3 cups all-purpose flour, divided
1 pound chopped candied fruit
2 packages (8 ounces each) pitted dates, chopped
1 package (15 ounces) raisins
1 cup chopped walnuts
1 cup chopped pecans or almonds
1 cup butter, softened
1-1/4 cups packed brown sugar
4 eggs
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/4 cup orange juice
GLAZE:
1 cup confectioners' sugar
2 tablespoons 2% milk

Steps:

  • In large bowl, combine 1/4 cup flour, candied fruit, dates, raisins and nuts; toss until well coated; set aside., In another large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the baking soda, salt, cinnamon, cloves and remaining flour; gradually add to creamed mixture alternately with orange juice, beating well after each addition. Stir in fruit and nut mixture; mix well., Spoon into five greased 5-3/4x3x2-in. baking pans (pans will be full). Bake at 325° for 1 hour. Cover with foil; bake 10-15 minutes longer or until a toothpick inserted in the center comes out clean. Let stand for 10 minutes before removing from pans to wire racks. , In a small bowl, combine glaze ingredients until smooth. With a pastry brush, brush glaze over warm loaves. Cool completely.

½ cup unsalted butter
1 ¼ cups dried mixed fruit
½ cup white sugar
1 tablespoon white sugar
1 teaspoon mixed spice
5 tablespoons milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 6-inch round cake pan.

2 eggs
1/2 cup oil

Steps:

  • Mix well the cake mix, eggs, and oil. Stir in chopped candied fruit and the chopped nuts. Drop with 1" cookie scoop (making walnut-sized balls) onto cookie sheet lined with parchment paper. 175ml flavourless oil, plus extra for greasing
100g light brown muscovado sugar
2 eggs, beaten
225g plain flour
1 tsp baking powder
1 tsp ground cinnamon
½ tsp allspice
½ orange, juiced
½ lemon, juiced
200g mixed dried fruit
200g apricot jam
icing sugar, for dusting

Steps:

  • Heat oven to 160C/140C fan/ gas 3. Grease and line the base of two 20cm springform cake tins with baking parchment.
  • Stir together the oil and sugar, add the eggs, flour, baking powder, spices and juices, and mix thoroughly with a wooden spoon until pourable and reasonably runny. Gently fold in the fruit, then divide the batter evenly between the tins. Bake for 20-25 mins or until a skewer inserted in the centre comes out clean, then leave to cool.
  • When cool, remove from the tins and sandwich the cakes together with jam. Sieve some icing sugar on top to serve.

6 cups golden raisins
1 ½ cups candied mixed fruit peel
1 cup almonds

¼ cup orange juice
5 cups all-purpose flour

  • Preheat oven to 275 degrees F (135 degrees C). Line the bottom and sides of two greased 9 x 5 x 3 inch loaf pans, and 1 round 4 1/2 inch x 3 inch deep pan with brown paper. Grease the paper.

4 tbsp rum or brandy
1 orange , zested and juiced
600g mixed dried fruit (sultanas, raisins, apricots, cherries, cranberries)
200g butter , very soft
200g golden caster sugar
4 eggs
50g ground almonds
200g plain flour
100g pecan nuts or whole skinned almonds, chopped
100g candied peel , chopped
75g crystallised or candied ginger , chopped
apricot jam (warmed and sieved) or apricot glaze
candied pineapple , candied angelica, glacé cherries (a mixture of red, green and yellow if you can find them), crystallised ginger

Steps:

  • Put the rum (or brandy), orange zest and juice and mixed dried fruit in a bowl and stir. Leave to soak overnight.
  • Heat oven to 170C/150C fan/gas 3½. Double line a 20cm tin with baking parchment. Beat the butter and sugar together until light and fluffy. Whisk in the eggs one by one, then fold in the almonds and flour. Add a pinch of salt and fold in the soaked fruit mixture (and any remaining liquid in the bowl), along with the nuts, candied peel and ginger. Spoon the mixture into the tin and level the surface.
  • Bake for 1 hr, then turn the oven down to 150C/130C fan/gas 2 and bake for a further 2 hrs. Check the cake to see if it's pulling away from the sides of the tin and feels firm on top. If you need to, keep cooking for a further 15 mins. Cool in the tin. If storing in the tin, wrap the cake tightly first. Will freeze for up to two months.
  • To decorate, brush the cake with the apricot jam (or glaze) and arrange your choice of candied fruit on top. Will keep in a sealed container for up to three weeks.

