I got my picture in the paper for this one! My friends' husbands always fall in love with this when I bring it to parties! My 4 picky kids eat it! If you want to skip the charring step, simply tear the tortillas into fourths so they absorb the sauce better.

4 skinless, boneless chicken breast halves
garlic salt to taste
18 (6 inch) corn tortillas, torn in half
1 (28 ounce) can green chile enchilada sauce
1 (16 ounce) package shredded Monterey Jack cheese
1 (8 ounce) container reduced fat sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Season chicken with garlic salt. Arrange in the prepared baking dish. Bake 45 minutes in the preheated oven, until no longer pink and juices run clear. Cool, shred, and set aside.
  • With metal tongs, char each tortilla half over the open flame of a gas stove burner for about 1 minute, until lightly puffed.
  • Pour about 1/2 inch enchilada sauce in the bottom of a medium baking dish, and arrange 6 tortillas in a single layer. Top with 1/2 the chicken, 1/3 cheese, 1/2 the sour cream, and 1/3 of the remaining enchilada sauce. Repeat. Coat remaining tortillas thoroughly with remaining enchilada sauce, and arrange on top of the layers. Sprinkle with remaining cheese, and top with any remaining enchilada sauce
  • Cover, and bake 45 minutes in the preheated oven. Cool slightly before serving.

½ cup chopped green onions
3 cups salsa

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • In a medium bowl combine the soup, chicken, sour cream and green onions. Mix together. In another small bowl combine the salsa and green chile peppers and mix.
  • Cover the bottom of the baking dish with 4 tortillas. Add 1/2 of the chicken mixture, 1/2 of the salsa mixture, and 1 1/2 cups of shredded cheese. Repeat layers. Add another layer of 4 tortillas and top with the remaining 1 cup of cheese.

1 tablespoon olive oil
1/2 cup minced onion
Kosher salt
2 tablespoons tomato paste
1 clove garlic, minced
1 teaspoon ground cumin
1/2 teaspoon chopped fresh thyme leaves
1 (28-ounce) can crushed tomatoes
3/4 cup beef broth
2 tablespoons olive oil
1/2 cup chopped onion
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped yellow bell pepper
2 cloves garlic, minced
1 1/2 pounds ground beef
1 teaspoon onion powder
1 teaspoon ground cumin
1 teaspoon chopped fresh thyme leaves
1 packet Spanish seasoning blend (recommended: Sazon)
2 Roma tomatoes, seeded and chopped
1/4 cup beef broth
Kosher salt and freshly ground black pepper
1 1/2 cups shredded Cheddar cheese
1 1/2 cups shredded Monterey Jack cheese
18 (5-inch) corn tortillas

Steps:

  • Preheat the oven to 350degrees F.
  • For the sauce: In a saucepot over medium heat, add the oil, onions and a pinch of salt. Saute until the onions are tender and translucent. Add the tomato paste at this point and turn the heat up a bit, if needed, to cook the paste. Stir and cook until it deepens in color, and then add the cumin, thyme and garlic. Stir to blend and cook until fragrant. Then add the beef broth and crushed tomatoes. Raise the heat to bring the mixture to a boil, and then lower to a simmer and cover, simmering for 20 minutes more. (The sauce can be stored and frozen at this point.)
  • For the beef filling: Meanwhile, in a large pan with straight sides, add the olive oil over medium-high heat. When the oil begins to swirl, add the onions and green and yellow bell peppers. Add the garlic and cook until tender, about 4 minutes more. Add the ground beef, broth, cumin, onion powder, thyme, tomatoes and Spanish seasoning, allowing time between each addition to blend. Season with a pinch of salt and a grind or 2 of pepper (the Spanish seasoning adds salt content, so be careful to not over season). Stir and break down the beef into bits using a spoon or fork. Cook until the beef is cooked through, 8 to 10 minutes. (The beef can be stored and frozen at this point.)
  • To assemble the casserole: Toss the shredded cheeses together to blend and set aside. Add 1/2 cup of the red sauce to a 9 1/2-inch deep-dish baking dish and spread to coat the bottom evenly. Top with 6 tortillas, overlapping to cover the bottom of the casserole dish. Layer the dish by next adding half of the beef mixture and 1/2 cup of the shredded cheeses, spreading evenly in the casserole. Next, dunk 6 tortillas, one by one, in the warm red sauce and layer over the cheese and beef, overlapping where needed. Top with the remaining beef, another 1/2 cup of the shredded cheeses and another layer of tortillas dunked in the red sauce. Pour the rest of the sauce over the top, spread evenly and finish with the remaining shredded cheese. Place dish on a baking sheet and bake until the cheese is melted and the sauce bubbles, 25 to 30 minutes. If baking the dish from the freezer, add 15 to 20 minutes to the cook time, or until it's bubbly. Cover loosely with foil if it's browning too quickly. Serve hot.

After obtaining calorie counts for each ingredient listed in the recipe from My Fitness Pal, the ENTIRE casserole comes in at 2200 calories. One serving would be 275 calories.

