This is the only way I can get kids to eat zucchini, and the adults enjoy it as well. It really is good; it was included in the school cookbook at the request of my daughter. This recipe is a request at all my holiday meals. Try it, and I think your family will like it!

4 cups diced zucchini
1/2 cup chopped onion
1 garlic clove, crushed
2 tablespoons butter or 2 tablespoons margarine, melted
2 tablespoons all-purpose flour
1 teaspoon salt
3 ounces evaporated milk
1/2 cup sour cream
1/2 cup shredded cheddar cheese

Steps:

  • Saute zucchini, onion, and garlic in melted butter in a large skillet 5 minutes or until vegetables are crisp-tender; remove from heat.
  • Sprinkle flour and salt over sauteed vegetables, tossing gently to combine. Stir in evaporated milk, sour cream, and cheese.
  • Spoon zucchini mixture into a 1 quart casserole dish. Bake at 375 degrees for 20 minutes or until cheese melts and it is hot and bubbly.

4 cups unpeeled shredded zucchini
1/2 teaspoon salt
2 eggs
1/2 cup grated parmesan cheese
1 cup shredded cheddar cheese, divided (or to taste)
2 cups mozzarella cheese, divided (or to taste)
1 lb ground beef
1 -2 tablespoon minced fresh garlic
salt and pepper
1 onion, chopped
1 (15 ounce) can Italian-style tomato sauce (tomato sauce, with 1/4 tsp. each, oregano and basil)
1 medium green pepper, seeded and chopped

Steps:

  • Set oven to 400°F.
  • Grease a 13x9 pan.
  • Place zucchini in strainer; sprinkle with salt.
  • Let drain for 10 minutes.
  • Squeeze out moisture.
  • Combine zucchini with eggs, parmesan cheese, and half of the cheddar and mozzarella cheese.
  • Press into greased 13x9 baking pan.
  • Bake at 400°F for 20 minutes.
  • Meanwhile, brown ground beef with garlic and onions, season with salt and pepper; drain any fat, and add/mix the tomato sauce; spoon over baked zucchini mixture.
  • Top with remaining cheeses, and sprinkle with green pepper.
  • Return to oven and bake for another 20 minutes more.

3 medium zucchini
1 jalapeño, seeds and membranes removed, diced
1/2 cup diced green onion
2 garlic cloves, minced
4 oz cream cheese, softened
1/2 cup sour cream
1 1/2 tablespoons ranch dressing mix (dry)
1/2 teaspoon kosher salt
4 oz cheddar cheese, shredded
6 slices bacon, cooked and crumbled - divided use
1 sleeve Ritz Crackers (35 crackers)
3 tablespoons butter, melted
non stick cooking spray

Steps:

  • Preheat oven to 375°.
  • Wash and dry zucchini and remove ends. Slice into 1/4- inch slices. Set aside.
  • Combine cream cheese, sour cream, Ranch Dressing Mix and kosher salt.
  • Stir in jalapeño, green onions and garlic.
  • Mix in shredded cheese and half of the bacon.
  • In another bowl, crush crackers into crumbs, use the bottom of a heavy glass or just crush with your fingers. Add melted butter and remaining bacon and mix to combine.
  • Spray a 9 X 9 inch baking dish with non stick cooking spray.
  • Layer half of zucchini covering the bottom of the dish.
  • Spread cream cheese mixture over zucchini in an even layer. Top with remaining zucchini, overlapping to cover all of the cream cheese mixture.
  • Top with cracker and bacon mixture.
  • Bake for 30 minutes or until cream cheese mixture is bubbly and cracker topping is golden brown.

1 egg yolk
1 cup sour cream
1 Tbsp. finely chopped onions
1/2 tsp. paprika
3/4 lb. (12 oz.) VELVEETA, cut into 1/2-inch cubes
5 zucchini, thinly sliced
4 tomatoes, sliced
2 cups croutons
1 Tbsp. butter, cut into small pieces

Steps:

  • Heat oven to 350°F.
  • Mix first 4 ingredients in medium bowl until blended. Stir in VELVEETA.
  • Spread zucchini onto bottom of 13x9-inch pan sprayed with cooking spray; cover with sour cream mixture. Top with remaining ingredients.
  • Bake 45 min. or until zucchini is tender and casserole is heated through.
