CHILI QUESO DIP
I've had this recipe for more than 42 years and have updated it from time to time. This is an easy party favorite, and everyone loves the taquito dippers. -Joan Hallford, North Richland Hills, Texas

Steps:
- In a large skillet, cook beef and sausage with onion, jalapenos and garlic over medium-high heat until meat is no longer pink, 5-7 minutes, crumbling meat. Using a slotted spoon, transfer to a 5-qt. slow cooker. Stir in chili, soup, tomatoes, pimientos and cheese. , Cook, covered, on low until heated through, 2-3 hours, stirring halfway through cooking. Serve warm with taquitos or chips.

EASY COPYCAT CHILI'S QUESO DIP
Steps:
- Cut Velveeta cheese into cubes and add to skillet.
- Add milk to skillet and stir until cheese is melted.
- Add paprika, cayenne, chili powder, cumin, and lime juice. Stir well to combine.
- Add can of no bean chili and stir well until Queso becomes creamy.
- Serve immediately with your favorite chips. Enjoy!
- Set crock pot to low
- Add cubed Velveeta cheese, milk, paprika, cayenne, chili powder, cumin, lime juice, and no bean chili.
- Stir well to combine. Stir ingredients occasionally until cheese has melted and has become creamy.
- Keep crock pot on low and stir occasionally. Enjoy!

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the cheese, tomato sauce, green chilies, Worcestershire sauce, chili powder if desired and garlic powder; cook and stir over medium heat until cheese is melted. Transfer to a fondue pot and keep warm. Serve with chips.

THE BEST FIREHOUSE CHILI
A friend gave this recipe to me and she got it off the internet as it was very similar to her husband's chile who happens to be a fire man. Refrigerate over night in pot before eating. Not essential, but I think it tastes better, as all of the ingredients blend and meld together nicely.

Steps:
- In a skillet, brown the ground meat, remove and drain well. In the same pan fry the onions, garlic, and peppers, until the onions are translucent and peppers begin to wilt.
- In a large stew pot or Dutch oven, add meat and vegetables and stir over low heat.
- Add spices and seasonings, stir.
- Add crushed tomatoes.
- Add kidney beans that have been drained and rinsed.
- Add beer, stir.
- Add water or stock (if needed) until desired consistency is reached.
- Bring to a boil, reduce heat to low.
- Simmer for approximately 1 ½ - 2 hours, stirring every so often.
- Serve over rice with a dollop of sour cream and shredded cheese.
