- Cook macaroni in boiling salted water according to package directions. Drain well.
- Place warm macaroni in a large bowl; toss with 2 tablespoons vinegar.
- Stir in cubed cheese, ham, peas, and onion. Set aside to let noodles absorb the vinegar.
- Prepare dressing in a separate smaller bowl: Whisk together mayonnaise, 1 tablespoon vinegar, sugar, salt, and pepper.
- Pour over the macaroni mixture and stir until well combined.
- Cover and chill for at least an hour before serving. Or, chill overnight to allow the flavors to fully meld.

- Prepare the pasta: Fill a large bowl (big enough to hold cooked pasta) halfway with ice water. Boil pasta to package instructions. Drain pasta, rinse with cold water and shock the pasta by adding it to the cold water to get it cold fast. Once cold, drain the pasta, transfer to a large bowl and set aside.
- In bowl large enough to fit all the pasta, make the dressing first: add mayo, vinegar, sugar, mustard, garlic powder, paprika, salt and pepper. Whisk until well combined.
- Add the pasta, ham, boiled eggs, celery, onion, bell pepper and parsley. Combine all ingredients together. Taste for seasonings and add more salt if necessary. Chill pasta salad for at least 1 hour before serving.

I never seem to make enough of this salad. When people see the recipe, they look at me as if I am a little odd...but when they eat it they can't seem to stop! This recipe is great for kids and adults alike. The garlic is optional. Also, to lighten up the salad, substitute light mayonnaise, light sour cream, and turkey ham.
