My Favorite Green Bean Casserole image

This recipe has been in my family for as long as I can remember. We only got to have it at holidays. Now, I use it for a special go-to side dish all year long. It's made from scratch but so easy there's no reason not to.

2 tablespoons butter
½ cup diced onion
1 tablespoon minced fresh flat-leaf parsley
1 cup diced fresh mushrooms
2 tablespoons all-purpose flour
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon fresh lemon juice
1 cup sour cream
2 (14.5 ounce) cans French-style green beans, drained
1 cup shredded Cheddar cheese
1 cup crushed buttery round crackers
¼ cup melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Melt 2 tablespoons butter in a skillet over medium heat. Cook and stir the onions, parsley, and mushrooms in the melted butter until the onions are translucent and the mushrooms are giving off their juices, 7 to 10 minutes. Add the flour, salt, pepper, and lemon juice; cook until the flour is slightly browned, 2 to 3 minutes. Stir the sour cream into the mixture. Mix the green beans into the mixture. Pour the green bean mixture into a 9-inch square baking dish. Sprinkle the Cheddar cheese over the mixture. Stir the crackers and melted butter together in a small bowl until evenly mixed; spread evenly over the Cheddar cheese layer.
  • Bake in the preheated oven until bubbly and brown, 20 to 30 minutes.

Frozen green beans, colorful pimentos and French-fried onions are baked to tender perfection in this wonderful, easy to make casserole.

2 (16 ounce) packages frozen cut green beans
1 cup water
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup milk
1 (4 ounce) jar diced pimento peppers, drained
⅛ teaspoon ground black pepper
1 (2.8 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium saucepan over medium heat, place the green beans in water, and bring to a boil. Cover, and cook 6 minutes, until tender. Remove from heat, and drain.
  • In an 8x8 inch baking dish, mix together the cream of mushroom soup, milk, pimentos, and pepper. Stir in the green beans. Sprinkle with French-fried onions.
  • Bake, uncovered, 30 to 40 minutes in the preheated oven, until the casserole is hot and bubbly in the center.

I've made a few small changes to the original recipe, and it's my husband's favorite. No holiday is complete without it. He likes to take the leftovers to work for lunch :)

1 lg can(s) cream of mushroom soup (26 oz)
1 c milk*
1 Tbsp soy sauce
1/2 tsp pepper
2 lb frozen green beans, thawed
3 c french fried onions

Steps:

  • 1. In a large mixing bowl combine the soup, milk, soy sauce, and pepper with a whisk, until smooth.
  • 2. Stir in half the french fried onions and the thawed green beans until everything is well combined.
  • 3. Pour the mixture into a 3 qt. casserole dish, that has been prepared with food release spray.
  • 4. Bake covered at 350* for 30 minutes. Remove cover, stir the casserole. Return to the oven and continue baking, uncovered, another 30 minutes, or so, until the casserole is bubbling in the middle.
  • 5. Sprinkle with remaining onions. Bake 10 more minutes, until onions are browned.
  • 6. NOTES: You can use cut or french style green beans. My husband likes more bite, so I use cut. Sometimes I use the cheesy french fried onions to stir in, then garnish with the original flavor. For extra color and flavor, stir pimientos into the green bean mixture before baking. This is also a great way to brighten up leftovers. With leftovers, reheat with mushrooms and cooked wild rice for a delicious meat-free meal. *We're dairy intolerant, so I substitute an equal amount of rice or soy milk

1 cup CHEEZ WHIZ Cheese Dip
1 can (10-3/4 oz.) condensed cream of mushroom soup
5 cups frozen cut green beans, thawed, drained
1/2 cup slivered almonds
1 cup french-fried onions

Steps:

  • Heat oven to 375°F.
  • Mix CHEEZ WHIZ and soup until blended. Combine beans and nuts in medium bowl. Add CHEEZ WHIZ mixture; mix lightly.
  • Spoon into 1-1/2-qt. casserole sprayed with cooking spray.
  • Bake 35 min. or until heated through, topping with onions for the last 5 min.
