Vegetable oil, for frying
1 1/2 to 2 pounds fresh cod
Salt and pepper
1 /2 cup all-purpose unbleached flour
2 large eggs
2 tablespoons cold water, a splash
2 cups plain bread crumbs
1/2 teaspoon dried mustard powder
1/4 teaspoon cayenne pepper, a few pinches
Wedged lemons and malt vinegar for topping

Steps:

  • Pour 2-inches of vegetable oil into a large skillet. Place skillet over large burner and heat oil over medium high heat. To check if the oil is hot enough, drop in 1-inch cube of white bread. The bread should brown in a 40 count.
  • Cut cod into 4 servings, 6 to 8-ounce portions and season with salt and pepper. Place a couple of scoops of flour in a pie tin. Combine egg and water in second tin. Season plain bread crumbs and mustard and cayenne in the third tin. Coat fish in flour, then egg, and then bread crumbs. Gently set coated fish into hot oil and fry 5 minutes on each side until medium golden brown in color.
  • When the fish is evenly golden all over, remove and drain on brown paper sacks.
  • Suggested: 3 disposable pie tins .

LOUISIANA FISH FRY (CAJUN)

My sister-in-law lives in northern Louisiana, near Haughton. I go hunting with her husband every year. While there, they will always do up a mess of fish (pearch, brim, catfish, what ever is on hand). This is their sure-fire recipe for one heck of a fish fry.

6 lbs fresh water fish fillets
3 tablespoons Tabasco sauce
3 tablespoons Tony Chachere's Seasoning
2 (10 ounce) packages cornmeal (Louisiana Fish Fry)
3 cups crackers (crumbled)
5 green onions (chopped)
1 egg
1 (15 ounce) can creamed corn
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup cajun mustard
6 ears fresh corn (cut into thirds)
1 (10 ounce) package cornmeal (Louisiana Fish Fry)

Steps:

  • For the fish: Smear a light coating of Tabasco over the filets. Season with Tony's, then coat with Louisiana Fish Fry (or other seasoned corn meal), and place in freezer until ready to fry up. Note: You don't want the fish frozen, but very cold.
  • Deep fry in hot oil. My brother in law cooks the fish out on the deck, using a liquid propane burner and a cast iron Dutch oven. He drops an unlit kitchen match in the oil. When it ignites, the oil is ready. That's around 325-350 degrees if you want to use a thermometer. Drop a few pieces of fish in at a time. Remove when golden brown and drop into a brown paper bag to drain and keep warm until all the fish is done.
  • For the Hush Puppies: Crumble 1 1/2 sleeves of crackers by placing them in a zip lock bag and rolling with a rolling pin. Combine with remaining ingredients. Using two spoons, form into oval (foot ball shaped) balls.
  • Drop into hot oil and cook until golden brown. Turning occasionally.
  • For the Corn: Lightly coat each piece with the mustard. Coat with the fish fry, and deep fry in hot oil until golden brown.

1 lb crappie fillets, cut into fingerlike strips
12 ounces ale or 12 ounces any full-bodied beer
1 1/2 cups cornflour
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1 cup flour
fresh peanut oil or canola oil

Steps:

  • Empty beer into a large bowl.
  • Add the corn flour, salt, paprika, and cayenne to the bowl and whisk until you have light and frothy batter.
  • Refrigerate for a least an hour but up to five days.
  • In a deep fryer or deep skillet, heat at least 2 inches of oil to 375 degrees F.
  • Dredge fillets in flour, shaking off any excess; then dip them in the beer batter, coating them well.
  • Fry in oil until perfectly golden and drain on paper towels.
  • Serve with lemon wedges, tartar sauce and hot sauce. Yum-yum! Prep time does not include refrigeration time.

Toss the wings in the Chicken Flour, then fry then, fully submerged, for 15 minutes, checking after 5 minutes to make sure wings are not stuck together (do not crowd the fryer; cook in 2 to 3 batches). Drain on paper towels and add House Seasoning to taste.
  • Stir together the sugar, salt, corn flour, all-purpose flour, tapioca, MSG, pepper, lemon peel, citric acid and navy bean flour.
  • Stir together the flour, fry mix, seafood seasoning, seasoning salt, garlic powder and black pepper.

