GREEN FATOUSH



Green Fatoush image

1/4 cup finely sliced scallions
2 long green chiles, seeded and cut into very fine rounds
1 head cos or romaine lettuce
1 lime, zested and juice
1 tablespoon extra-virgin olive oil
Kosher salt
2 pita breads
1 ripe avocado
1/4 cup chopped fresh cilantro leaves
1/4 cup chopped fresh mint leaves

Steps:

  • Preheat oven to 450 degrees F.
  • Put the scallions and chile slices into a bowl.
  • Discard the outer leaves of the lettuce and then tear it into pieces, adding to the bowl. Whisk the lime zest and juice and oil in a small bowl or jug and add a sprinkling of salt.
  • Open the pita breads up lengthways so that you have 4 very thin halves, and lay them on a baking sheet. Toast them in the oven for about 5 minutes to give them a bit of crunch; they will turn a golden brown color, but keep an eye on them as they might burn. Take the pita breads out and leave them to cool.
  • Halve the avocado, remove the stone and then using a spoon, scoop pieces of avocado out onto the bowl of lettuce. Dress the salad with the lime and oil dressing and add most of the chopped herbs before tossing with your hands to combine. Snip with scissors or break the crispy pita bread with your hands into rough triangles, and add most of the pieces to the salad and toss again before decanting to a serving bowl or platter. Scatter with remaining herbs and toasted pita.

Spiced matzo chips
1 (8-10 inch) English cucumber, peeled
3-4 heads Belgian endive, separated into leaves
1/8 cup fresh mint leaves (discard stems)
1/4 cup flat-leaf Italian parsley leaves (discard stems)
1 cup small grape or cherry tomatoes, quartered
1 cup arugula
Juice of 1 lemon
4 tablespoons extra-virgin olive oil
1 clove fresh garlic, minced
Pinch of coarse sea salt or kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Prepare the matzo chips .
  • Slice the cucumbers in half lengthwise. With a spoon, scoop out and discard the pulp. Chop into 1/2-inch pieces. Place into a large salad bowl.
  • Thinly slice the endive and place into the bowl. Lay the mint leaves in a pile and tear them; they will bruise if you cut them with a knife. Add to the bowl. Toss in the parsley, tomatoes, and arugula. Mix in the lemon juice, olive oil, and garlic. Season with salt and pepper, tossing to combine. Allow to marinate for a few minutes.
  • Stand 2 matzo chips in each salad.

SPINACH AND FATOUSH SALAD WITH SIRLOIN STEAK



Spinach and Fatoush Salad with Sirloin Steak image

1 pound sirloin steak
Coarse salt and freshly ground pepper
1/2 cup fresh lemon juice
3/4 teaspoon ground cumin
1 tablespoons olive oil
4 scallions, thinly sliced, white parts only
1 English cucumber, peeled, seeded and thinly sliced
1 pint cherry tomatoes, halved
1 (15-ounce) can chickpeas, drained and rinsed
1/2 cup roughly chopped flat-leaf parsley
1/2 cup roughly chopped mint
1 bag pre-washed baby spinach
16 pieces pita chips, recipe follows
2 (6-inch) whole wheat pitas
Olive oil spray
1/4 teaspoon ground cumin
Coarse salt and freshly ground pepper

Steps:

  • Season the sirloin with salt and pepper. Sear the steak in a heavy-bottomed pan for 4 to 5 minutes until medium rare.
  • In a large bowl whisk together lemon juice, salt, ground cumin, and olive oil. Add scallions, cucumbers, tomatoes, chickpeas, parsley, and mint. Toss to combine. Add spinach and pita. Toss to combine, taste and adjust seasonings.
  • Thinly slice the sirloin (portion control the meat according to your needs). Mound the salad onto a large plate. Top with overlapping pieces of the sirloin steak. Serve immediately.
  • Preheat the oven to 350 degrees F.
  • Cut each pita into 8 pieces. Lightly spray the pita with olive oil. Sprinkle with cumin and season with salt and pepper, to taste. Place on a baking sheet and bake until crisp, shaking the pan halfway through cooking, about 10 to 15 minutes

Every year my garden is over grown with mint. I'm always looking for new ways to use my fresh garden herbs. This recipe uses fresh mint, parsley and cilantro and is one of our favorite side dishes during the summer. Traditionally, the pita bread is toasted until crisp, crushed by hand, and then sprinkled over the salad before serving. Cooking Light 1998

1 cup red bell pepper, sliced into strips
1 cup yellow bell pepper, sliced into strips
1 cup peeled cucumber, thinly sliced
4 vine ripened tomatoes, cut into 1/4 inch wedges
1/2 cup red onion, thinly sliced
3 tablespoons finely chopped mint
3 tablespoons finely chopped parsley
3 tablespoons finely chopped cilantro
2 garlic cloves, crushed
2 teaspoons high quality olive oil
2 tablespoons lemons, juice of
salt & freshly ground black pepper, to taste
2 pita breads, to serve

Steps:

  • Place the bell peppers, cucumbers, tomatoes, scallions, mint, parsley and cilantro in a large bowl.
  • In a seperate bowl combine the garlic with the olive oil and lemon juice.
  • Season to taste with salt and freshly ground black pepper.
  • Pour the dressing over the salad and toss lightly to mix.
  • Toast the pita breads in a toaster until crisp and serve along side (or crumbled on top) of salad.

This traditional Israeli salad makes a light and healthy side dish.

1 eight-ounce red bell pepper, seeded, deveined, and cut into 1-inch pieces
1 thirteen-ounce cucumber, cut into 1-inch pieces
2 bunches arugula leaves (3 1/2 ounces)
1 1/2 pounds ripe tomatoes, cut into 1-inch pieces
4 scallions (2 1/2 ounces), trimmed and cut into 1/2-inch pieces
3 tablespoons freshly squeezed lemon juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon Zahtar
1 tablespoon olive-cured olive oil (See Cook's Note)
6 ounces whole-wheat pita bread, toasted and cut into 1 1/2-inch pieces
2 wedges Preserved Lemons, rinsed and finely chopped
1/4 ounce low-salt feta cheese, optional

Steps:

  • Combine red pepper, cucumber, arugula, tomatoes, and scallions in a large bowl. In a small bowl, combine the lemon juice, salt, black pepper, and zahtar. Use a fork to whisk in the olive oil. Drizzle over salad, and toss to combine.
  • Just before serving, toss in toasted pita. Sprinkle preserved lemons and crumbled feta, if desired, over salad.
