EASY FISH CREOLE



Easy Fish Creole image

This recipe has the trinity in it that is what makes it creole cooking. After reading Derf's review, I set out to find what other Creole recipes used for spices. I found most used garlic and either chili powder, red pepper or Tabasco sauce. So you might want to add 2 cloves of garlic and one of the other pepper spices to put a kick into this recipe. Let me know which pepper and how much you use.

1/2 cup chopped onion
3/4 cup chopped celery
1/2 cup chopped green bell pepper
1 (14 1/2 ounce) can stewed tomatoes, coarsely chopped and undrained
1/2 teaspoon instant minced garlic
1 tablespoon brown Sugar Twin
16 ounces white fish fillets, cut into 16 pieces
2 cups hot cooked rice

Steps:

  • In a large skillet sprayed with butter-flavored cooking spray, saute onion, celery, and green pepper for 10 minutes or until tender.
  • Stir in undrained stewed tomatoes, garlic and brown Sugar Twin.
  • Add fish and mix gently to combine.
  • Lower heat, cover and simmer for 20 minutes, stirring occasionally.
  • For each serving, place 1/2 cup rice on a plate and spoon about 1 full cup fish mixture over top.

3 cups water
1 ½ cups uncooked white rice
¼ cup butter
1 onion, chopped
1 clove garlic, minced
2 stalks celery, chopped
1 green bell pepper, chopped
¼ cup all-purpose flour
2 cups milk
1 teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon hot pepper sauce
½ cup chili sauce
1 pound cod fillets
2 tomatoes, sliced

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Lightly butter a 9x13 inch baking dish. In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • In a Dutch oven, melt the butter over medium heat. Add the onions and garlic. Cook until tender about 4 minutes. Add the celery and pepper. Cook for 3 minutes. Do not brown add the flour and stir well. Cook for 3 minutes.
  • Stir in the milk and bring just to a boil. Season with salt, pepper and hot sauce. Stir in the chili sauce. Taste and adjust seasoning.
  • Place rice into the bottom of the prepared pan. Arrange the fish fillets over the rice in a single layer. Place the sliced tomatoes over the fish and pour the sauce over the top.
  • Bake at 400 degrees F (205 degrees C) for 20 minutes or until fish is just cooked and flakes easily with a fork.

1 1/4 cups long-grain white rice
3 thin slices fresh ginger, plus 1 tablespoon finely grated
Kosher salt and freshly ground pepper
3 tablespoons vegetable oil
3 sprigs thyme
2 green bell peppers, thinly sliced
1 onion, thinly sliced
3 cloves garlic, chopped
2 teaspoons Madras curry powder
4 plum tomatoes, chopped
1 1/2 pounds skinless cod fillets, cut into 2-inch pieces
Fresh cilantro, for topping
Lime wedges, for serving

Steps:

  • Combine the rice with 1 3/4 cups water and the sliced ginger in a medium saucepan; season with salt and pepper. Bring to a boil, cover and reduce the heat to low. Cook until the water is absorbed and the rice is tender, about 16 minutes. Remove from the heat and let sit, covered, 5 minutes.
  • Meanwhile, heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Add the thyme, bell peppers, onion and 1/4 teaspoon salt; cook, stirring, until softened, 5 to 6 minutes. Add the remaining 1 tablespoon vegetable oil, the garlic and grated ginger and cook, stirring, until the garlic is golden, about 1 minute. Stir in the curry powder and cook until toasted, about 30 seconds. Add the tomatoes, 1/2 cup water and 1/2 teaspoon salt and bring to a boil. Cover and cook, stirring occasionally, until saucy, 6 to 7 minutes.
  • Season the fish with salt and pepper. Reduce the heat to low and nestle the fish in the sauce. Cover and cook, turning the fish halfway through, until just cooked through, 6 to 8 minutes.
  • Discard the ginger from the rice and divide the rice among bowls. Top with the fish and discard the thyme. Top with cilantro and serve with lime wedges.

A nice hearty hot soup, great for lunch on a chilly day. Unlike a lot of fish chowder recipes, it contains no potatoes, so it's a good choice if you're trying to go light on starchy carbohydrates. Use more chili powder if you like. May be served with crackers.

1 teaspoon chicken bouillon granules

1/8 teaspoon hot pepper sauce

Steps:

  • In a small saucepan, bring the 2 cups of water to a boil. Stir in the rice and return to a boil; reduce the heat. Cover and simmer for 20 minutes or until the rice is tender and the water is absorbed. 1.Using a very sharp knife, cut the fish into 3/4 inch pieces; set aside. 2.In a medium saucepan, combine the tomatoes (with juices), dried onions, bouillon granules, dried oregano, garlic powder and hot-pepper sauce; bring to a boil and stir in the catfish pieces. 3.Cover and cook over medium heat for 5 to 8 minutes or until the fish flakes easily when tested with a fork and is opaque all the way through. 4.Serve the fish mixture over the rice.

