I like to get this dish started before leaving for work in the morning. When I get home, my supper's ready! It's a hearty slow cooker meal that is also good for a potluck. 1 boneless pork loin roast (3 pounds)
1 medium onion, sliced
3 cans (15 ounces each) pork and beans
1-1/2 cups barbecue sauce
1/4 cup packed brown sugar
1 teaspoon garlic powder

Steps:

  • Cut roast in half; place in a 5-qt. slow cooker. Top with onion. In a large bowl, combine the beans, barbecue sauce, brown sugar and garlic powder; pour over meat. Cover and cook on low for 6-8 hours or until meat is tender. , Remove roast; shred with two forks. Return meat to slow cooker; heat through.

Easy Pork Roast and Beans image

Wanted to pretend it was summer so I made a summery meal. Baked beans, pork roast, mashed cauliflower, and deviled eggs.

1 small boneless pork roast
1 can(s) northern beans, lightly drained
1 can(s) chili beans, lightly drained
1/3 cup(s) brown sugar, firmly packed
1.4 cup(s) molasses
1 teaspoon(s) diced garlic from a jar
1 small onion, diced
- any pork rub or seasoning. i used grill mates pork rub that i found at family dollar for $2.

Steps:

  • Preheat oven to 325 degrees. Rub the roast with the rub and put fat side down in a covered baking dish in the oven. In another baking dish put the beans, molasses, onion, garlic and sugar together and place in oven. NOTE: I didn't combine the first 1 1/2 hours so the grease wouldn't be in the beans.
  • After an hour and a half remove the pork roast and place fat side up into the beans dish and continue baking for another 1 1/2 hours decreasing the heat to 300 degrees.

My Mom's Pork Roast with Beans image

My mom used to make this often. It is one of my family's favorites. Even kids will love the beans. We don't make pork roast any other way anymore.

4 pound(s) pork loin roast
2 can(s) bush's great northern beans (16oz)
1/4 cup(s) brown sugar
2 sprig(s) whole bay leaf
3 tablespoon(s) white vinegar
1 large onion chopped
- salt and pepper to taste

Steps:

  • Brown roast over medium heat searing all sides. In separate bowl mix the beans, onions, brown sugar, bay leaf and vinegar. Pour over roast. Salt and pepper to taste. Cover and bake at 350 degrees for 3 hours. Serve with fresh mashed potatoes.

This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

2 tablespoons olive oil
1 teaspoon kosher salt
1 tablespoon ground black pepper
1 (3 pound) boneless top loin pork roast

Steps:

  • Combine oil, pepper, and salt in a bowl; rub oil mixture over pork and refrigerate while oven preheats.
  • Preheat an oven to 475 degrees F (245 degrees C).
  • Place a roasting rack in a large roasting pan; arrange pork on the roasting rack.
  • Roast in preheated oven until pork with browned, about 30 minutes. Remove pork from oven and reduce oven heat to 325 degrees F (165 degrees C). Allow pork to rest uncovered at room temperature for 30 minutes. An instant-read thermometer inserted into the center should read between 115 degrees F (46 degrees C) and 140 degrees F (60 degrees C).
  • Return to oven and continue to cook until pork is slightly pink in the center, 15 to 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  • Let the roast stand uncovered at room temperature for 15 to 20 minutes before slicing and serving.

1 lb dried navy beans, about 2 cups
5 lbs pork shoulder blade roast, trimmed
1 1/2 teaspoons kosher salt, divided
1/4 teaspoon pepper
2 tablespoons fresh sage, divided
1 1/2 cups shallots, sliced-about 8 medium
5 cups water
3 sprigs fresh sage
1/2 cup dried cranberries

Steps:

  • Sort and wash beans; place in a large Dutch oven.
  • Cover with water to 2 inches above beans; cover and let stand 8 hours. Drain.
  • Preheat oven to 350.
  • Sprinkle roast with 1 t salt and pepper.
  • Rub surface of roast with 4 t minced sage.
  • Heat a Dutch oven over med high heat.
  • Coat pan with cooking spray.
  • Add roast to pan; cook for 15 min, turning to brown on all sides.
  • Remove roast from pan.
  • Add shallots to pan; saute 3 min or til tender.
  • Return roast to pan.
  • Add remaining 1/2 t salt, beans, 5 cups water, and sage sprigs to pan; bring to a simmer.
  • Cover and bake at 350 for 2 hours. Add cranberries and bake another 30 min or til tender.
  • Remove sage sprigs; discard.
  • Remove roast from pan; shred meat with 2 forks.
  • Sprinkle with remaining minced sage.
  • Serve roast with bean mixture.