2 pkg graham crackers (16 ounce each)
1 stick margarine or butter
2 1/2 c pecans, chopped (note !)
1 pkg small marshmellows (16 ounces)
12 oz red maraschino cherries (note 1)
12 oz green maraschino cherries (note 1)
32 oz mixed candied fruit coarsely chopped
2 can(s) sweetened condensed milk (14 ounces each)
1 c bourbon (optional note 2)

Steps:

  • 1. Line two 9 x 5 inch loaf pan with plastic wrap, allowing wrap to hang over edges 3 or 4 inches.
  • 2. In a large bowl, finely crush the graham crackers, then add the red and green cherries, candied fruit, and pecans.
  • 3. Melt butter in a double boiler. Cool slightly. Add sweetened condensed milk, marshmallows, and bourbon (or wine), stir well. Pour this over the crackers and fruit. Mix well. The mixture should be very thick and moistened thoroughly. Pack mixture tightly into the lined pan making sure no air bubbles are trapped in the loaf. Garnish top with pecan and cherry halves. Cover tightly with the plastic wrap.
  • 4. Allow to age in the refrigerator for at least 3-4 weeks or longer (the longer the better the flavor). The flavors will have a chance to blend and all of the liquids will be absorbed into the cake. I have keep them in the refrigerator for over two years and enjoyed a slice of fruitcake every once in a while all year long. After they have molded to the shape of the loaf pan (3 to 4 weeks) they may be removed from the pans for long term storage.
  • 5. Note 1: I use a 32 ounce (2 pound) container of mixed candied fruit. I hold out enough of the red and green maraschino cherries (cut in half) and pecan halves to garnish the top of the fruitcakes, the rest of the cherries and pecans are cut up in the cake.
  • 6. Note 2: 2 cup sweet wine (grape, blackberry or any flavor you desire) may be substituted for the bourbon or they both may be left completely out.

1 (27 ounce) jar mincemeat (NON SUCH Ready-to-Use Mincemeat, regular or brandy & rum)
1 (14 ounce) can sweetened condensed milk
2 cups candied fruit, mixed, equal to 1 pound
1 cup nuts, coarsely chopped

Steps:

  • Preat oven to 300 degrees F. Grease and flour a 10-inch bundt pan.
  • Combin flour and baking soda; set aside.
  • In a large bowl, combine remaining ingredients; blend in dry ingredients.

FRUITCAKE - EVER SO EASY!

I've made this fruitcake for years. It's almost a no-fail. It's simple, yet very moist and tasty.

2 1/2 c unsifted flour
1 tsp baking soda
2 eggs, slightly beaten
28 oz jar of rum or brandy mincemeat
14 oz sweetened condensed milk
2 c candied fruit
1 can(s) coarsely chopped pecans

Steps:

  • 1. Preheat oven to 300°. Grease and flour a 10" Bundt pan, or spray with PAM that has flour already in it, like Baker's Joy.
  • 2. Combine the flour and baking soda; set aside.
  • 3. In a large mixing bowl, combine the remaining ingredients. Stir well.
  • 4. Blend the dry ingredients into the wet mixture, stirring well. The batter will be VERY stiff. Just continue to work it in, until all is moistened and well-blended.
  • 5. Turn the batter into the prepared Bundt pan.
  • 6. Bake for 1 hour and 45 minutes. Test doneness with a wooden pick or a strand of spaghetti. Don't overbake! ... it will dry out your cake.
  • 7. Allow to cool in the Bundt pan for a good 15 minutes, then turn the cake out onto a cooling rack and allow to cool completely.
  • 8. Glaze and garnish cake as desired. I sometimes pour an orange juice glaze over it; it gives it a nice glossy sheen and helps seal in the cake's moisture. For Orange Juice Glaze: In a small saucepan, mix together 1/2 cup orange juice and 1/2 cup sugar. Stir well to dissolve sugar, while bringing to a boil. Allow mixture to stay at a soft boil for about a minute or more. Remove from heat and set aside. Mixture will thicken a bit as it cools. Use a pastry brush to paint the glaze onto the cake, thereby sealing in the cake's moisture.
  • 9. When completely cooled, store fruitcake in a cake storer that has a nice, tight seal, so cake will stay moist.

•2/3 cup apricot nectar
•1/4 cup Apricot brandy
•1/2 cup vegetable oil

•1/2 cup chopped candied cherries
•1/2 cup chopped candied pineapple
•1 cup chopped pecans

•Glaze
•1 cup sifted powdered sugar
•2 to 3 tablespoons apricot brandy

Steps:

  • In a large mixing bowl, combine cake mix, pudding mix, apricot nectar, 1/4 cup apricot brandy, and vegetable oil. Beat on medium speed until batter is smooth, about 2 minutes. Add eggs one at a time, beating after each addition. Fold in the chopped fruits and nuts. Turn batter into a generously greased and floured 10-inch tube pan. Bake at 350° for 50 to 55 minutes for 50 to 55 minutes, or until cake tests done. Cool for 15 minutes in the pan then remove to a rack to cool thoroughly. For best flavor, wrap and store in refrigerator for 24 hours before serving. Combine 2 to 3 tablespoons of apricot brandy with 1 cup confectioners' sugar; drizzle over fruitcake before serving, if desired.

2 1/2 pounds whole candied cherries
1 pound dates, pitted and halved
6 slices candied pineapple, cut in chunks
4 ounces dried coconut
2 cups pecan halves
1/4 teaspoon salt
1/2 teaspoon vanilla
1 14-ounce can condensed milk

Steps:

  • Mix all ingredients thoroughly in a large bowl.
  • Grease two 8 1/2-by-4 1/2-by-2 1/2-inch loaf pans and line with greased wax paper. Press the mixture firmly into the pans. Cover with buttered wax paper.
  • Bake at 350 degrees for 30 minutes. Reduce the heat to 325 and bake for 20 to 30 minutes longer. Cool the cakes on wire racks. Loosen around the sides with a spatula and invert on wire rack. While they are still warm, remove the wax paper carefully. Cool completely. Wrap in aluminum foil and refrigerate.
  • To serve, slice thickly with a very sharp knife. Cut slices into smaller pieces.