3 tablespoons sugar
2 tablespoons salt
2 1/2 tablespoons corn flour
1 1/2 tablespoons all-purpose flour

Steps:

  • Put the gizzards in a stockpot and cover with water by several inches. Add 1/2 tablespoon each pepper and seasoning salt, and bring to a boil. Boil the gizzards for 4 hours.
  • Remove the gizzards, rinse with cold water, and then transfer to an ice bath to cool to 41 degrees F. Rinse the gizzards again and remove any gristle. Place the gizzards in a large bowl, cover with fresh cold water, and add 2 tablespoons seasoning salt and 2 tablespoons House Seasoning. Cover and refrigerate for at least 24 hours and up to 48 hours.
  • Preheat oil in a deep-fryer to 350 degrees F. Prepare the gizzards: A quarter of the meat needs to be covered with water. If it's not, add more water. Add 3/4 cup Chicken Flour to the bowl and mix until the batter looks like milky water, is not gritty, and has the consistency of a crepe batter. The gizzards should be lightly coated with the wet batter, but the batter will still be runny. Fill a separate plate with more Chicken Flour.
  • Remove the gizzards from the wet batter and toss in the dry Chicken Flour to coat. Put the gizzards into a sifter to remove the excess, then add the gizzards to the fryer. Fry for 2 to 4 minutes. Transfer to paper towels and sprinkle with House Seasoning to taste.
  • Stir together the sugar, salt, corn flour, all-purpose flour, tapioca, MSG, pepper, lemon peel, citric acid, navy bean flour.
  • Stir together the flour, fry mix, seafood seasoning, seasoning salt, garlic powder and black pepper.

GLUTEN FREE FISH FRY

Before going gluten free this is a recipe I used all the time, it was originally wheat flour and beer. Recently I tried it with gluten free all-purpose flour and club soda and it turned out great! Hope you guys enjoy this :)

1 cup gluten free all-purpose flour (I used Bob's Red Mill)
1/2 cup flour, to dredge
1 cup club soda (you could also use a gluten free beer if you have it on hand)

oil (for frying)

Steps:

  • Mix the flour and the baking powder together, then add the club soda.
  • Cut the fillets in half then season them with salt and pepper.
  • Dredge the fish and then dip them in the batter.
  • Fry the fish in oil at 350 degrees. Usually only takes about 4-5 minutes and I flip halfway through.

4 tilapia fillets
Kosher salt and freshly ground black pepper
1 cup all-purpose flour
2 eggs, beaten
1 cup bread crumbs
2 limes, zested and juiced
2 tablespoons chili powder, a couple of palmfuls
2 teaspoons garlic powder, 2/3 palmful
2 teaspoons onion powder, 2/3 palmful
2 tablespoons fresh chopped thyme leaves or 2 teaspoons dried
1/4 cup vegetable, canola or safflower oil

Steps:

  • Season the fish with salt and pepper. Arrange 3 shallow dishes. Put the flour in 1 dish and add the eggs to the second dish. Combine the bread crumbs in the third dish and season with 1 tablespoon of lime zest, 2 tablespoons of chili powder, the garlic powder, onion powder and thyme. Coat the fish in the flour, then the egg and then the bread crumbs.
  • Heat the oil, about 1/4 cup, in large skillet over medium to medium-high heat. If your pan is not large enough to fry 4 fillets, in a single layer, heat the oven to 275 degrees F and put a cooling rack on a baking sheet. As you fry the fish, transfer them to the rack in the oven to keep warm. Fry the fish until deeply golden and crispy and transfer to a serving platter. Season with a little extra salt, top with lots of lime juice and serve.

