My southern coleslaw recipe uses peach yogurt for a tangy, sweet dressing. Make it in just 30 minutes to enjoy summer flavor all year long!

2 cups green cabbage (shredded )
1 cup purple cabbage (shredded )
1 large carrot (shredded)
8 oz peach yogurt
2 tbsp apple cider vinegar
1 tsp dried tarragon
¼ tsp salt
¼ tsp ground black pepper

Steps:

  • In a small mixing bowl using a whisk, mix together the yogurt, vinegar, tarragon salt and pepper.
  • In a large bowl add the shredded cabbages and carrot and mix thoroughly.
  • Pour the dressing over the cabbage mixture and mix thoroughly to incorporate completely and keep chill covered for 20 minutes. Serve with pulled pork sandwiches.

¼ cup mayonnaise
1 ½ teaspoons Dijon mustard
1 tablespoon Asian chile pepper sauce (such as sambal oelek)
½ lemon, juiced
2 tablespoons rice vinegar
1 tablespoon vegetable oil
½ teaspoon white sugar
salt to taste
1 pinch cayenne pepper, or to taste
½ (2 pound) cabbage - quartered and thinly sliced
2 fresh peaches, pitted and chopped
1 tablespoon thinly sliced fresh chives
1 teaspoon thinly sliced fresh chives for garnish

Steps:

  • Whisk mayonnaise, Dijon mustard, Asian chile sauce, lemon juice, rice vinegar, vegetable oil, and sugar in a bowl until dressing is smooth. Season with salt and cayenne pepper.
  • Place cabbage into a large bowl; add peaches and 1 tablespoon chives. Lightly toss until combined. Pour dressing over coleslaw and stir until coated.
  • Cover coleslaw with plastic wrap and chill until flavors have developed and cabbage is slightly softened, about 30 minutes. Adjust seasoning, mix again, and sprinkle with 1 teaspoon chives before serving.

3 peaches, pitted and cut into eighths
Olive oil, for tossing
1/2 cup mayonnaise
3 tablespoons apple cider vinegar
2 tablespoons honey
1 teaspoon Dijon mustard
1 teaspoon salt

1 cup thinly sliced red bell peppers
1/2 cup thinly shredded cabbage
1/2 cup shredded carrots
1/4 cup diced red onions

  • Preheat the grill to medium heat.
  • Toss the peaches in some oil and grill until charred, about 2 minutes per side.

One 14-ounce bag coleslaw mix (traditional mix of green cabbage and carrots)
1/2 small onion
2 tablespoons plus 2 teaspoons sugar
1/4 cup plus 2 tablespoons mayonnaise
2 teaspoons apple cider vinegar
1/8 teaspoon dry mustard powder
Pinch paprika
Kosher salt

Steps:

  • Working with half of the bag at a time, chop the coleslaw mix into 1/8-inch pieces (about the width of the carrots). Transfer to a large bowl. Dice enough of the onion into 1/8-inch pieces to yield 1/4 cup. Transfer to a fine-mesh strainer and rinse with cold water for 1 minute to soften the flavor. Gently wring out the onions in a paper towel and then stir into the coleslaw mix.
  • In a pint jar or other container with a tight-fitting lid, stir together the sugar and 3 tablespoons water until the sugar dissolves a bit. Add the mayonnaise, vinegar, mustard powder, paprika and 1/2 teaspoon salt, put on the lid and shake vigorously until completely combined. Stir the dressing into the coleslaw, then set aside for 10 minutes to marinate and soften, stirring a few times. Add more salt, if needed. The coleslaw will keep, covered in the refrigerator, for up to 1 day.

1 cup pecan pieces
1 head savoy cabbage, sliced
8 fresh peaches, pitted and sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
½ cup chopped green onions
2 tablespoons celery seed
½ cup fresh peaches, pitted and chopped
½ cup vegetable oil
¼ cup honey
¼ cup lemon juice
salt and pepper to taste
1 bunch fresh mint sprigs

Steps:

  • Place the pecan pieces in a skillet over medium heat, and cook, stirring constantly, until lightly toasted.
  • In a large bowl, mix the pecans, cabbage, 8 fresh peaches, red bell pepper, yellow bell pepper, green onions, and celery seed. Cover and chill 45 minutes in the refrigerator.
  • In a blender or food processor, blend the 1/2 cup chopped peaches until smooth. Transfer to a bowl, and mix with the oil, honey, lemon juice, salt, and pepper. Chill until slaw is ready to be served, then toss with slaw to coat. Garnish slaw with mint sprigs.
