RIDICULOUSLY EASY QUESO FRESCO "DIP"



Ridiculously Easy Queso Fresco

On a recent trip to the local Costco®, I ended up purchasing a huge thing of queso fresco, or Mexican white cheese. Not sure what to do with it, I created this modified dip that goes perfectly with any Mexican-themed meal! It's so ridiculously easy, and looks much more refined than classic chile con queso. Serve with tortilla chips and enjoy! Reheat as needed.

1 (12 ounce) package queso fresco
1 (16 ounce) jar salsa
1 bunch fresh cilantro, chopped
1 jalapeno pepper, seeded and diced
2 dashes hot pepper sauce (such as Frank's RedHot®)

Steps:

  • Slice queso fresco in half horizontally, creating 2 rounds. Transfer to a shallow microwave-safe baking dish.
  • Spread salsa evenly over queso fresco and pour any residual juices around the dish for the queso fresco to marinate in. Top with cilantro, jalapeno, and hot sauce. Cover with plastic wrap and let marinate, at least 2 hours, preferably longer.
  • Heat queso fresco in the microwave until slightly softened, about 3 minutes.

2 lbs Velveeta cheese
10 ounces rotel (any variety)
4 ounces chopped green chilies
10 3/4 ounces cream of celery soup (you won't taste it)
12 ounces evaporated milk

Steps:

  • Mix the last four ingredients together in a large, non-stick pot. I use my dutch oven.
  • DO NOT DRAIN any of the veggies. Dump the liquid in along with everything else.
  • Cube the velveeta and add to the canned ingredients.
  • Cook over low heat until the velveeta melts.
  • Stir often.
  • This makes a lot! But, it warms up great in the microwave.
  • Serve with chips or use to top enchiladas or even use in quesadillas.
  • Variation: Try adding some spicy ground meat or canned chili (with or without beans). Add other veggies like black olives or onion, too.

3/4 lb good quality white american cheese (pay extra for the good stuff), chopped
1/2 lb good quality fontina cheese, chopped
1 cup half-and-half
2 tablespoons canned jalapeños, finely chopped (you can also use green chilis for a milder flavor)
1⁄2 teaspoon cumin
1 teaspoon ground nutmeg
1 teaspoon red pepper flakes
1⁄4 teaspoon salt
1⁄4 teaspoon black pepper
chopped cilantro, tomatoes, and jalapeños for garnish

Steps:

  • Heat ½ and ½ over medium heat in a medium sized non-stick skillet.
  • Once simmering (don't allow to boil), reduce heat to low and stir in the cheese.
  • Stir constantly until fully melted.
  • Stir in the jalapeños, cumin, nutmeg, red pepper, and salt and pepper.
  • Place skillet in the oven and broil for 3-4 minutes or until cheese begins to bubble and brown (optional)
  • Top with cilantro, tomatoes, and more jalapeños if desired.
  • Serve with tortilla chips and enjoy!
  • (Dip can be kept in an airtight container in the fridge for 3-4 days. Microwave with a splash of half and half or milk to keep it creamy)
