My husband has never been a fan of meatloaf, claiming it is always to "bready," dry and flavorless. After tasting this recipe, he's a new fan.

Number Of Ingredients 17

1 lb ground beef (80/20)
1 1/4 tsp salt
1/4 tsp fresh ground black pepper
1/2 c onion, finely chopped
1/2 c green bell pepper, finely chopped (or pablano pepper)
1/2 c red or yellow pepper, finely chopped
1 Tbsp canola oil
1 egg, lightly beaten
10 oz can rotel "original"
1/2 c quick-cooking oats
1 Tbsp worcestershire sauce
TOPPING:
8 oz tomato sauce (basil, garlie & oregano)
6 oz tomato paste (basil, garlic & oregano)
1/4 c sugar (or splenda)
2 tsp apple cider vinegar
2 tsp yellow mustard

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In a small mixing bowl, whisk together topping ingredients and set aside.
  • 3. In a large mixing bowl, add ground beef, salt and pepper. With a fork, lightly "stir/separate" ground beef.
  • 4. In a skillet with a small amount of canola oil, saute onions and peppers for 8 to 10 minutes or until onions become translucent. Remove from heat.
  • 5. Add egg, Rotel, oats, Worcestershire sauce and sauteed pepper mixture to hamburger. Gently mix with clean hands until ingredients are incorporated.
  • 6. Transfer to a 13x9 baking pan and shape meat mixture into a "loaf." Pour topping mixture on top and sides if desired.
  • 7. Bake uncovered for 1 hour. Let stand 10 minutes before serving.

I love real home-style meatloaf, but have been trying to cut down on beef and have been disappointed with pure turkey meatloafs - this one I invented and it is GOOD!!

Number Of Ingredients 6

1 1/2 lbs ground turkey
1/2-3/4 lean ground beef
1/2-1 cup Italian breadcrumbs
1/2 cup Egg Beaters egg substitute
1 -1 1/2 cup salsa
1/4 cup catsup (or more - if you like catsup - or you could add more salsa and save the salt)

Steps:

  • Mix everything together well and shape into a loaf size- I like to use a larger roasting pan and put diced potatoes around the edges.
  • Roast at 350 for around 1 to 1 1/2 hr- ENJOY!
