Creamy Parmesan Roasted Onion Slices image

"Silly onion. How can you be so bitter and make me cry, but then turn around to be so sweet and make me swoon?" Swoon, indeed! These onions are so rich, sweet and delicious with any kind of meat, or no meat at all! They make a beautiful presentation, also. Warning: You will want to drink the sauce!

4 medium sweet onions, ends removed, sliced about 1/4-inch thick
3 Tbsp olive oil
1 c heavy cream
1/4 c white wine
1/3 c parmesan cheese, fresh grated
salt and pepper

Steps:

  • 1. Preheat oven to 375. Take care not to disturb the onion slices. Keep them together and intact. Place them on a parchment lined baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for 15 minutes.
  • 2. Meanwhile, in a small saucepan, bring cream and wine to a simmer, just until it gets bubbly around the edges. Remove from heat and set aside.
  • 3. Now remove the onions from the oven and very carefully transfer them to a shallow baking dish. Turn the oven up to 450. Slowly pour the cream mixture over the onions and sprinkle each with parmesan cheese.
  • 4. Cover the dish with foil and return to the oven for 20 minutes. Uncover and bake for 5 more minutes until onions get browned and caramelized.