  • Sauté the onions and garlic until the onions are translucent.
  • Add carrots and celery; sauté for about 5 minutes.
  • Add zucchini and green pepper; sauté about 5 minutes.
  • Add bay leaf, thyme, tomatoes, tomato juice and stock or water. Simmer about 20 minutes or until the veggies are tender.
  • Add hot pepper sauce, salt and black pepper.

One of my Mom's recipes. She got years ago from the Ontario milk board. My dad loves to fish and they often use pickerel fillets for the fish. My mom also uses her homemade chili sauce. It is one of the only main dish fish recipes that my kids will eat, it is delicious!

1 onion, chopped
1 garlic clove, minced
2 celery ribs, chopped

1 pound shrimp, in shells
1 large carrot, chopped
2 stalks celery, chopped

1 28-ounce can whole plum tomatoes, drained
2 slices bacon
2 stalks celery, chopped
2 cloves garlic, peeled and chopped
2 red onions, peeled and chopped
1 green pepper, cored, seeded and chopped
1 tablespoon parsley, chopped
1 pound halibut, cut in 1-inch chunks
1/4 cup olive oil
1/2 cup tomato paste
1/2 cup white wine
1 tablespoon sugar
Pinch of saffron
2 tablespoons Worcestershire sauce
2 teaspoons Tabasco
1 tablespoon gumbo file
1/2 teaspoon cayenne
Juice of 2 lemons
2 cups okra (frozen is O.K.)
1 pint clams (canned is O.K.)
1/2 pound crabmeat, picked over and cartilage removed

Steps:

  • Put the lobsters in 2 quarts of cold salted water in a large stockpot and bring to a boil for about 5 minutes. (The whole procedure should take 15 minutes.) Add the shrimp and cook for 4 minutes more. Take pot off burner. Remove the shrimp shells and lobster shells and heads and put them back into the pot with the water they were boiled in. Save the shellfish for later.
  • Add the rest of the stock ingredients to the pot with the shells. Simmer uncovered for 40 minutes. Strain the liquid through a sieve into a large bowl; then put stock back into the pot. Discard the shells and vegetables.
  • To make the gumbo, fry the bacon. When done, crumble and leave it in the skillet with the fat. Add the remaining ingredients listed in gumbo Part 1 and saute until brown, about 7 minutes.
  • Add the halibut and olive oil to the skillet and cook, stirring occasionally, for 2 minutes, or until the fish is done. Add this mixture to the pot with the stock. Add the remaining ingredients from gumbo Part 2. Cover and simmer over low heat until well blended, about 1 hour. Can be served with rice.

Cook for 3 min. Do not brown. 3. Add flour and stir well. Cook 3 min. longer. 4. Add milk and bring to a boil. Season with salt, pepper and Tobasco. Stir in chilli sauce. Creole Fried Fish Sandwich with Quick Slaw Recipe - (4.5/5) image

4 Kaiser Rolls
4-6 whitefish filets such as tilapia, swai, or red snapper
1 tbsp. creole seasoning
1 lemon, zested, juiced
2 tsp. black pepper
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. paprika
2 tbsp. hot sauce
1 tbsp. yellow mustard
1 egg beaten
1 c. flour
1 c. corn meal
Large bottle of canola or vegetable oil
Slaw (recipe below)

Steps:

  • Mix seasonings into a small bowl, divide. Rinse fish in cold water, pat dry. Cut fish into 1/2 inch strips. Place fish on flat surface to season. Season the fish on one side with half of the seasonings. Lightly toss seasoned fish so the seasoning is evenly distributed. Add beaten egg, hot sauce, lemon zest, juice and mustard. Mix lightly and set aside. Add cornmeal and flour (corn flour) to a brown paper bag or freezer bag season with remaining seasonings shake to mix up. Heat oil to 350 degrees using a cooking thermometer if you don't own one then do it the way my mother taught me. Take a little bit of corn flour drop it in the oil if the corn flour starts to fry quickly and floats to the top the oil is ready. Shake loose excess corn flour as you lift fish out to place in fryer. Fry fish 7-8 minutes depending on your preference, I love my fish a littler darker and crunchier so 8 minutes guarantees me that perfect texture. Add enough fish to cover surface area of pan only (don't over fill or fish will not fry evenly). Stir fish occasionally to help the fish to fry evenly. Lift fish out with strainer and place on paper towel to assist with draining. Slaw Ingredients: 2 cups diced red cabbage 2 stalks green onion, chopped 1 bell pepper, diced 1 carrot, peeled, grated 1 tbsp. mayonnaise 1 tbsp. sour cream 1 tbsp. hot sauce 1 tbsp. apple cider vinegar 1 tbsp. lime juice ½ tsp. pepper ½ tsp. creole seasoning Directions: Rinse cabbage, dice to your desired size, add the remaining ingredients and stir. Refrigerate until ready to assemble tacos.