5-Ingredient Fix Contest Entry. I have a large family, (12 of us) and I buy the large bags of tortilla chips from a grocery warehouse. We always had a fourth of a bag left because by then they would be all crushed and the kids wouldn't eat them. One day my husband gave me a challenge to try to come up with some way to use the crushed chips, at the same time one of my grandsons decided he was going vegetarian. So I took it on as a double challenge and also decided I could only use what I had on hand. This is how the recipe was born. Ingredients can be adjusted to fit whatever size casserole dish you might want to use. Serve with a dollop of sour cream and a side of mexican rice (optional) I make it in a large alluminum tray (20 3/4"L x 12 13/16"W x 3 3/8"D) the qty of the ingredients are for this pan but can be adjusted for any size casserole pan.

I was looking for a quick and different way to use the leftover shredded beef cooked in a crock pot the day before. I came up with this recipe which is quick and easy without having to roll each tortilla individually . My husband doesn't like corn tortillas or red sauce so I used green sauce and flour tortillas and layered them in a 8 1/2 inch casserole dish that fit the torrillas perfectly. I knew it was a hit when he went back for a second and third helping! It also tastes great left over the next day. You could also make it with shredded chicken. (Cooking the beef is not included in prep time)

1 can Rotel
28 ounce can green enchilada sauce
8 - 16 ounces shredded Monterey jack cheese ((depending how much cheese you like))
12 - 16 corn tortillas

Steps:

  • Boil chicken until cooked through. Shred using a stand-up or hand mixer.
  • Slice corn tortillas into quarters each using a large knife or pizza cutter. They will be in triangles. You can skip this step but it makes cutting into the casserole easier.
  • In a larg bowl combine your chicken with the taco seasoning and rotel and mix well. Set aside.
  • Spray the inside of yourcrock pot casserole dish with non-stick cooking spray.
  • Pour a little enchilada sauce on the bottom of your pan, then start your layering.
  • Cover the bottom of the pan with tortillas (you don't have to cover every single gap). Top the tortillas with the shredded chicken mixture. Pour enchilada sauce over the chicken.
  • Top with shredded cheese.
  • Continue layering tortillas, chicken, sauce, and cheese.
  • You should have enough chicken for about 3 full layers. Finish the casserole off with a layer of tortillas, the rest of the enchilada sauce and cheese.
  • Place the lid on the casserole and cook on low for 2-3 hours.
  • Cut and serve with sour cream, tomatoes, cilantro and onions.

12 corn tortillas (6 inch)
1 cup BREAKSTONE'S or KNUDSEN Sour Cream
1-1/2 cups KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

  • Heat oven to 400ºF.
  • Cook and stir chicken, onions and peppers in large nonstick skillet on medium heat 10 min. or until chicken is done. Stir in salsa and corn.
  • Arrange 6 tortillas on bottom of 13x9-inch baking dish; cover with layers of half each of the chicken mixture, sour cream and cheese. Repeat layers; cover.
  • Bake 40 min. or until heated through, uncovering for the last 10 min.

More nutritious and less fatty than cheese chilaquiles, I created this when cooking for groups of 30 people, and now make it for my son and me. I found that when I went to the trouble of rolling up enchiladas, people would wreck them when serving themselves, or only want half of one. This casserole is easier to prepare and serve!

12 corn tortillas
1 (19 ounce) can enchilada sauce
1 (15 ounce) can black beans (I use Goya Black Bean Soup)
1 (12 ounce) package vegetarian ground beef, substitute (Quorn, Morning Star or Boca)
4 -8 ounces cheddar cheese (or combination) or 4 -8 ounces monterey jack cheese, grated (or combination)

Steps:

  • Stack 6 tortillas and slice into 1/2 inch strips, then cut into thirds or quarters in opposite direction.
  • Warm slightly less than 1/2 the can of enchilada sauce in a large glass bowl in microwave (or on stove, in pan or skillet).
  • Add tortilla strips and let sit for a couple of minutes. Warm sauce gently or tortillas strips will disintegrate.
  • Spread in bottom of 9x9" baking pan.
  • Defrost vegetarian crumbles and heat with beans.
  • Spread over layer of tortilla strips.
  • Sprinkle half the cheese over the bean mix.
  • Cut up remaining tortillas and repeat warming process with remaining sauce. Layer over beans, and top with remaining cheese.
  • Bake in oven until cheese is melted (about 20 minutes at 350, or 8 minutes in microwave).
  • Serve with sour cream. Goes well with rice.