FRUITCAKE COOKIES: COAT baking sheets with no-stick cooking spray. Drop by rounded tablespoonfuls, 2 inches apart onto prepared baking sheets. Bake 15 to 18 minutes. Makes about 5 1/2 dozen cookies.

2 1/2 cups flour unsifted
1 teaspoon baking soda
2 eggs large, slightly beaten
1 (27-ounce) jar mincemeat prepared
1 (14-ounce) can sweetened condensed milk
2 cups (1 lb.) mixed candied fruit
1 cup nuts coarsely chopped

Steps:

  • Preheat oven to 300°. Grease six mini loaf pans and four 6 x 3 x 2-inch foil loaf pans.In a medium bowl, stir together flour and baking soda set aside.In a large bowl, combine eggs, mincemeat, condensed milk, candied fruit, and nuts. Stir in dry ingredients until moistened. Fill each pan two-thirds full. Place on baking sheet.Bake 35 to 40 minutes until a wooden pick inserted near center comes out clean. Cool in pans on wire racks 15 minutes. Remove from pans andcool completely. Wrap in plastic wrap, then foil. NOTE: To substitute condensed mincemeat for prepared, crumble 2 packages (9 oz. each) condensed mincemeat into small saucepan. Add 1 1/2 cups water. Bring to a boil and boil rapidly 1 minute. Cool. Proceed as above.

You aren't meant to taste coffee in this cake but you do get a taste of the chocolate now and then, which I love - I guess I just don't chop it finely enough. I found this recipe in an Australian Weight Watcher's cookbook and added the alcohol for flavour. Although I use Cadbury, any block of chocolate from a confectionary store would do. I am guessing at the servings as it is meant to be eaten in small slices being a Weight Watcher's recipe. The prep. time doesn't include soaking dried fruit overnight.

2 cups self raising flour
150 g chocolate with fruit and nuts, I use a block of Cadbury
1 kg dried fruit (raisins, sultanas and currants)
2 cups strong coffee
rum, to taste, brandy can be used instead

Steps:

  • Chop raisins if they are large in half then soak fruit overnight in coffee and rum (or brandy).
  • Preheat oven to 180 deg C (350 deg F) and coat a 20cm x 28cm (8" x 12")tin with cooking spray, then line base with baking paper.
  • Chop chocolate into pieces, then mix together with dried fruit mixture and flour.
  • Spoon into prepared tin and bake 2hrs or until cooked through.
  • Put some baking paper on top of cake to prevent burning.

3 cups all-purpose flour, divided
1 pound chopped candied fruit
2 packages (8 ounces each) pitted dates, chopped
1 package (15 ounces) raisins
1 cup chopped walnuts
1 cup chopped pecans or almonds
1 cup butter, softened
1-1/4 cups packed brown sugar
4 eggs
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/4 cup orange juice
GLAZE:
1 cup confectioners' sugar
2 tablespoons 2% milk

Steps:

  • In large bowl, combine 1/4 cup flour, candied fruit, dates, raisins and nuts; toss until well coated; set aside., In another large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the baking soda, salt, cinnamon, cloves and remaining flour; gradually add to creamed mixture alternately with orange juice, beating well after each addition. Stir in fruit and nut mixture; mix well., Spoon into five greased 5-3/4x3x2-in. baking pans (pans will be full). Bake at 325° for 1 hour. Cover with foil; bake 10-15 minutes longer or until a toothpick inserted in the center comes out clean. Let stand for 10 minutes before removing from pans to wire racks. , In a small bowl, combine glaze ingredients until smooth. With a pastry brush, brush glaze over warm loaves. Cool completely.

1 1/2 cup(s) unsweetened apple sauce
1 1/4 cup(s) sugar
1/2 stick(s) butter or margarine, softened
1/2 cup(s) water or your favorite liquor
1 1/2 teaspoon(s) baking soda
1 1/2 teaspoon(s) pumpkin pie spice
1 teaspoon(s) salt
3/4 teaspoon(s) baking powder
2 large eggs, beaten
2/3 cup(s) chopped nuts
1 cup(s) raisins
32 ounce(s) fruitcake mix soaked in your liquor

Steps:

  • Heat oven to 350*. Grease bottom and sides of loaf pans or tube pans with shortening and lightly flour. Soak fruitcake mix in your favorite liquor will mixing the cake batter, drain well then use.
  • Beat all ingredients, except raisins, nuts and fruitcake mix in large bowl with electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high speed 3 minutes, scraping bowl occasionally. Stir in raisins, nuts and fruitcake mix. Pour into pan(s).
  • Bake 45 to 50 minutes (cooking times may vary depending on your oven) or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Remove and cool completely.
  • Do not use self rising flour in this recipe.
