Elephant Deli Tomato-Orange Soup, Very Quick image

Got this recipe from our local paper, many years ago. It is quick and good, another family favorite. Can be made with bottled pre-squeezed orange juice, but fresh orange juice is better.

1/2 cup butter (1 stick)
1 medium onion, diced
2 (14 1/2 ounce) cans tomatoes (diced or pureed)
2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon baking soda
1 teaspoon dried thyme
2 cups fresh orange juice
1/2 cup cream (heavy or whipping)

Steps:

  • Sautee onions in butter, in soup pot until transparent.
  • Add canned tomatoes with their juice, salt, pepper, baking soda and dried thyme.
  • Bring to boil, then reduce heat and simmer uncovered for 15 minutes.
  • Add orange juice and cream, heat through and serve, hot.

1 stick unsalted butter
1/2 med onion, diced
2 (14.5 oz) cans diced tomatoes
1 tsp salt
1/2 tsp cracked black pepper
1/4 tsp baking soda
1/2 tsp dried thyme
1 cup fresh orange juice
1/2 cup heavy cream

Steps:

  • Melt butter in 3 qt saucepan. Add onion and saute until translucent. Add tomatoes, salt, pepper, baking soda and thyme. Bring to a boil, reduce heat and simmer uncovered about 15 minutes or until slightly thickened. Puree with immersion blender. Stir in orange juice. At this point, the soup can be refrigerated until ready to serve. At serving time, add ceam and heat gently, stirring constantly. Adjust seasonings if necessary. Extra cream may be drizzled on top of the soup immediately before serving for decorative effect.

Steps:

  • In a saucepan, melt butter; add onion and saute until translucent. Add tomatoes, salt, pepper, baking soda and thyme. Return to saucepan and stir in orange juice. At this point, the soup can be refrigerated until ready to serve. At serving time, add the whipping cream and heat gently, stirring constantly, bringing to a simmer and adjust seasonings if necessary. Extra cream may be drizzled on top of the soup immediately before serving for decorative effect.

A friend gave me some sample curry pastes from the company Blue Elephant:Royal Thai Cuisine, and oh joy, they have recipes on the back! This one uses the Tom Yam Chili Paste(Hot), the description reads "Combined with lemongrass and galanga, this aromatic paste will give you a hot and sour "Tom Yam" soup..". Kaffir lime leaves are available in most Asian supermarkets. Storing it here, when I've made it, I'll update.

500 ml water
1 chicken stock cube
5 g galangal, sliced
1 lemongrass, sliced and crushed
2 kaffir lime leaves
2 small red chilies, crushed
8 mushrooms, quartered
6 prawns, headless
1 1/2 tablespoons fish sauce
20 g chili paste
1 tablespoon lime juice
5 g coriander leaves

Steps:

  • Bring 500 ml water to the boil, add chicken stock cube.
  • Add sliced galangal, lemongrass, kaffir lime leaves, crushed chillies and quartered mushrooms.
  • Bring back to the boil.
  • Add prawns, fish sauce and chilli paste.
  • Simmer until cooked through.
  • Remove from heat, add lime juice.
  • Garnish with fresh coriander.

450 g beef (boneless beef neck)
3 tablespoons peanut oil
1 onion, peeled
1 carrot, peeled
100 g celery root, peeled
100 g parsley roots, peeled
1500 ml beef stock, from 1 cube (up to 2000 ml)
2 onions, finely chopped
1 cup peanuts, shelled, dry and roasted, chopped (or 1/2 cup peanut butter)
1 cup cooked lentils or 1 cup dried peas
1 small leek, finely chopped
1 cup button mushroom, sliced
2 tablespoons butter
1/2 teaspoon sea salt
1/2 teaspoon ground black pepper
1/2 cup cream

Steps:

  • Cut the meat into bite-sized pieces and sauté, divided into 2 batches, in peanut oil until golden brown.
  • Meanwhile, make a mirepoix (soffritto or Holy trinity) from onion, carrot, celery and parsley root: cut the onion and root vegetables into smaller chunks and coarsely chop in a blender.
  • Add mirepoix to the meat, cook for 1 - 2 minutes.
  • Add beef broth and simmer for 45 minutes.
  • Add the onions, peanuts, lentils, mushrooms, and leek. Stir and cook until the lentils are completely disintegrated.
  • Adjust the seasoning and add the butter and cream.

1 lb yukon gold potato, peeled and cut into half inch pieces
1 head elephant garlic
1 tablespoon olive oil
4 cups chicken stock
1/4 cup thinly sliced scallion
salt & pepper

Steps:

  • In a medium soup pot over medium heat, saute the garlic with the potatoes and olive oil for approximately 5 minutes or until the garlic is slightly golden.
  • Add the chicken stock and salt and pepper to taste.
  • Turn the heat to high and bring to a boil and reduce to a simmer for approximately 20 minutes or until the potatoes are very soft.
  • Remove the soup and puree in a food processor or blender until smooth.
  • Transfer back into the sauce pot and stir in the scallions and serve.

carrot, celery, onion, bay leaf
salt & pepper
1 T veg oil
2 T butter
1 med onion, diced
3 stalks celery, diced
1 T minced garlic
1/2 tsp tarragon
1/2 tsp oregano
2 tsp Hungarian sweet paprika
2 tsp Kosher salt
1/2 tsp black pepper
1/2 cup plus 2 T Wondra
4 cups reserved broth
4 cups chicken broth
1 can diced tomatoes w/juice
3/4 cup cream
2 cups thinly sliced spinach

Steps:

  • Cook chicken and aromatics in crockpot until tender; 6-8 hours on low. Cube 3 cups meat. Reserve 4 cups broth. Heat oil and butter and saute onions and celery til onions are translucent, 6-7 minutes. Add garlic, tarragon, oregano, paprika, salt and pepper. Cook, stirring, 3-4 min. Add Wondra and stir until well-combined. Slowly whisk in broth and bring to a boil. Add tomatoes and cream. Reduce heat and simmer 20 minutes. Add reserved chicken and simmer 10 min. Just before serving, stir in spinach.

1 C chopped button mushrooms
1/4 C peeled and chopped parsnips
1/2 C chopped leeks, white part only
1 1/2 t evoo
1/3 C white wine
3 C chicken stock
1 1/2 T heavy cream
1 t salt
1/2 t black pepper
-2 T thinly sliced scallions

Steps:

  • 1. Preheat oven to 350. Place elephant garlic on a S baking pan and cover w/ aluminum foil. Roast for 15 minutes or until soft. 2. In a L saucepan, saute mushrooms, parsnips, and leeks in evoo over M heat until translucent. Add wine and cook until almost dry. 3. Add chicken stock and bring to a boil. Reduce heat and simmer until vegetables are tender about 15 minutes. Add garlic, transfer to blender container and puree. Stir in heavy cream, salt, and pepper. Stir in scallions.