1 tablespoon extra virgin olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 (20 oz.) package (3 cups) pre-cut butternut squash cubes
1 (6 oz.) package (3 cups) shredded Mexican four-cheese blend
1 (15 oz.) can black beans, rinsed and drained,
3/4 cup corn
1 1/2 cups salsa
2 1/2 tablespoons Old El Paso™ taco seasoning mix
1/2 teaspoon salt
1 can Old El Paso™ Enchilada Sauce, 14 ounces
4 8-inch whole wheat flour tortillas
Sliced green onions, chopped fresh cilantro for garnish
Sour cream for serving

Steps:

  • Heat the olive oil in a skillet over medium-high heat and cook the onions until soft and transparent, 5-7 minutes. Add the garlic and cook for another minute. Add the beans, corn, salsa, butternut squash, water and seasoning mix. Simmer for 25-35 minutes or until the butternut squash is soft. Preheat the oven to 350ºF. Spread about 1/4 cup of enchilada sauce along the bottom of a 9x13-inch casserole dish. Lay 2 tortilla shells over the sauce so they touch the ends of the dish and overlap each other in the middle. Spread half of the filling over the tortillas, then pour half of the remaining enchilada sauce over it, then sprinkle with cheese. Repeat the layers; place two more tortillas over the cheese, add the remaining filling, pour the remaining enchilada sauce over, and top with the remaining cheese. Cover with aluminum foil. Bake for 30 minutes, then uncover and bake for another 8-10 minutes or until the cheese is melted and bubbly. Let sit for 5 minutes before serving. Garnish with sliced green onions and chopped cilantro. Serve with sour cream if desired.

6 cups cooked chicken, cut into bite-size pieces
6 corn tortillas (use the small ones for this)
1 large onion, chopped
1 -2 tablespoon fresh minced garlic
3 -4 tablespoons oil
1 (4 ounce) can green chilies, chopped
1 (10 ounce) can cream of mushroom soup (undiluted)
1/4 cup grated parmesan cheese
2 teaspoons louisianna hot sauce (or to taste)
2 1/4 cups grated cheddar cheese, divided
2 1/4 cups grated mozzarella cheese, divided
1 1/2 cups salsa

Steps:

  • Set oven to 325 degrees.
  • Grease a 1-1/2 quart casserole dish.
  • Cut the tortillas into 6 pieces each (you should have 36 smaller pieces).
  • Heat oil in the skillet; saute the onion and garlic for about 4 minutes.
  • Mix the soup with the hot sauce adjusting the amount of hot sauce to taste and Parmesan cheese.
  • Add in the chilies, mushroom soup and 1-1/4 cups EACH mozza and cheddar; cook slowly until the cheese melts.
  • Line the casserole dish with half of the corn tortilla pieces, then top/dollup with half of the salsa about 3/4 cup) spread the salsa with a spoon as best you can.
  • Layer HALF of the chicken on top of the salsa, then HALF of the soup/cheese mixture.
  • Repeat the layers (ending up with the soup/cheese mixture on top).
  • Bake for about 35 minutes, remove from oven then top with the remaining mozza and cheddar cheese, return to oven for about 10 minutes, or until the cheese has melted.
  • Let stand for 10 minutes before serving.

2 tablespoons olive oil
1/2 onion, chopped
1 (4 ounce) can diced green chilies
1 (3 7/8 ounce) can sliced olives, drained
2 chicken breast halves, cooked and chopped
1 (19 ounce) can green enchilada sauce
8 -10 corn tortillas, lightly sauteed (6-inch)
2 cups shredded monterey jack cheese
sour cream
diced avocado

Steps:

  • Heat oil in a small frying pan. Saute onion until tender. Add green chilies, olives, and chicken, and heat through. Remove from heat and moisten with a little enchilada sauce.
  • Coat an 8" baking pan with cooking spray, and pour a thin layer of enchilada sauce on the bottom. Line bottom with two tortillas, tearing to fit. Sprinkle with 1/3 chicken mixture and 1/4 of cheese. Drizzle with 1/4 of remaining sauce.
  • Repeat layers two more times. Top with remaining 2 tortillas, cheese, and sauce.
  • Cover pan with foil and bake at 350F until hot through - about 10 minutes. Remove foil and bake 10 more minutes, until cheese is toasty. Let set 10 minutes, and serve garnished with sour cream and avocado as desired.

1 medium onion, chopped
2 tablespoons vegetable oil
1 (19 ounce) can enchilada sauce
1 (16 ounce) can black beans, rinsed & drained
1 (14 1/2 ounce) can diced tomatoes with jalapenos
1 (11 ounce) can Mexican-style corn, drained
1 teaspoon fajita seasoning mix or 1 teaspoon chili powder
1 teaspoon cumin
1 (10 ounce) package 6-inch corn tortillas
3 cups chopped cooked chicken (** see note)
12 ounces shredded four-cheese Mexican blend cheese

Steps:

  • Saute onion in hot oil in a large skillet over medium-high heat until tender.
  • Stir in next 6 ingredients.
  • Reduce heat to low, and cook, stirring often, 5 minutes or until thoroughly heated.
  • Spoon one-third of sauce mixture in bottom of a lightly greased 13x9-inch baking dish.
  • Layer with one-third of tortillas, half of chicken, and 1 cup cheese.
  • Repeat layers with one-third each of sauce mixture and tortillas, remaining chicken, and 1 cup cheese.
