In order not to waste egg yolks and to save time, I like to use a carton of liquid egg whites. Egg whites tend to be rubbery, so adding in the cottage cheese helps make them creamier. You can store extras in the freezer and reheat as needed.

5 small tri-color baby potatoes, thinly sliced
¼ stick butter
10 small eggs
1 small tomato, finely chopped
1 small yellow bell pepper, finely chopped
½ cup fresh spinach
¼ cup chopped ham
¼ cup chopped white onion
1 slice mozzarella cheese, cut into 12 cubes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 12-cup muffin tin with nonstick cooking spray.
  • Place a thin layer of potato slices in the bottom of each muffin cup. Add a little butter on top.
  • Bake in the preheated oven for 5 minutes.
  • Mix eggs, tomato, bell pepper, spinach, ham, and onion together in a large bowl. Remove muffin tin from oven and ladle the egg mixture over the potatoes. Top each muffin cup with a mozzarella cube.

9 mini sweet peppers (about 9 ounces), cut into 1/2-inch pieces, sautéed until tender
12 strips cooked bacon, crumbled into large pieces
6 slices American cheese, crumbled into large pieces
3/4 cup shredded cooked chicken (about 8 ounces)
3 tablespoons Buffalo chicken sauce
3/4 cup crumbled blue cheese

Steps:

  • Preheat the oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray.
  • Crack the eggs into a large bowl, add the salt and whisk to combine. Divide the mixture evenly among the muffin cups. Top with desired variation ingredients. Bake until the centers of the muffins no longer jiggle, 17 to 20 minutes.

Ready-To-Go Egg Bites image

8 ounces Mexican chorizo
1/2 yellow onion, diced
4 large eggs
1/4 cup heavy cream
1/4 cup sour cream
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
Nonstick cooking spray, for the mold
1/3 cup grated Monterey Jack cheese

Steps:

  • Heat a large skillet over medium heat. Add the chorizo and onion and cook, stirring often, until the onion is soft and the chorizo is fully cooked, 5 to 6 minutes. Transfer to paper towels to drain the excess grease. Set aside to cool.
  • Combine the eggs, heavy cream, sour cream, salt and pepper in a large bowl. Whisk until light and fluffy, about 1 minute.
  • Generously coat the cups of a silicone egg bites mold (you can find them online!) with cooking spray. Divide the cheese among the cups. Divide the chorizo and onion among the cups. Then fill the cups with the egg mixture, leaving a little space at the top.
  • Multi-cooker directions: Set the trivet in a multi-cooker, then carefully pour 1 cup water into the pot. Cover the mold snugly with foil and carefully lower it onto the trivet.
  • Secure the lid on the multi-cooker and set the pressure valve to sealing. Press the steam button and set it to 10 minutes. (Note: It will take several minutes for the pressure to build, after which the 10-minute timer will automatically start counting down.)
  • After the 10 minutes are up, let the pressure release naturally for 10 minutes, then use the handle of a wooden spoon to move the valve to venting, which will let the rest of the pressure release quickly.
  • When the pressure is fully released, carefully remove the lid. Remove the silicone mold from the machine. Peel back the foil and turn the egg bites onto a plate. They should pop right out!
  • Standard oven directions: Preheat the oven to 325 degrees F. Pour water into a 9-by-13-inch baking dish until it's halfway full. Set the mold in the baking dish, then cover the baking dish with foil. Bake until the eggs are set, about 1 hour. Let the mold sit in the water for 10 minutes before removing the egg bites from the mold.
  • Freezing and reheating instructions: Freeze by placing the bites on a lightly greased sheet pan or plate and freeze for 45 minutes. Transfer to a plastic zipper bag and return to the freezer.
  • To reheat 1 or 2 bites, wrap in a paper towel and microwave for 1 minute. Let sit for 1 minute before eating.

2 ounces cottage cheese
1/3 cup monterey jack cheese, grated
1/3 cup gruyere cheese, grated
8 slices bacon, fully cooked, coarsely chopped
1/4-1/2 teaspoon hot sauce, your preferred brand, use less if you would not like spicy eggs
1 teaspoon kosher salt
1 (16 ounce) can cooking spray

Steps:

  • Make filling:.
  • In a medium bowl, whisk together eggs, cottage cheese, gruyere, Monterey jack, bacon, hot sauce and salt.
  • Form Eggs:.
  • Using a very small bowl (a custard cup, or a 5 oz ramekin will work well), press a 10- inch square of plastic wrap into the bowl, so the wrap is fully adhered to the sides of the bowl. There should be about 2 inches of plastic wrap left hanging over the edges of the bowl. Spray the plastic wrap in the bowl as well as the overhang, liberally with nonstick spray. Spoon the egg filling into the bowl, leaving 1/8'' at the top. Form an air-tight bundle around the eggs; lift the sides of the plastic wrap on all sides just enough to twist the plastic wrap so that it encloses the egg. There should be no air in the bundle. Tie tightly with kitchen string, or a length of plastic wrap. Repeat with remaining filling, remembering to spray the plastic wrap each time.

