1 package spice cake mix (regular size)
2-1/2 cups old-fashioned oats
3/4 cup butter, melted
2 packages (8 ounces each) cream cheese, softened
1/2 cup sugar
1/8 teaspoon ground nutmeg
1/2 cup eggnog
2 tablespoons all-purpose flour
3 large eggs
1 can (14 ounces) whole-berry cranberry sauce
2 tablespoons cornstarch

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides; grease paper., In a large bowl, combine cake mix and oats; stir in melted butter. Reserve 1-1/3 cups crumb mixture for topping; press remaining mixture onto bottom of prepared pan., In a large bowl, beat cream cheese, sugar and nutmeg until smooth. Gradually beat in eggnog and flour. Add eggs; beat on low speed just until blended. Pour over crust., In a small bowl, mix cranberry sauce and cornstarch until blended; spoon over cheesecake layer. Sprinkle with reserved crumb mixture. Bake 50-55 minutes or until edges are brown and center is almost set., Cool 1 hour on a wire rack. Refrigerate at least 2 hours. Lifting with parchment, remove cheesecake from pan. Cut into bars.

Vegetable oil cooking spray, for pan
12 graham crackers, finely ground (1 1/2 cups)
3/4 cup plus 3 tablespoons sugar
2 ounces (4 tablespoons) unsalted butter, melted
1 pound cream cheese, room temperature
2 large eggs
1 large egg yolk
3/4 cup eggnog
1 tablespoon plus 1 1/2 teaspoons all-purpose flour
1 tablespoon plus 1 teaspoon brandy
1 teaspoon pure vanilla extract
1/2 teaspoon freshly grated nutmeg, plus more for dusting
1/4 teaspoon salt

Steps:

  • Preheat oven to 350 degrees. Coat a 9-inch square baking pan with cooking spray. Stir together graham crackers, 3 tablespoons sugar, and the melted butter. Press into bottom of pan. Bake until crust is just brown around the edges, 12 to 15 minutes. Let cool.
  • Meanwhile, beat cream cheese with a mixer on medium speed until fluffy, about 2 minutes. Add the remaining 3/4 cup sugar, the eggs, yolk, eggnog, flour, brandy, vanilla, nutmeg, and salt; beat until smooth. Pour filling over crust. Set pan in a roasting pan, and add enough hot water to come halfway up sides of baking pan. Bake until just set, 40 to 45 minutes. Remove baking pan from water bath, and transfer to a wire rack. Let cool slightly, about 30 minutes. Refrigerate for at least 3 hours or overnight.
  • Cut into 1 1/2-by-3-inch bars. Lightly dust tops of bars with freshly grated nutmeg just before serving.

5 egg yolks
1/4 cup sugar

1/2 teaspoon ground nutmeg

Steps:

  • Heat oven to 350°F. Line bottom and sides of 9-inch square pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan. In small bowl, stir together butter, 1/2 cup sugar and the flour. Press in bottom and 1/2 inch up sides of foil-lined pan. Bake 20 minutes.
  • Reduce oven temperature to 300°F. In small bowl, beat egg yolks and 1/4 cup sugar with electric mixer on medium-high speed until thick. Gradually beat in cream, rum and 1/4 teaspoon nutmeg. Pour over baked layer.
  • Bake 40 to 50 minutes at 300°F until custard is set and knife inserted in center comes out clean. Cool completely, about 1 hour.
  • Sprinkle tops of bars evenly with 1/2 teaspoon nutmeg. Using foil handles, lift cooled bars from pan to cutting board; remove foil from sides of bars. With sharp knife, cut into 6 rows by 6 rows. Cover; store in refrigerator.

18 oz danish butter cookies
2 tablespoons brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
5 tablespoons melted butter
16 oz cream cheese, room temperature
1 ¼ cups granulated sugar, divided
¼ cup sour cream
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 teaspoons rum extract
1 teaspoon vanilla extract
1 cup vanilla-spiced eggnog
½ oz gelatin powder
½ qt heavy whipping cream

Steps:

  • Line a 9 x 13-inch (22 x 33 cm) baking dish with parchment paper.
  • Make the crust: In a food processor, pulse the cookies into coarse crumbs. Add the brown sugar, cinnamon, nutmeg and pulse into fine crumbs, about 2 minutes. Add the melted butter and pulse until the mixture clumps together, about 10 pulses.
  • Pour the crust into the prepared baking dish and press evenly against the bottom of the pan. Chill in the refrigerator for 15 minutes, until set.
  • Meanwhile, make the filling: in a large bowl, beat the cream cheese and ¾ cup granulated sugar together with an electric hand mixer on medium speed until smooth, 3-4 minutes.

