EASY SLOW COOKER MEXICAN CHORIZO CHILI
I modified a bean soup recipe and came up with this wonderful chili. I make it mild, as that's how my family likes it, then I just add Tabasco sauce to mine. A fun alternative to traditional chili!

Steps:
- In a crock pot (slow cooker), mix the beans (with their liquid), salsa, chicken broth, corn, cumin and Rotel tomatoes.
- Then take the casing off the sausages and break into bite-sized pieces and put into the crock pot.
- Cook on low for 5 hours.
- Let cool for about 20 minutes, then add salt and Tabasco sauce to taste.
- Serve in bowls with avocado, a dollop of sour cream and cilantro to garnish on top.

EASY MEXICAN CHICKEN CHILI
It doesn't get any easier than this folks! Throw everything in one pot and let it heat up - soooo yummy! Pretty healthy too unless you add sour cream, cheese, and salt on top like I do. :-) We usually double or triple my recipe b/c this is a favorite! The proportions are easy to multiply too. This is also a great "base recipe"...

Steps:
- 1. Melt butter over medium heat. Add onion and cook until tender. Add flour, salt and pepper; stir until well blended. Gradually stir in chicken broth, until thickened. Stir in chicken, beans, green chiles, and corn. Simmer about 5 minutes until heated through.
- 2. Top with cheese and salsa. Enjoy! PS. This is not an exact science; more or less of pretty much anything can be used. Make it your own!

Very easy to make...and tastes yummy!!! I'm not one who likes traditional chili, but I love Mexican food. I came across this by accident one day while making a casserole...my whole family loves this...I hope you do too!!

Steps:
- Brown ground beef and onion, until meat is no longer pink and onion is soft.
- Add the water and taco seasoning.
- Simmer until most of the water is evaporated.
- Add the beans and the cheese dip.
- If mixture is still too thick to your liking, add more water.
- Simmer on low for 10 minutes.
- Garnish with your favorite toppings.