FRIED FISH FILLETS
2/3 cup all purpose flour
2/3 cup water
2 eggs
2 teaspoons baking powder

  • First, heat 1/4 cup Crisco Oil in medium saucepan on medium heat. Add onion, green pepper, celery and garlic. Cook and stir until tender. Add tomatoes, thyme, salt, pepper sauce, cayenne pepper and okra, if used. Simmer 10 minutes. Keep Warm.Heat 2 or 3 inches Crisco Oil to 365°F in deep fryer.For fish, combine flour, water, eggs baking powder, salt, onion powder and paprika in medium bowl. Mix until smooth. Dip fish fillets in batter. Let excess drip off. Fry, a few at a time, in oil heated to 365°F. Fry 4 to 6 minutes or until golden brown. Turn as needed for even browning. Drain on paper towels. 1-ounce vegetable oil

1/2 cup mayonnaise
1 large egg
1 tablespoon Creole mustard (substitute stone ground dijon if unavailable)
1 tablespoon Worcestershire sauce
2 teaspoons Cajun or Creole seasoning
1 teaspoon hot sauce (Suggested: Crystal or Tabasco)
1/2 small red, yellow or orange bell pepper, finely chopped
2 scallions, finely chopped
20 saltine crackers, finely crushed
1 pound cooked barramundi, flaked apart
1 tablespoon olive oil
4 tablespoons butter

Steps:

  • To make the remoulade, whisk together the mayonnaise, Creole mustard, hot sauce, Worcestershire, horseradish, ketchup, garlic powder, paprika, cayenne pepper and lemon juice in a small bowl. Taste and adjust seasoning as needed. Cover and refrigerate until ready to serve.
  • To make the barramundi cakes, whisk together the mayonnaise, egg, Creole mustard, Worcestershire sauce, hot sauce, Cajun seasoning, bell pepper and scallions in a large bowl. Add the crushed saltine crackers and flaked barramundi, then gently mix until combined. Form the mixture into about 20 small patties and set aside.
  • Preheat the oven to 325 degrees. Heat the olive oil and butter in a large saute pan over medium high heat. Saute the barramundi cakes in batches, being sure not to overcrowd the pan. Cook until golden brown on one side, flip, and cook until golden on the other side. Remove the cakes to a rack or paper towels to drain, then transfer to a baking sheet and place in the oven to keep warm. Repeat until all of the cakes.
  • Arrange the barramundi cakes on a platter and serve with Creole remoulade and lemon wedges on the side. Serve hot.

4 1/2 cups Kellogg's® corn flakes (crushed to 2 cups)
1/2 teaspoon paprika
1/2 teaspoon onion powder
1 cup fat-free milk
1 egg, beaten
1 pound catfish filet nuggets (about 36 nuggets)
CREOLE SAUCE
1 clove garlic, finely chopped
1 tablespoon vegetable oil
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/4 cup shopped celery
1 tablespoon sugar
1/4 teaspoon red pepper flakes
1 (6-ounce) can tomato paste
1/2 cup water

Steps:

  • 1. Stir together KELLOGG'S CORN FLAKES cereal, paprika and onion powder in shallow dish or pan. Set aside.2. Combine milk and egg in second shallow dish or pan. Dip fish nuggets into egg mixture. Coat with cereal mixture. Place on baking sheet coated with cooking spray.3. Bake at 350°F about 20 minutes or until fish flakes. Serve hot with Creole sauce.4. To make Creole sauce, cook garlic in oil over medium heat until browned, stirring constantly. Add onions, green pepper, celery, sugar and red pepper flakes. Cook until vegetables are tender, stirring frequently. Stir in tomato paste and water. Cover, reduce heat and simmer 15 minutes, stirring occasionally. Serve hot with fish nuggets.

2 tablespoons olive oil
6 scallions, sliced
2 garlic cloves, chopped fine
1 stalk celery, sliced
1 green bell pepper, diced
1 onion, diced
2 tablespoons flour
1 (28 ounce) can plum tomatoes, drained and chopped
1 tablespoon lemon juice
1 tablespoon Worcestershire sauce
1/4 teaspoon thyme
1/4 teaspoon cayenne
1 teaspoon black pepper
2 cups fish stock (or veg. stock)
1/2 cup chopped parsley
4 firm white fish fillets (6oz. ea.)

Steps:

  • Make the sauce: In a large saucepan, heat the oil over moderate heat. Add the scallions, garlic, celery, green pepper, and onions. Cook, stirring frequently, about 5 minute until softened but not brown. Add the flour to the veg. mixture and stir to combine. Continue to cook, stirring, about 1 minute longer. Add the tomatoes, lemon juice, worcestershire sauce, thyme, cayenne, black pepper, and stock. Bring to a boil, stirring, then simmer, partially covered, 25-30 minute Stir the parsley into the sauce, then remove about 1 cup of the sauce from the pan and reserve. Add the fish fillets to the pan in a single layer. Pour the reserved sauce over the fillets. Partially cover the pan and simmer the fish about 10 minutes, until the fish flakes. With a large slotted spatula, transfer the fish to a serving dish and spoon the sauce over the fillets. Serve with creamy mashed potatoes or rice and green beans.