2 cups cinnamon graham cracker crumbs
9 tablespoons unsalted butter, melted
12 ounces cream cheese, softened
2/3 cup sugar
2 teaspoons cornstarch
1 large egg
2 large egg yolks
1/3 cup heavy cream
3 tablespoons brandy or 3 tablespoons dark rum
1 1/2 teaspoons vanilla extract
1/4 teaspoon freshly grated nutmeg
1/2 cup heavy cream
5 ounces white chocolate, chopped
freshly grated nutmeg

Steps:

  • Make the crust: position oven rack in the center of oven; preheat to 350°; line a 13x9 inch baking pan with foil so that the foil extends 2 inches beyond the short ends of the pan; lightly grease the foil.
  • In a bowl, combine graham cracker crumbs and melted butter; transfer crumbs to prepared pan and pat them into an even layer.
  • Bake for 8 minutes, or until it is slightly puffed and set.
  • Place pan on a wire rack and let cool while you make the filling; decrease oven temperature to 325°.
  • Make the filling: in the bowl of an electric mixer, using the paddle attachment, beat the cream cheese and sugar at medium speed until smooth and light, about 1 minute.

  • Make the topping: in a small saucepan, bring the cream to a gently boil.

  • Let the mixture stand for 30 seconds to melt the chocolate, then stir until the chocolate is completely melted and the mixture is smooth.
  • Set the topping aside to cool, stirring occasionally, for 15 minutes or until thickened.
  • Pour the topping over the chilled bars, and using a small offset metal spatula, spread evenly.
  • Refrigerate the bars for at least 2 hours before cutting (or freeze for 1 hour).
  • Lift the bars out of the pan using the foil as handles.
  • Remove the foil and cut into 24 bars; serve chilled, dusted very lightly with freshly grated nutmeg.

5 - egg yolks
1 can(s) sweetened condensed milk ( 14 oz. )
1/2 cup(s) eggnog
1 tablespoon(s) rum or rum extract
1 teaspoon(s) vanilla extract
1/4 teaspoon(s) ground nutmeg

TO MAKE THE CRUST -

Steps:

  • In a large bowl, stir togeather the cookie mix and flour, using a pastry blender, cut in butter untill mixture resembles fine crumbs, then stir in the 1/2 cup of finely chopped macadamia nuts. Press the crumb mixture into the prepared pan, Bake in the pre- heated oven 12 to 15 minutes untill edges are lightly browned.The crust should still be hot when you pour in the filling.   • For the Filling - In a medium Bowl, whisk the egg yolks, sweetened condensed milk, eggnog, rum OR rum extract, vanilla, and the 1/4 tesp. nutmeg, untill very well combined. Pour the mixture over the HOT Crust.
  • Bake for 15 to 20 minutes or untill the filling is set, Cool IN the pan on a wire rack for 1 hour . Then Cover and put in Refrigerator to completely cool, at least 1 hour ( note I would make mine the day before needed ) When cold, using the overlapped foil lift UNCUT bars out of panpull foil away from Bar Edges and cut into Bars .
  • If a Topping is Desired - In a Medium Bowl , Combine the whipping Cream and Powdered Sugar , Beating with an Electric Mixer on Medium, untill soft peaks form, ( when lifting up beaters, tips will curl ) also if desired, sprinkle on some finely chopped macadamia nuts, top with whipping cream and also if you like you could sprinkle on a little nutmeg. FOR STORAGE - Layer Bars between sheets of Waxed Paper in an Airtight Container; Cover Store up to 3 days OR you can Freeze them ( without any topping ) for up to 3 Months - These need to be Kept in the Refrigerator till ready to be served .