CRISPY OVEN FISH FRY WITH MUSHY PEAS

5 tablespoons butter
3 cups panko crumbs
1 tablespoon seafood seasoning (recommended: Old Bay) or Szeged Fish spice, a palmful
1 tablespoon granulated onion, a palmful
1 tablespoon granulated garlic, a palmful
1 lemon or lime, zested
A couple tablespoons freshly chopped thyme leaves
A couple tablespoons finely chopped chives
1 1/2 to 2 pounds cod, cut from the thickest part of fillets shaped into 8 rectangular batons
Salt
2 extra-large egg whites, beaten to frothy
1 cup packed flat-leaf parsley
1 cup packed fresh mint
3 cups freshly shelled peas or frozen and defrosted organic peas, patted dry
1 tablespoon extra-virgin olive oil
2 large shallots, finely chopped
2 cups chicken stock-in-a-box
Freshly ground black pepper
Malt vinegar

Steps:

  • Heat the oven to 400 degrees F. Arrange a baking rack over the top of a baking sheet.
  • Melt 4 tablespoons butter over low heat in small pot. Put the bread crumbs in a shallow dish and douse with the melted butter and toss to combine. Season with seafood seasoning, granulated onion powder, granulated garlic, citrus zest, thyme and chives.
  • Clean and pat the fish dry, then season with salt, to taste. Coat the fish in egg whites, then gently press them into the bread crumbs to coat evenly, then arrange them on the baking rack. Bake on center rack of the oven until the fish is white and flaky and the crumbs are golden, about 20 minutes.
  • Meanwhile, add the parsley and mint to a food processor and pulse to finely chop, then scrape into a bowl and set aside. Return the base to the processor; do not rinse the base. Add the peas and pulse until very finely chopped.
  • In a medium saucepan, heat 1 tablespoon of extra-virgin olive oil, a turn of the pan, and the remaining butter over medium heat. Add the shallots and saute for 5 minutes, then add the stock and peas and bring to a bubble over medium-high heat. Cook the fresh peas for about 10 minutes, and about 6 to 7 minutes, if using frozen defrosted peas. When most of the liquid has evaporated, season with salt and pepper, to taste, and stir in the herbs. Remove from the heat.
  • Spoon pools of not-so-mushy peas onto each dinner plate and top with crispy fish batons. Douse the fish with lots of malt vinegar and enjoy!

CHILI-LIME FISH FRY WITH TEX-MEX PEPERONATA

1 red onion, thinly sliced
2 garlic cloves, finely chopped
2 jalapeño peppers, seeded and thinly sliced

1 green bell pepper, seeded and thinly sliced
Salt and pepper
2 tablespoons tomato paste
1 cup beer or chicken stock
A handful of fresh cilantro leaves, chopped
Chile-Lime Fish Fry
4 tilapia fillets
Salt and pepper
1 cup all-purpose flour
2 eggs
1 cup bread crumbs
2 limes
2 tablespoons chili powder, a couple palmfuls
2 teaspoons garlic powder, 2/3 palmful
2 teaspoons onion powder, 2/3 palmful
2 tablespoons chopped fresh thyme leaves or 2 teaspoons dried thyme
1/4 cup vegetable, canola, or safflower oil

Steps:

  • To prepare the peperonata, heat the EVOO in a skillet over medium-high heat. Add the onions, garlic, jalapeño and bell peppers, and salt and pepper. Sauté until the peppers are crisp-tender, 5 to 6 minutes. Stir in the tomato paste, cook for 2 minutes, then add the beer or stock and stir for a minute or two more. Top with the cilantro and set aside.
  • Season the fish with salt and pepper. Arrange 3 shallow dishes; place the flour in one, beat the eggs in the second, and scatter the bread crumbs in the third. Season the bread crumbs with 1 tablespoon grated lime zest, the chili powder, garlic powder, onion powder, and thyme. Coat the fish in the flour, eggs, and seasoned bread crumbs.
  • Meanwhile, heat the oil in a large skillet over medium to medium-high heat. If the pan is not large enough to fry 4 fillets, heat the oven to 275°F and place a cooling rack on a rimmed baking sheet. As you fry the fish, transfer it to the rack in the hot oven to keep warm. Cook the fish for 3 to 4 minutes on each side, or until deeply golden and crispy. Season with a little extra salt and top the fish with lots of lime juice and then the peperonata.

