1 (1 ounce) package hidden valley ranch dressing mix
1 cup light mayonnaise (Best Foods or Hellman's)
1 cup nonfat milk

Steps:

  • In a shakable container, combine the dressing mix, the mayonnaise and the milk.
  • Shake until well blended.
  • Refrigerate at least 30 minutes before serving.
  • Enjoy!

1/4 cup sugar
4 teaspoons dried basil, crushed
4 teaspoons dried onion flakes

  • Combine all ingredients and mix well.
  • For dressing, combine 1/4 cup mix with 1/2 cup water. Blend into 3/4 cup mayonnaise. Shake well before serving.

1 cup nonfat milk
1 ounce hidden valley ranch dressing mix (1 packet)

Steps:

  • Mix ingredients together with electric mixer (smooths out the yogurt better than hand mixing). Add salt and pepper to taste.
  • Chill at least 30 minutes.

Packaged ranch dressing mix is so incredibly versatile. It's also loaded with salt and MSG. I've found a lot of copycat recipes, but most of them still have a lot of salt in them. Here's my version. When mixing up dressing or dip, let it sit in the fridge for at least an hour before serving to let it thicken and allow the flavors time to come out.

15 saltine crackers
1/2 cup dried onion flakes
2 cups dried parsley flakes
1/2 cup onion powder
1/2 cup garlic powder
2 tablespoons dried dill weed
1 tablespoon ground black pepper
1/4 teaspoon cayenne pepper (if you like a little bite to it)

Steps:

  • Crumble saltines into a blender. Add onion flakes and parsley. Pulse until the mixture is a fine powder.
  • Pour the mixture into a bowl. Add the rest of the ingredients and mix well.
  • Store in an airtight container.
  • To make salad dressing, add 1 1/2 to 2 tablespoons mix to 1 cup mayo and 1 cup buttermilk. Mix well.
  • To make dip, add 2 to 3 tablespoons mix to one 16 oz container of sour cream. Mix well.

My reverse-engineered recipe for this popular packaged dressing mix yields 6 batches. You can actually substitute chicken bouillon granules for vegetable bouillon granules, if you're not serving vegetarians. Xanthan gum, an emulsifier, is sold in health food stores.

6 tablespoons cultured dry buttermilk (SACO brand)
2 tablespoons vegetable bouillon granules
4 teaspoons garlic powder
4 teaspoons onion powder
4 teaspoons powdered sugar
1 tablespoon Accent seasoning
1 tablespoon Butter Buds
1 tablespoon dried chives
1 teaspoon lemon pepper
1 teaspoon mustard powder
1 1/2 teaspoons citric acid
1 1/2 teaspoons celery salt
1 1/2 teaspoons salt
1 1/4 teaspoons xanthan gum
1/4 teaspoon paprika
1 teaspoon dried chives
1 teaspoon dried dill
1/2 teaspoon dried parsley

Steps:

  • WHISK all of the SPICE MILL INGREDIENTS into a medium bowl.
  • FUNNEL half of mixture into a clean spice mill or coffee grinder; MILL for 5 seconds.
  • TRANSFER mixture to a resealable container; REPEAT milling procedure with remaining mixture.
  • ADD the SHAKE-IN HERBS to milled mixture in container; SEAL the container; SHAKE until thoroughly blended.
  • STORE tightly sealed in a cool, dry place.
  • FOR A SALAD DRESSING: In a bowl, combine 1 cup whole milk with 1 cup mayonnaise and 3 tablespoons of this seasoning. Mix well. Cover. Let stand in refrigerator 30 minutes to thicken. Stir before serving.
  • FOR A CREAMIER SALAD DRESSING: In a bowl, combine 1 cup mayonnaise, 1/2 milk, 1/2 cup sour cream, and 3 tablespoons of this seasoning. Mix well. Cover. Let stand in refrigerator 30 minutes. Stir before serving.
  • FOR A CHIP DIP: In a bowl, combine 16 ounces sour cream with 3 tablespoons of this seasoning. Cover. Let stand in refrigerator 30 minutes. Stir before serving.
  • FOR A VEGETABLE DIP: In a bowl, combine 1 cup sour cream and 1 cup mayonnaise with 3 tablespoons of this dressing. Cover. Let stand in refrigerator 30 minutes. Stir before serving.
