EASY APPLE RHUBARB JAM
Although apple rhubarb jam may sound weird, it is amazingly delicious! You can substitute strawberries for the apples to make strawberry rhubarb jam.

Steps:
- In a large saucepan mix together the rhubarb, apples, sugar, water and cinnamon. Bring to a boil, then cook over medium heat for 20 minutes or until the fruit is soft. Stir in the pectin and boil for 5 minutes.
- Ladle into sterile jars, wipe rims with a clean cloth or paper towel, and seal with new lids. Process in a bath of simmering water for at least 10 minutes, or as recommended by your local extension if you are at a high altitude. Store unopened jars in a cool dark place. Refrigerate jam after opening.

- In a large saucepan or stock pot, combine the rhubarb, sugar and pineapple. Bring to a boil over medium-high heat. Boil for 10 minutes, stirring frequently. Jars can be sterilized at the same time.
- After the rhubarb mixture has boiled for 10 minutes, remove from heat, and stir in strawberry flavored gelatin powder. Transfer to sterile jars, seal with lids, and process for 15 minutes in a boiling water bath. Allow jars to cool in a draft-free area. Refrigerate jars after seal has been broken.

KITTENCAL'S EASY RHUBARB-STRAWBERRY REFRIGERATOR JAM

- In a large saucepan stir together the fresh rhubarb with the sugar; cover with a lid and let stand 24 hours.
- After the 24 hours bring the rhurbarb and sugar to a boil over medium heat.
- Reduce heat to low and boil stirring constantly for 12 minutes.
- Remove from heat and gently stir in the gelatin powder until completely combined.
- Transfer to sterilized glass jars and refrigerate.

- 1. In a large bowl mix rhubarb and sugar. Cover and let sit overnight in refrigerator. The next day put rhubarb in a large saucepan. Bring to a boil. Reduce heat to a simmer and cook for 10 minutes. Meanwhile cut peaches in peach pie filling into small pieces. When rhubarb has cooked the full 10 minutes stir in peaches and bring back up to a boil.
- 2. Remove from heat. Mix in jello and stir until dissolved. Add food coloring. Mix well. Spoon jam into 7 half pint canning jars leaving 1 inch head space as jam will expand when frozen. Screw on lids and allow jam to cool. Freeze until ready to use. After jars ae opened store in refrigerator.
EASY RHUBARB JAM
I like this recipe because it doesn't use other fruits or vegetables... pure and simple... old fashioned. This is another recipe from my great grandmother Sullivan.

Steps:
- 1. Cook rhubarb and water until tender,add sugar and lemon juice and stir together well. Cook over medium-high heat for 10 minutes or until you reach a boil that can not be stirred down. Add Jello and stir until dissolved. Bring to a boil for 2 minutes. Fill sterilized hot jars to 1/4 inch from rim of jars. Remove bubbles, wipe jar rims with hot damp cloth. Seal in jars to fingertip tight. Put in boiling bath canner with lid on for 15 minutes. Remove lid from canner, let sit 5 minutes. Remove jars from canner to a towel lined counter to sit and cool for 24 hours before storing.
- 2. **** if you need a little water, don't be afraid to add it whild cooking down the rhubarb... but go sparingly as the rhubarb creates liquid..
EASY RHUBARB JAM
Got a few rhubarb plants from my neighbor. Wanted to try something different or at least I thought. Found this in a old church cookbook. Everyone who tried it was impressed--even non rhubarb eaters.

- Let mixture come to a rolling boil.
- Boil 2 minutes, stirring often.

- Put Rhubarb into a bowl, pour sugar over Rhubarb. Cover and let stand on the counter overnite, or all day. depending on when you want to make it. (for at least 8 hours anyway)
- After sitting on the counter overnight, Pour mixture into a med saucepan and cook until soft. (about 15 to 20 minutes) stiring constantly. Remove from heat and add the dry package of jello. mix well
- Put into hot jelly jars and top with hot lids. Makes 4 cups (4 1/2 Pint jelly jars)
