HEALTHIER POPPY SEED SALAD DRESSING FOR 2
I'm always trying to make lighter salad dressings. Recently, I learned the trick of using water and cornstarch to replace most of the oil in dressing recipes. This version is much healthier and soo yummy!

Steps:
- Mix water, vinegar, sugar, olive oil, cornstarch, salt, onion powder, mustard powder, and poppy seeds in a saucepan. Bring mixture to boil; cook, whisking constantly, until dressing is thickened, 30 seconds. Remove from heat and cool.

- Whisk together first 4 ingredients until smooth.
- Blend in poppyseeds.
- this is best when chilled before using.
- Can use handheld electric beater for larger amounts.
- This recipe can easily be doubled or more, but don't increase the sugar subsitute the same way. You need to do a taste test to decide how much more you would like.