1 17 1/2 ounce package sugar cookie mix
2 tablespoons all-purpose flour
1/2 cup butter
1/2 cup finely chopped macadamia nuts
5 egg yolks
1 14 ounce can sweetened condensed milk
1/2 cup eggnog
1 tablespoon rum or 1 teaspoon rum extract
1 teaspoon vanilla
1/4 teaspoon ground nutmeg
3/4 cup whipping cream (optional)
2 tablespoons powdered sugar (optional)
Macadamia nuts, chopped (optional)
Freshly grated nutmeg or ground nutmeg (optional)

Steps:

  • 1. Preheat oven to 350 degrees F. Line a 13x9x2-inch baking pan with foil, extending foil over the pan edges. Lightly grease foil. Set pan aside. For crust, in a large bowl, stir together cookie mix and flour. Using a pastry blender, cut in butter until mixture resembles fine crumbs. Stir in 1/2 chopped macadamia nuts. Press crumb mixture into prepared pan. Bake in the preheated oven for 12 to 15 minutes or until edges are lightly browned. 2. For filling, in a medium bowl, whisk together egg yolks, sweetened condensed milk, eggnog, rum, vanilla, and 1/4 teaspoon nutmeg until well combined. Carefully pour the filling over the hot crust. 3. Bake for 15 to 20 minutes more or until set. Cool in pan on a wire rack for 1 hour. Cover and chill in the refrigerator for 1 hour or until completely cool. 4. Using the foil, lift the uncut bars out of the pan; pull foil from bar edges. Cut into bars. 5. If desired, in a medium bowl, combine whipping cream and powdered sugar. Beat with an electric mixer on medium speed until soft peaks form (tips curl). If desired, serve bars topped with whipped cream mixture sprinkled with chopped macadamia nuts and additional nutmeg. Makes 36 bars.

One year I thought it would be great to have a caroling party and serve several beverages, include eggnog, which no one touched. Since I did not want to toss out a half gallon of it, I looked for a recipe to use it up. In the end, I took a little for several recipes I found and came up with this delightful treat. -Barbara Lento, Houston, Pennsylvania

1-1/2 cups crushed gingersnap cookies (about 30 cookies)
3/4 cup sliced almonds
1/2 cup butter, melted
9 ounces white baking chocolate, divided
3/4 cup chopped dried apricots
1 package (8 ounces) cream cheese, softened
2 teaspoons apricot brandy, optional
2 cups eggnog
1 large egg, lightly beaten

Steps:

  • In a small bowl, combine the crushed cookie crumbs, almonds and butter. Press onto the bottom of an ungreased 11x7-in. baking dish. Bake at 350° until golden brown, 8-10 minutes. Cool on a wire rack., Chop 8 oz. white chocolate. In a small saucepan, melt chopped chocolate; cool. Sprinkle apricots over crust., In a large bowl, beat cream cheese until smooth. Beat in the melted chocolate and, if desired, brandy. Gradually beat in eggnog. Add egg; beat on low speed just until combined. Pour over crust., Place baking dish in a larger baking pan; add 1 in. of boiling water to larger pan. Bake, uncovered, at 350° until center is just set (mixture will jiggle), 55-60 minutes., Remove baking dish from water bath; cool on a wire rack. Cover and refrigerate until firm, about 2 hours. Chop and melt remaining chocolate; drizzle over top. Cut into bars. Refrigerate leftovers.

1-1/2 cups graham cracker crumbs
3 Tbsp. melted butter
1 Tbsp. sugar
1/4 tsp. grated nutmeg
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
2/3 cup sugar
12 oz. eggnog (full fat variety)
2 tsp. vanilla
4 eggs
eggnog spice or nutmeg for garnish

Steps:

  • PREHEAT oven to 325°F.
  • MIX graham cracker crumbs, butter and 1 Tablespoon sugar in a bowl. Press into the bottom of a 9x13 baking pan.
  • BEAT cream cheese, 2/3 cup sugar, eggnog and vanilla until well blended. Add eggs, 1 at a time, mixing on low speed after each addition until well blended. Gently pour over crust.
  • BAKE for 45 minutes or until center is almost set. Run knife around the rim of a pan to loosen the sides; cool. Refrigerate for 4 hours.
  • WHEN ready to serve, slice into squares and sprinkle with eggnog spice or nutmeg.

1 1/2 teaspoons brandy or rum flavoring
2 1/4 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup eggnog
1 cup chopped candied cherries (optional)
1/2 cup chopped almonds (optional)
3/4 cup powdered sugar
approx 1 teaspoon eggnog

Steps:

  • Cream butter and sugar; add in 1 teaspoon flavoring. In a sperate bowl combine flour, soda, nutmeg, and salt. Add dry ingredients alternately with eggnog to creamed mixture. Stir in cherries and nuts. Spread in greased 15 1/2 x 10 1/2 x 1 inch baking pan. Bake at 350 degrees for 18 to 20 minutes. Mix powdered sugar, remaining 1/2 teaspoon flavoring, and enough eggnog to make mixture spreadable. Spread on warm cookies. Cool; cut into bars