  • In a large pot, bring 6 inches of water to a simmer (185 - 200°F.)   • Drain oil from tomatoes, reserving 1/2 teaspoon. Chop tomatoes finely and place in a small bowl. Add reserved oil, vinegar, garlic powder, salt, and pepper. Stir to combine and set aside. Combine eggs, cottage cheese, goat cheese, heavy cream, and 1/2 teaspoon salt in a blender; mix until thoroughly blended, 15 to 20 seconds.
  • Spray mason jars with cooking spray. Divide tomato mixture among the jars. Top with egg mixture. Screw on the lids until just barely tightened. Do not over-tighten as the jars can burst in the hot water.
  • Submerge mason jars into the water bath and set timer for 55 minutes.
  • Remove jars to a cooling rack. Run a knife along the outer edge of each egg bite and invert onto a plate, or eat directly from the jar. Let any remaining jars cool, then refrigerate for up to 1 week.

½ cup shredded Gruyere cheese
½ cup cottage cheese
¼ cup chopped spinach
½ jarred roasted red pepper, diced
1 green onion, chopped

Steps:

  • Add 1 cup water to a multi-functional pressure cooker (such as Instant Pot®). Place a steaming rack in the bottom of the pot.
  • Combine eggs, Gruyere cheese, and cottage cheese in a blender; process until smooth. Add spinach, roasted red pepper, and green onion to the blender. Pulse to combine. Divide mixture evenly amongst the indentations of a silicone egg bites mold. Tightly cover with aluminum foil and place onto the rack inside the Instant Pot®.
  • Close and lock the lid. Select Steam function according to manufacturer's instructions. Make sure vent is set to sealing. Set timer for 10 minutes. Allow 5 to 10 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Remove silicone mold from the pot and allow egg bites to cool about 5 minutes before serving.

This recipe has been in my recipe box a long time- I don't remember where I got the recipe showing this photo. I have been collecting recipe for so long , about 56 years. This is a great recipe to serve at Easter brunch. I like this recipe because it is a little different than the regular deviled egg recipes.

6 large hard cooked eggs, finely chopped
3 slice crisp cooked bacon, crumbled
1/4 c mayonnaise
1 tsp minced onion
1/4 tsp seasoned salt
1/8 tsp fine white pepper
1/4 tsp prepared mustard
1 c finely shredded cheddar cheese

Steps:

  • 1. In a medium bowl, combine the first 7 ingredients until creamy. Using the white of the egg and the yolk. Shape into 1-inch balls. Roll in cheese. Cover and chill until serving.
  • 2. Note: For Christmas I like to add some parsley to some of the cheese and roll 1/2 the balls in this. The other half I mix a little paprika with the cheese and roll them in this.

  • Place the eggs in a medium pot and cover with cold water by 1 inch. Bring to a boil over medium-high heat. Then remove from heat, covered, and set aside for 10 minutes.
  • In a non-stick pan, heat bacon over low heat until crisp, drain out excess oil and set aside.
  • When eggs are ready, remove with a slotted spoon and transfer to a bowl of cold water. Return same pot of water to the stove on medium high heat until water reaches a boil again. Blanch asparagus in boiling water for 1 minute. With a slotted spoon, transfer asparagus to a bowl of ice water, then drain and pat dry with a paper towel. When eggs are cool to handle, remove from water and cut in half, lengthwise, then spoon out the eggs from the shells and dice.
  • In a small mixing bowl, add eggs, asparagus, bacon, mayonnaise, mustard, salt and pepper. Gently stir until ingredients are well coated. Spoon a tablespoonful of bacon and egg salad onto Pretzel Crisps®. Serve immediately.

Like most people, my mornings are rushed. I love to make these on the weekend for a quick, protein-filled breakfast during the week. They reheat well and are good for 5 days in the fridge. The texture is light and airy.

6 jam jars
3 tablespoons coconut oil, or as needed
2 ounces black forest ham, diced
¼ cup diced red bell pepper
6 large eggs
¼ cup 10% cream
½ cup shredded medium Cheddar cheese
½ teaspoon salt
1 pinch freshly ground nutmeg

Steps:

  • Fill a stockpot with enough water to just cover the jars. Attach a sous vide immersion cooker to the side of the pot. Set temperature to 172 degrees F (77 degrees C).
  • Generously oil the inside of each jar with coconut oil. Add ham and red pepper to the bottom of the jars.
  • Whisk eggs and cream together in a bowl until well combined. Stir in Cheddar cheese, salt, and nutmeg. Divide egg mixture among the jars. Close jars with lids and metal bands; tighten using the tips of your fingers only. Do not over-tighten.
  • Immerse in the water bath and cook for 1 hour. Carefully remove the jars, using tongs, to a heat-resistant surface. Let rest 10 minutes before opening the jars.
