1 onion, chopped
1 tablespoon butter or 1 tablespoon oil
3 (14 ounce) cans chicken broth
1 (32 ounce) bag frozen hash browns
1 (10 1/2 ounce) can cream of celery soup
1 (10 1/2 ounce) can cream of chicken soup
1 1/2 cups milk
1 lb Velveeta cheese
bacon bits (optional)

Steps:

  • Saute onion in butter or oil until transparent.
  • Add broth, bring to boil.
  • Add hash browns, bring to boil.
  • Add soups (don't dilute) and milk, bring to boil.
  • Add Cheese and Heat until cheese melts. Optional, serve with bacon bits on top.

2 (10.75 ounce) cans cream of celery soup
2 cups sour cream
2 cups shredded Cheddar cheese
1 (2 pound) package frozen hash brown potatoes, thawed
2 cups crushed corn flakes
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir cream cheese, cream of celery soup, sour cream, and Cheddar cheese in a large bowl until thoroughly combined. Gently fold hash brown potatoes into soup mixture. Stir corn flakes with melted butter in a separate bowl. Spread potato mixture in an even layer into a 9x13-inch baking dish; sprinkle buttered corn flakes over the top.
  • Bake until casserole is bubbling and topping has browned, about 1 hour.

1 kg frozen hash browns
2 cups Cracker Barrel sharp cheddar cheese, shredded, for convenience you can also use the shredded cheese blends for an alternative
1 (8 ounce) can mushroom soup or 1 (8 ounce) can condensed golden mushroom soup
500 g sour cream, you may use light if your calorie counting
1 teaspoon salt (optional)
1 1/2 teaspoons pepper (optional)

Steps:

  • Preheat oven to 375 degrees.
  • Lightly grease a 9 x 13 oblong baking dish.
  • Mix until well blended, sour cream, mushroom soup and salt and pepper, set aside.
  • With a grater, shred 2 cups of cheddar cheese.
  • In a large bowl pour in frozen hash browns and cheddar cheese and mix well.
  • Add in in sour cream mixture and be sure to stir together until well blended.
  • Mixture may seem a little dry but trust in that it will be moist when it has finished baking.
  • Pour into baking dish, pat down with a large spoon and bake for 30 to 35 minutes or until it has cooked through and lightly browned all over.
  • Personally all the ingredients I use are no-name products. I shred my own cheese because it is cheaper and add different types of cheese for different flavours. Use your imagination and mix it up a little but make sure you use a creamed soup.
  • You can reduce the ingredients by half if your serving a smaller family or if that just happens to be all you have left in your fridge and/or freezer. You can also make it ahead of time and put it in the freezer so you can just pop it into the oven. For an extra large gathering, just double up on the recipe.
  • Remember it is addictive and it makes a great late night snack heated up in the microwave.

vegetable oil (for frying)
1 (16 ounce) package frozen shredded hash browns, thawed
3 teaspoons seasoning salt (or to taste, or use white salt)
black pepper
8 slices kraft American cheese

Steps:

  • Heat 2-3 tablespoons oil in a skillet over medium heat; add in onion and saute for about 6-8 minutes or until tender (if adding in garlic add in the last 2-3 minutes of cooking).
  • In a bowl mix the thawed hash browns with onion, seasoned salt and pepper.
  • Heat more oil in the skillet; drop the hash brown mixture into about 3-inch rounds (if you find that the mixture has problems holding together then add in an slightly beaten egg).
  • Cook about 4-5 minutes per side, or until lightly browned and crispy (press down with a spatula to flatten).
  • Top each potato round with a slice of cheese; cook until melted.

These potatoes are a staple at my family functions, even my very picky little cousins love them. I usually prepare it a day in advance and bake it when needed.

1 (2 lb) package frozen hash brown potatoes, thawed
1 cup melted butter
1 (10 3/4 ounce) can condensed cream of chicken soup (you can also sub cream of mushroom)
12 -16 ounces shredded cheddar cheese, to taste
1 (8 ounce) container sour cream
1 teaspoon salt
1/2 yellow onion, diced
2 cups corn flakes cereal, crushed

Steps:

  • Preheat oven to 350°F Lightly grease one 13x9 baking dish.
  • Place thawed potatoes in bottom of prepared dish.
  • In a separate bowl combine: 1/2 cup of the melted butter, condensed soup, cheese, sour cream, salt, and onion. Mix well and spread over potatoes.

1/4 c vegetable oil

4 cups frozen hash brown potatoes, divided
black pepper
1 small onion, chopped, divided
10 slices bacon, cooked and crumbled, divided
2 cups cheddar cheese, divided (can use more cheese)
1 (12 ounce) can evaporated milk
1 large egg
2 teaspoons salt (I use seasoning salt)
black pepper
parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • Butter a 8x8-inch baking dish.
  • Layer HALF of the hash brown potatoes in the bottom of the dish, then sprinkle with black pepper, then HALF of the chopped onion, then HALF of the cooked bacon, then half of the cheddar cheese.
  • Repeat the layers.
  • In a small bowl combine the egg with evaporated milk and seasoning salt and pepper; pour evenly over the potato mixture.
  • Top/sprinkle with grated Parmesan cheese (any amount desired).
  • Cover with foil and bake for about 45-50 minutes.
  • Uncover and bake for another 10 minutes (at this point you can sprinkle grated cheddar cheese on top if desired and return to oven).
  • Let sit for about 10-15 minutes before slicing.

2 teaspoons garam masala

  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.

21 ounces cream of chicken soup
2 cups cheese (shredded)

1/2 cup margarine
2 cups crumbled soda crackers (or corn flakes)

Steps:

  • Preheat oven to 350 degrees.
  • Mix everything together in a large bowl, except ingredients for the topping. Place mixture in a 9 x 13inch casserole dish.
  • Melt stick of butter on medium heat and crumble crackers into a bowl. Pour in melted butter and mix until crackers are saturated with the melted butter.
