This cake is not a typical "Coffee Cake" with cinnamon. It is a chocolate chip cake with real coffee. My family gobbles these squares up.

Number Of Ingredients 9

1/2 cup margarine or 1/2 cup butter
1 1/2 cups brown sugar
1 egg
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla
1/2 cup warm coffee
1/2 cup chocolate chips

Steps:

  • Preheat the oven to 350 degrees.
  • Cream the margarine or butter with the sugar.
  • Add the egg and mix.
  • Then blend in the rest of the ingredients except the chips.
  • Spread into a greased 9x13" baking pan.
  • Sprinkle the chocolate chips on top.
  • Bake for 30-35 minutes.
  • Cool and then cut into squares.

I make these often it's a wonderful easy recipe and they are very moist! Serving size is only estimated depending on the size you cut the squares. You can even add in nuts in place of the chocolate chips or use about 6 ounces each!

Number Of Ingredients 11

1/2 cup oil
2 cups brown sugar
2 eggs
3 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla (can use 2 teaspoons)
1 cup strong black coffee
12 ounces chocolate chips (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a large cookie sheet.
  • In a bowl combine oil, sugar and eggs, beat until well combined.
  • In another bowl, combine dry ingredients, except chocolate chips, then add to the oil/sugar mixture; mix well.
  • Add the vanilla and coffee; mix until combined.
  • Stir in chocolate chips.
  • Spread on a cookie sheet.
  • Bake for about 35 minutes or until bars tests done.
  • Cool and cut into squares.
  • Delicious!

1 c raisins
2 c water
1/2 c shortening
1 large egg
1 c sugar
2 1/2 c flour, sifted
1 tsp baking soda
1 tsp salt
1/2 tsp cloves
1/2 tsp cinnamon
FROSTING
1 c powdered sugar
2 Tbsp milk, approx
1/2 tsp vanilla

Steps:

  • 1. Cook raisins in water until only 1 cup liquid remains.
  • 2. Add hot liquid to shortening. Set aside and let cool.
  • 3. Beat eggs and sugar together. Stir in Shortening mixture. Blend in dry ingredients. Fold in raisins.
  • 4. Spread in greased 10x15 cookie sheet with edges. Bake at 350 degrees for 20-25 min.
  • 5. Frost with powdered sugar frosting while still warm.
  • 6. Cut into squares.

This is the classic puffed wheat square with a spicy twist. It pairs great with coffee and will have everyone coming back for 'one more piece'!

1 cup brown sugar
½ cup butter
½ cup corn syrup
¼ cup unsweetened cocoa powder
1 teaspoon ground cinnamon
½ teaspoon ground cloves
1 teaspoon vanilla extract
8 cups puffed wheat cereal

Steps:

  • Butter a 9x13-inch pan.
  • Heat brown sugar, butter, corn syrup, cocoa powder, cinnamon, and cloves in a saucepan over medium-high heat until butter is melted, stirring constantly. Bring cocoa mixture to a rolling boil; boil for 1 minute.
  • Remove cocoa mixture from heat; stir in vanilla extract. Fold puffed wheat cereal into cocoa mixture. Pour cereal mixture into prepared pan; press evenly into the pan. Allow to cool completely before cutting into squares, about 30 minutes.
