Number Of Ingredients 12

2 cups uncooked elbow macaroni
1 cup fat-free mayonnaise
2 tablespoons sweet pickle relish
2 teaspoons sugar
3/4 teaspoon ground mustard
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup chopped celery
1/3 cup chopped carrot
1/4 cup chopped onion
1 hard-boiled large egg, chopped
Dash paprika

Steps:

  • Cook macaroni according to package directions; drain and rinse with cold water. Cool completely. , For dressing, in a small bowl, combine the mayonnaise, pickle relish, sugar substitute, mustard, salt and pepper. In a large bowl, combine the macaroni, celery, carrot and onion. Add dressing and toss gently to coat. , Refrigerate until serving. Garnish with egg and paprika.

I wanted a different macaroni salad and this one takes the cake. It has so many different vegetables, textures and flavors this is my all time favorite. Pinched from Better Homes and Gardens cookbook.

Number Of Ingredients 13

1 cup(s) elbow or wagon wheel macaroni
3/4 cup(s) cubed cheddar cheese
2 stalk(s) chopped celery
1/2 cup(s) frozen peas
1/2 cup(s) thinly sliced radishes
2 tablespoon(s) thinly sliced green onion or chopped onion
1 cup(s) mayo or miracle whip whichever you like better
1/2 cup(s) sweet or dill relish or sweet or dill chopped pickles
2 tablespoon(s) milk
2 tablespoon(s) horseradish mustard
1/4 teaspoon(s) salt
dash(es) pepper
2 - chopped hard boiled eggs

Steps:

  • Cook pasta according to directions, drain.Rinse with cold water drain again.
  • In a large bowl combine cooked pasta, cheese, celery, peas, radishes, and green onion.
  • For dressing, in a small bowl, stir together the mayo, pickle/relish, milk, mustard, salt and pepper.
  • Pour dressing over pasta mixture. Add chopped eggs. Toss lightly to coat. Cover and chill for 4 to 24 hours. Before serving stir in additional milk to moisten.
