Easy Layered Fruit Salad image

To dress up a fresh fruit salad, Linda Cowan tops it with a sweet creamy concoction. "The original recipe called for heavy whipping cream, but I lightened it up a little," she details from Fayette, Alabama. "Served in a cut-glass bowl, this salad looks elegant on any table. It's quick and easy to make but looks like you fussed."

2 cups sliced fresh peaches
2 cups fresh blueberries
2 cups sliced fresh strawberries
2 cups halved green grapes
1 package (8 ounces) reduced-fat cream cheese
1/2 cup confectioners' sugar
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed
1/4 cup chopped pecans

Steps:

  • In a 2-1/2-qt. glass bowl, layer the fruits in the order listed. In a bowl, beat the cream cheese and confectioners' sugar until smooth; fold in whipped topping. Spoon over fruit. Refrigerate until serving. Sprinkle with pecans.

1 head lettuce, torn into bite-size pieces
1 cup diced green pepper
1/4 cup sliced green onions
1 package (10 ounce) frozen peas, thawed
2 cups Miracle Whip
2 to 4 cups shredded cheddar cheese

Steps:

  • In a 13x9-in. pan, layer lettuce, green pepper, onions and peas; do not toss. Spread Miracle Whip over all; sprinkle with cheese. Cover and refrigerate overnight.

1 large iceburg lettuce head, sliced
28 oz black beans, canned, rinced & drained
16 oz corn, canned *if frozen defrost & drain*
2 large tomatoes, chopped
1 medium red onion, chopped
8 oz sharp cheddar cheese, shredded *more if you wish*
1 large bag of tortillas, crushed
DRESSING
16 oz chipotle salsa
16 oz avocado ranch dressing
2 Tbsp cumin powder
1 tsp garlic powder
juice & zest of one lime

Steps:

  • 1. Combine dressing ingredients in a mixing bowl. Add sliced lettuce to a large serving dish or pan. Layer beans, corn, onion, tomatoes and dressing on top. Chill in fridge until ready to serve.
  • 2. Right before serving, add cheese and crushed tortilla chips on top. Enjoy