1 cup all-purpose flour, plus
2 tablespoons all-purpose flour
1 tablespoon baking powder
1 teaspoon fresh grated lemon, zest of
1/4 teaspoon cayenne pepper
2 large eggs
kosher salt
fresh ground pepper
vegetable oil (for frying)
1 cup water
4 large baking potatoes, unpeeled
4 tablespoons extra virgin olive oil
3/4 teaspoon kosher salt
1/4 teaspoon pepper
1/2 teaspoon minced fresh garlic
1/2 teaspoon fresh rosemary leaf

Steps:

  • Lay cod fillets on cutting board and cut into 3" pieces.
  • Sprinkle both sides of fish with salt and pepper.
  • In a bowl combine the flour, baking powder, cayenne pepper, lemon zest, 1 1/2 teaspoons salt, 3/4 teaspoons pepper.
  • Whisk in water (add more if batter seems too thick), and 2 eggs.
  • Pour 1/2" oil into a large fry pan and heat to about 360 degrees.
  • Dip each fillet into batter, dripping off extra.
  • Place into pan and do in batches to avoid overcrowding.
  • Fry about 2-3 minutes on each side-will be lightly golden brown.
  • Remove to paper towel to dry.
  • Sprinkle with salt and pepper and serve hoth with"chips" (fries).
  • For chips, preheat oven to 400 degrees.
  • Scrub potatoes and cut them in half lenthwise.
  • Then cut each into fourths lengthwise.
  • Place potatoes on a sheet pan with the olive oil, salt, pepper, garlic, and rosemary.
  • Toss all to coat well and in a single layer with cut sude down bake 35-40 minutes turning after 20 minutes.
  • Bake till lightly browned, crisp outside and tender inside.
  • When preparing-do chips first.

OUTDOOR FISH FRY



Outdoor Fish Fry image

Frying fish at home can be intimidating, not least because it's messy and can leave the house smelling like a grease pit. Here, though, is a recipe that takes the cooking outside, to a large pan set over a propane hob or, as subsequent testing has borne out, to a large roasting pan filled with oil set over a gas grill. Simply heat the oil until it is very hot but not yet smoking, and add to it very fresh strips of fish dipped in a mixture of flour, salt, pepper and Old Bay, then into egg, and finally into panko, and fry until golden brown on each side, super-crisp, with a moist, tender and perfectly cooked interior. Buy a lot of fish. This is one of those recipes where people tend to want seconds and thirds. Serve with slaw and, if you like, tartar sauce.

6 pounds very fresh striped bass or bluefish
2 cups flour
1 tablespoon kosher salt
1/4 cup freshly cracked black pepper
1/4 cup Old Bay spice mix
6 eggs
1/2 cup half-and-half
3 cups panko
1 1/4 to 1 1/2 cups vegetable oil of your choice

Steps:

  • Cut fish into chunks about 2 inches square; you should have about 24 chunks.
  • Combine flour, salt, pepper and Old Bay in a shallow baking pan (those handy disposable aluminum pans work) and mix well. Crack eggs into a second such pan, then add half-and-half and whisk briefly to combine. Put panko in a third pan.
  • Dunk chunks of fish sequentially into flour mixture, egg mixture and panko, shaking gently after each dunk to get rid of any excess. Place coated fish chunks into a fourth shallow baking pan right by the stove next to burner.
  • Pour vegetable oil into a 20-inch iron skillet; it should come to a depth of about 1/4 inch. Turn a propane burner to medium-high (see note), and set skillet over flame. Heat until oil is hot but not smoking. You can test it by dropping a small bit of fish into the oil; it should bubble furiously.
  • Add half the pieces of fish and cook until deep golden brown on the side facing down, about 2 to 3 minutes. Flip over and once again cook until deep golden brown on the downward side, about 2 to 3 minutes more. Remove from oil, drain briefly on paper towels, and hand to your guests.
  • Allow oil to heat up until not quite smoking again, then add remaining fish and follow the same procedure. Because the oil will have degraded somewhat, these pieces will take a bit longer, maybe 4 minutes a side.

2 c. yellow cornmeal
1 c. all-purpose flour
2 t. paprika
1 t. dried parsley flakes, crushed
1 t. each, celery salt, salt, onion salt, and lemon pepper
1/2 t. ground red pepper

Steps:

  • 1. In a large bowl, combine all ingredients and mix well. Store in a resealable plastic bag or jar. Makes about 3 cups mix and will coat about 4 pounds of fish. To serve: In a deep skillet, heat 1 1/2 inches of vegetable oil to 375° F. In a small bowl, combine 1 egg and 1 cup buttermilk. Dip fish into egg mixture. Place fish in bag of mix; shake until fish is well coated. Fry until fish is golden brown and flakes easily with fork. Drain on paper towels and serve.

