huevos, el azúcar restante y el chocolate derretido; mézclalos bien. Vierte esta preparación sobre el caramelo del molde. Coloca este molde dentro de un molde más grande. Añade suficiente agua al molde más grande para que el molde de 9 pulgs. quede sumergido hasta la mitad.
  • Hornéalo 1 hora o hasta que al insertar un cuchillo en el centro, este salga limpio. Sácalo del molde que contiene el agua. Déjalo enfriar completamente. Refrigéralo 4 horas.
  • Derrite mientras tanto el resto del chocolate. Con una cucharita rocía el chocolate sobre una hoja de papel encerado formando el diseño deseado; déjalo reposar hasta que esté firme.
  • Afloja el flan de los lados del molde justo antes de servir; desmóldalo volcándolo sobre un plato. Retira con cuidado los diseños de chocolate del papel encerado; úsalos para decorar el flan.

1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
6 eggs
1 (8 ounce) package cream cheese, softened
⅓ cup 2% milk
1 teaspoon vanilla extract
1 cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill a large oven-safe pot with water to 1 inch; bring to a boil.
  • Place sweetened condensed milk, evaporated milk, eggs, cream cheese, milk, and vanilla extract in a blender; blend until smooth.
  • Place sugar in an even layer in a saucepan over medium heat. Cook until edges start to brown, about 1 minute; drag sugar into the center with a spatula once the edges start to brown. Continue cooking, stirring from time to time, until caramel is an even golden brown, 4 to 5 minutes.
  • Pour caramel into a 9-inch flan mold or baking pan; swirl so that caramel reaches 1 inch up the sides. Pour condensed milk mixture on top. Place mold in the pot of boiling water.
  • Bake flan in the preheated oven until a damp table knife inserted into the center comes out clean, 45 minutes to 1 hour. Remove from oven and let stand for 5 minutes.
  • Chill flan in the refrigerator until firm, 2 to 3 hours. Invert onto a serving plate so that caramel is on top.

1 cup sugar
1 package (8oz) cream cheese, softened
1 can (14oz) sweetened condensed milk
1 can (12oz) evaporated milk
5 large eggs, room temperature
2 teaspoons vanilla

Steps:

  • Preheat to oven 350°F degrees. Set a kettle of water to boil. Set an 8- or 9-inch cake (or pie) pan with 2-inch high sides inside of a larger baking pan (such as a 13x9).
  • In a small sauce pan over medium-low heat, melt sugar until completely dissolved. Watch carefully so it does not burn. You may swirl the pan to stir. Remove from heat when it is a dark golden, amber color.
  • Immediately pour the melted sugar into the bottom of the cake pan, working quickly before it hardens. Set aside.
  • In a blender beat the cream cheese, sweetened condensed milk, evaporated milk, eggs and vanilla. Mix until well combined.
  • Strain the custard through a fine-mesh sieve to ensure there are no lumps. Pour the strained custard into the cake pan over the sugar caramel. Next, add boiling water to the larger pan. It should come up the sides about an inch deep. The cake pan will be sitting in a water bath.
  • Bake for 1 hour, or until set around the edges with a slight jiggle in the middle. Remove from oven and let the flan cool in the water bath, about an hour. Once cool, refrigerate at least 2 hours, but overnight is best.
  • When ready to serve, run a knife around the edges to loosen. Set a plate over the flan and flip upside-down to invert. Slice into wedges and serve.

How can you go wrong with sugar, cream and eggs? You can't. This serves 12 but make two because you'll want to keep one for yourself. Prep time does not include refrigeration overnight.

1/2 cup sugar
14 ounces sweetened condensed milk
14 ounces cold water
6 ounces cream cheese
4 eggs
1 teaspoon vanilla
1 pinch salt

Steps:

  • Melt the sugar in an 8 inch cake pan (preferably a coated one). To do this, put the pan directly over a medium heat burner stirring continually (You can also do this in a sauce pan and pout into the cake pan) After a few minutes the sugar will actually liquify and become a dark golden-brown or caramel color. Tip the pan to make the liquid cover the bottom evenly and begin to go up the sides of it. Place the pan in the freezer.
  • Preheat the oven to 350 degrees and place inside it a roasting pan (big enough to hold the cake pan) half filled with water.
  • Pour the condensed milk into a large bowl. Blend the water, cheese, eggs, vanilla and salt in a blender or food processor until very smooth. Whisk this into the bowl with the condensed milk. Pour it all through a wire sieve into the cake pan you have removed from the freezer.
  • Carefully lower the cake pan into the pan of simmering water. Bake for 50 minute Check for doneness. Remove the flan from the oven and let it rest at room temp for an hour. Then place in fridge overnight and just before serving invert and unmold it. The lovely caramel you made will now be on top.

  • let cool then refrigerate.
