Cold Chicken Salad With Exotic Curry and Chutney Dressing image

Here's a unique and delicious take on chicken salad that has an interesting list of ingredients that combine for an exotic yet mild flavor. For a spectacular presentation, serve in a hollowed out loaf of crusty bread. Cut into wedges, bread and all, to serve. The original recipe is from a cookbook by Susan Brown Draudt entitled "Food Processor Cookery," published by HPBooks, Inc. in 1981 and 1984. Please note the recipe does not require a food processor and is a great way to use leftover roast chicken. Even the dark meat! For best results, please use Major Grey mild mango chutney with ginger and McCormick red curry powder. Both are widely available in larger supermarkets with international foods sections.

4 chicken breasts
1 (8 ounce) can water chestnuts
3 stalks celery
2 green onions
1 (20 ounce) can pineapple chunks
1 cup walnuts
1/2 cup chutney
8 ounces sour cream
1/2 cup mayonnaise
1 teaspoon curry powder

Steps:

  • For best results, please use Major Grey mild mango chutney with ginger and McCormick red curry powder.
  • Cook and cool chicken, cut in 1/2 inch dice. Drain water chestnuts pat dry and quarter. Cut celery in half the long way and dice about 1/4 inch. Thinly slice green onions, white and green parts. Drain pineapple, pat dry and quarter each chunk. Toast walnuts and chop coarsely.
  • Combine all salad ingredients in a large mixing bowl and stir gently with a large rubber spatula, In a separate small bowl, combine chutney, sour cream, mayonnaise and curry powder. Blend well. Add about half of the dressing to the salad ingredients and stir gently with a large rubber spatula. Add additional dressing to taste, but don't overwhelm the salad with dressing. Save any remaining dressing in the refrigerator. Turn the salad into a clean serving bowl and cover. Refrigerate for at least 4 hours until very cold.

2 cups water
1 cup sugar
1 teaspoon grated ginger
1 inch long by 1/4-inch wide strip of lime peel
1/8 teaspoon turmeric or saffron
2 whole cardamom pods, crushed, 1 whole star anise and 1 cinnamon stick
2 tablespoons fresh lime juice

Steps:

  • Simmer the water and sugar, ginger, lime peel, turmeric or saffron, whole spices for 5 minutes. Let cool and strain out spices. Stir in fresh lime juice before serving over fruit.

4 kiwi, diced
1 fresh mango
1 large orange, diced
1 fresh papaya, diced
1 1/2 cups strawberries, diced

1 slice lime peel

1/2 cup cream of coconut
1/3 cup red wine vinegar
1 teaspoon ground mustard
1 teaspoon salt
1 garlic clove, minced
1 cup canola oil
3 cups cubed cooked chicken
3/4 cup chopped celery
3/4 cup seedless red grapes
3/4 cup chopped macadamia nuts
Lettuce leaves
Toasted flaked coconut

Steps:

  • In a blender container, combine cream of coconut, vinegar, mustard, salt and garlic. Cover and process until smooth. With motor running, slowly add oil in a steady stream. Set aside., In a large bowl, combine chicken, celery, grapes and nuts. Add dressing and toss well to combine. Serve in lettuce leaves and sprinkle with coconut.

This is another recipe from the "Creme de Colorado" cookbook, it is the best Spinach salad I've ever had! Very easy to prepare, in fact, it can all be prepared ahead and just tossed together when ready to eat. This is also the best Poppyseed dressing I've ever eaten. I fixed this last night and hardly ate anything BUT the salad, it's that good! Recipe makes 8 side salad servings, but if you want it as a main dish type salad I would figure on half the servings.

8 cups Baby Spinach
1 papaya, peeled and cut into 1/2 , pieces 1 mango, peeled and cut into 1/2, pieces
1 cup strawberry, sliced
1 kiwi, sliced
1/3 cup sugar
2 tablespoons sesame seeds
1 tablespoon poppy seed
1 1/2 teaspoons grated onions
1/4 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/4 cup cider vinegar
1/2 cup vegetable oil

Steps:

  • Combine all dressing ingredients except oil in blender and blend until well combined. Slowly drizzle in oil until dressing is thickened and set aside.
  • Mix spinach and fruits when ready to serve and add dressing and toss.
  • NOTE: If dressing is prepared ahead and refrigerated, be sure to take it out before serving as it will be too thick to toss, let sit out at room temperature so it can reliquify.

2 tbsp pumpkin seeds
1 ripe papaya
1 ripe avocado
50g bag trimmed and washed watercress
half small pack fresh mint
juice of half lime
1 tbsp olive oil

Steps:

  • Dry-fry the pumpkin seeds in a frying pan for a few minutes, tossing and turning them until they look toasted. Tip them out of the pan and let them go cold. Peel the papayas, halve them lengthways and scoop out the seeds. Cut the flesh into long, thin slices. Halve the avocados and remove the stones, then peel off the skin and slice the flesh lengthways into thin slices.
  • Put the papayas, avocados, pumpkin seeds and watercress into a large bowl. Chop about 1 tbsp of the mint leaves and set aside. Pick the remaining leaves from the stalks and tear them into the bowl.
  • Mix the lime juice and olive oil with the rest of the chopped mint to make a dressing, and season with salt and pepper to taste. Pour over the salad and gently mix all the ingredients together with your hands. Taste and add more salt and pepper if you think it needs it, then transfer to a serving platter.

1 mango, seeded and cubed
1 (15 ounce) can loganberries, drained

2 tablespoons light soya sauce
3 tablespoons vinegar
2 tablespoons honey
salt and pepper
4 green onions
fresh ginger (grate a piece the size of your thumb nail)
4 medium carrots
2 tablespoons oil
2/3 cup apricot (dried but soft)
1 -2 tablespoon curry powder
1 cup water
1 cup orange juice
2 cups basmati rice (cooked)
2 kiwi fruits

Steps:

  • Dressing;.
  • For the dressing, into a small bowl add vinegar, soya sauce, and salt and pepper to taste and blend well. Set aside.
  • Salad;.
  • Prepare vegetables.
  • Grate carrots.
  • Wash green onion and cut into small rings.
  • Peel and grate ginger.
  • Chop apricots into small pieces.
  • Put oil into a pan and heat, add green onion, ginger, and 2/3 of the carrots; saute until soft.
  • Sprinkle with the curry powder and turn into vegetables.
  • Fold the apricots into the pan with other vegetables.
  • Add a little salt then pour in orange juice and water.
  • Stir, deglazing the bottom of the pan.
  • Let cook on medium heat for about 5 minutes.
  • Add the rice and mix well.
  • Turn off heat and let sit for a few minutes so that the rice can obsorb some of the cooking juices.
  • Add the set aside dressing and left over grated carrot and toss into the rice mixture.
  • Check seasoning should be a little spicy and have sweet and sour flavor, adjust if necessary.
  • Put into a serving bowl and decorate with kiwi slices.
  • This can be eaten hot or cold.