1 tbsp very finely shredded ginger
2 tsp sesame oil
10 spring onions , halved and sliced lengthways
2 garlic cloves , thinly sliced
1 red pepper , deseeded and sliced
140g beansprouts
1-2 tsp sesame seeds , toasted

Steps:

  • Mix together the orange zest and juice, soy and vinegar. Line the top of a steamer with baking parchment and heat water in the base. Top the fish with a little of the ginger, add to the steamer and spoon over 2 tbsp of the dressing. Cover and steam for 5-6 mins until the fish flakes easily.
  • Meanwhile, heat the oil in a non-stick wok and stir-fry the spring onions, garlic, pepper and remaining ginger for 2 mins. Add the beansprouts and cook for 2 mins more. Pour any juices from the fish into the veg. Stir through the dressing, then divide between bowls, top with the fish and scatter over the sesame seeds.

1 bag(s) mixed vegetables, frozen
2 tablespoon(s) olive oil, extra virgin
1/2 cup(s) fresh broccoli cut up (optional)
2 small catfish filet (cut up in small squares)
1 bottle(s) louisiana hot sauce
1 tablespoon(s) black pepper
1 tablespoon(s) cayenne pepper
1 box(es) mccormick cajun seasoning
1 bottle(s) olive oil, extra virgin for frying

Steps:

  • Heat 2 tablespoons of olive oil in a medium size skillet on medium until hot. Add mixed vegetables including broccoli (if added) and slowly stir until lightly brown in color. Do not over stir. Set aside.
  • Next put hot sauce, black pepper and cayenne pepper in a bowl. Place diced catfish nuggets in and let it sit for ten minutes. Spread Cajun mix on a large plate and pat batter on both sides of this mixture. Heat remaining bottle of oil in medium size skillet and fry fish nuggets. Turn fish over after it lightly brown on first side then repeat on second side. Remove and place on plate with a piece of paper towel on it to remove excess oil.
  • Place stir fried vegetables on the plate and then top it with the Cajun catfish nuggets. Serves approximately four to six people.

On the less frequent occasion that I fry fish, this is the recipe I use...Served with oven roasted potatoes and a tossed green salad, it's a dream meal!

2 lbs haddock fillets (see directions for substitution list)
1/4 cup evaporated milk (NOT condensed milk)
1/4 teaspoon black pepper
1/2 cup all-purpose flour
1/4 cup yellow cornmeal
1 teaspoon paprika
1 -2 tablespoon olive oil

Steps:

  • In one pie plate, combine the milk and pepper; this is your 'wet' mix.
  • In another pie plate, combine the flour, cornmeal and paprika; this is your 'dry' mix.
  • In an electric skillet, heat the oil to 350°F.
  • Dip fish into the 'wet' mix, then roll in the 'dry' mix to cover completely.
  • Fry the fish filets, a few at a time, in the hot oil for approx 4 min or less per side, until the fish is nicely browned and serve.
  • Don't fry them all at the same time or you'll cool down the oil too much and it will have to heat back up to temperature (NOT a good thing).
  • If frying in a dutch oven, use a meat thermometer to check your oil temperature, before you fry.
  • If using a deep fryer machine, please follow your manufacturer's instructions/booklet.
  • Substitutions: if haddock isn't available, substitute hake, pollock, flounder, tilapia or cod instead; you can also use the SKIM version of evaporated milk.

1 (14 ounce) package breaded frozen fish sticks
1 (16 ounce) package frozen French fries
1 (10.75 ounce) can condensed cream of celery soup
¾ cup milk
⅓ cup mayonnaise
1 teaspoon curry powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Line the bottom of a 9x13 inch baking dish with fish sticks. Sprinkle fries in a layer over the fish. Mix together the cream of celery soup, milk, and mayonnaise; pour over the fish and fries.
  • Bake uncovered for 45 minutes in the preheated oven. Cool slightly before serving.
